white wine

tarragon vinegar

shallot,

black pepper

This Béarnaise Sauce tastes great on just about everything. It's so easy to make with your food processor or blender, using just a few ingredients!

Perfect to be paired with steak, this Bearnaise Sauce Recipe is flavored with fresh cracked blacked pepper and tarragon leaves.

Bearnaise Sauce

tbsp shallot (1 small shallot)

white wine vinegar

tarragon leaves (plus 1 teaspoon)

tbsp unsalted butter, melted

lemon juice

Kosher salt (to taste)

In a small skillet, add the shallots, vinegar, pepper and 1 TBSP tarragon leaves and bring to a boil over medium heat. Reduce heat to a simmer and cook until almost all of the liquid has evaporated. Remove from heat and place in a metal mixing bowl. Allow to cool.

Meanwhile, fill a small saucepan with an inch or two of water. Bring to a boil over medium-high heat.

To the cooled shallot mixture, add the egg yolks and 1 TBSP water. Whisk to combine.

Place the metal bowl over the saucepan of boiling water and turn the heat down to low. Keep an eye to be sure the bowl isn’t touching the boiling water.

Whisk the egg-shallot mixture until it begins to thicken, about 5-6 minutes.

Gradually whisk in the butter, a splash at a time. Continue whisking until the sauce has emulsified.

Remove from the heat and add the lemon juice and remaining 1 tsp. tarragon leaves. Season with salt, to taste. Serve.

And you know it will work every single time –  because it&#039;s foolproof. Not even the most seasoned chefs can say that about hand-whisking!Serve over steak or pan seared salmon for a fine dining restaurant experience at home.Makes enough to (very) generously sauce 3 large steaks, or 4 sensible portions.

Béarnaise Sauce - Fast, easy, foolproof method

tbsp white wine

tbsp white wine vinegar ((Note 2))

tsp black pepper

eschallot ((small), peeled and finely sliced (Note 3))

tarragon ((Note 6))

egg yolks (, at room temperature (Note 4))

salt (, kosher/cooking salt)

tarragon leaves (, finely chopped (Note 6))

chervil (, finely chopped (Note 6))

Place Infused Vinegar ingredients in a small saucepan over medium low heat.

Simmer for 2 minutes, then remove from stove and let it stand for 5 minutes to infuse.

Strain, pressing to extract as much liquid as possible. You should have around 1 tbsp of liquid. Cool 5 minutes before use.

Infused Vinegar:

Place butter in a jug and microwave until melted (1 - 1½  minutes on high, but watch it carefully so it doesn&#039;t explode!).

Stand for 30 seconds until the milky whites settle at the bottom (this is the milk solids) and clarified butter (golden part) sits above it.

Pour off 175g / 3/4 cup of the clarified butter, discard the milky whites remaining. Use in this recipe while hot.

Alternative: Just melt 175g / 3/4 cup ghee, which is the same thing as clarified butter.

Quick Clarified Butter:

Place egg yolks, infused vinegar and salt in a tall, narrow container that the blender stick fits in all the way to the base. Blitz briefly to combine.

With the stick blender going on high, slowly drizzle the butter in over about a minute.

After all the butter is in, blitz for a further 10 seconds, moving the stick up and down.

Thickness: Add 1 tablespoon water, then blitz to incorporate. Add more water as needed, 1 teaspoon at a time, until the Bearnaise Sauce is a thick sauce but loose enough to ooze across a steak, coating it thickly.

Fresh herbs: Stir in tarragon and chervil.

Using: Use immediately, or keep warm until required. I use a thermos – a good one will keep it warm for at least 1 hour. Use warm or at room temperature. See note for storing and reheating.

Béarnaise Sauce:

A fool-proof Bearnaise Sauce recipe that rivals any five-star restaurant version but is super easy to make!  Enjoy this versatile sauce drizzled over your grilled steak, roast chicken or salmon, steamed broccoli or asparagus, and much more!

(1 1/2 sticks) unsalted butter

tarragon ((to stir in at end))

Combine the wine, vinegar, shallots, pepper, and herbs in a small saucepan and simmer until the liquid is reduced by half (about 3 tablespoons liquid).  Do not strain.  Let it cool completely.  Place the cooled mixture in a blender with the egg yolks.  Blend until smooth.

Melt the butter in a small saucepan or microwave.  Remove the center stopper from the blender cap (see photo in blog post), turn the blender on HIGH and gradually pour the very hot butter through the blender hole in a steady stream while the blender is running.  Blend for 30 seconds until the consistency is like a thin mayonnaise.  If it&#039;s too thin continue to blend on HIGH for another 5 seconds before checking again.

Serve immediately while warm or place the blender container in a sink or bowl of warm water to keep warm until ready to serve.  Note:  Depending on preferences and what you&#039;re serving it with, Bearnaise sauce can also be served room temperature or cold.  Also, see blog post about how to reheat Bearnaise sauce.

Rich and buttery, Bearnaise Sauce is perfect for the keto diet and to top a juicy steak. The sauce takes a little extra time to cook, but it’s well worth the effort!

Keto Bearnaise Sauce Homemade

peppercorns

onion (diced)

Place a small saucepan over medium heat, add the vinegar, wine, peppercorns, and onion. Reduce until 2-3 tablespoons of liquid remain.&nbsp;

Strain out the onion and peppercorns and pour the liquid into a heatproof bowl. Add the egg yolks.

Melt the butter until the milk fat (white liquid) has separated from the yellow butter. Set aside.

Place the bowl over a saucepan of simmering water and start whisking.

Continue to whisk until the mixture is thick and foamy and creates thick ribbons when the whisk is lifted.

Remove the bowl from the heat and slowly pour in the hot butter while whisking, ensuring that the milk fat is left behind. This step is similar to making mayonnaise - if you add the butter too quickly the sauce will split.

Whisk in the salt, pepper, and tarragon.

Serve immediately or keep warm until needed.

Béarnaise Sauce (Easy & No-Fail)

dry white wine

Simmer

Make the infused vinegar. Add the wine, vinegar, shallot, and tarragon to a small saucepan over medium-high heat. Bring to a boil, then reduce the heat to a simmer, until the liquid has reduced to about 1½ tablespoons (about 5 to 7 minutes).

Strain

Strain it through a fine-mesh sieve, using the back of a spoon to extract as much flavor as possible into the liquid. Let it cool for 5 minutes.

Melt

Melt the butter in a microwave (make sure sure the cup or bowl is covered as it will splatter) for about 1 minute, until it&#39;s hot. Alternatively, you could heat it on the stove.

Blend

In a high-powered blender, add the egg yolks, infused vinegar, lemon juice, and salt. Blend for 5 seconds until combined.

Stream

Stream in the butter. With the blender running on medium-high, slowly stream the hot butter through the top lid cap opening and into the mixture until it&#39;s emulsified.

Pour

Add fresh herbs. Pour the bearnaise sauce into a small bowl, stir in the finely chopped tarragon, and serve while warm.

(60 ml) white wine vinegar

(125 ml) white wine

shallots, chopped

(180 ml) butter, melted and cooled

(15 ml) chopped fresh tarragon

In a saucepan, bring the vinegar and wine to a boil with the shallots and tarragon sprig. Season with pepper. Reduce until only about 45 ml (3 tablespoons) of liquid remains. Strain.

In a bowl over a saucepan of simmering water, with a whisk, beat the vinegar reduction and egg yolks until thick and foamy.

Remove from the double boiler. Off the heat, drizzle in the butter, whisking constantly. Add the chopped tarragon. Adjust the seasoning. If the sauce seems too thick, whisk in a little hot water. Keep at room temperature and just before serving, place back on the double boiler, whisking for just a few seconds, to warm it up.

Excellente! J’ai utilisé un mélangeur Vitamix pour incorporer le beurre, puis remis le tout sur bain-marie éteint.Un charme! Vous n’avez pas d’échalote française? Utilisez de l’oignon rouge! Ça fonctionne très bien. Je conserve l’échalote une fois passer au tamis, car j’aime  rajouter un peu des échalotes émincées à la sauce en toute fin pour plus de texture.

Est-ce que je peux me servir d’une mixette à basse vitesse pour ajouter le beurre en filet.  Merci

Très bonne sauce pour les viandes dans une raclette!!! Je l'ai fait la veille, mais le lendemain j'ai seulement refait un bain-marie et elle était excellente!!! Elle durcie rapidement cependant :)

Par quoi est-ce que je pourrais remplacer le vin blanc, si je ne souhaite pas ajouter un élément alcoolisé?

Cette fois-ci mon commentaire va a madame Louise . P elle donne un petit truc dans les commentaires . ça fonctionne vraiment avec le cube de glace ma sauce elle a commencer a se séparer et j'ai mis un cube d glace et up elle est redevenu super belle. Merci madame Louise  je connaissait pas ce truc il a littéralement sauvé mon souper .

La recette est parfaite si ce n'est que la remettre au bain-marie quelques secondes pour la réchauffer me paraît superflu. J'ai mal évalué le temps pour la tiédir, le beurre a fondu et ma sauce s'est transformée en une sauce huileuse. J'ai regretté cette étape d'autant plus que la sauce n'a pas besoin d'être tiède.
