Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.

Set a rack in the upper third of the oven and preheat the broiler.

Drain the bones in a colander and rinse under cold running water. Return the blanched bones to the stockpot.

Meanwhile, arrange the ginger, garlic, and onions cut-side up on a rimmed baking sheet and broil on high until the aromatics are deeply charred in spots, 5 minutes. Remove from the oven and add to the stockpot with the bones.

Meanwhile, combine the cinnamon sticks, peppercorns, and star anise in a medium skillet over medium-high heat and toast, shaking the pan occasionally, until the spices are darkened in spots and extremely fragrant, about 5 minutes. Add the toasted spices to the stockpot.

Season the brisket liberally with salt and add it to the stockpot.

Fill the pot with enough cold water to cover everything by 1 inch (2 cm). Bring to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer, skimming off and discarding any fat that floats to the top as needed, until the brisket is fork-tender, 2-3 hours.

Using tongs, transfer the brisket to a plate and let cool completely. Refrigerate the brisket until ready to serve.

Continue to simmer the broth to get as much flavor out of the bones as possible, 3-4 hours more.

Using tongs, remove and discard the bones and aromatics. Slowly strain the broth through a fine mesh strainer set over a large pot. Skim and discard the fat from the broth, then stir in the fish sauce. Taste and add more as desired.

Thinly slice the brisket. Very thinly slice the raw sirloin steak against the grain.

Divide the noodles among 6-8 large bowls, then top with the brisket and raw steak. Ladle the hot broth over the noodles and meat and serve immediately with the bean sprouts, onion, jalapeño, Thai basil, lime wedges, hoisin sauce, and Sriracha alongside.

Put bones and meat in large baking pan and roast for 1 1/2 to 2 hours, or until nicely browned.

Put vegetables and seasonings into large stockpot. Add browned meat and bones. Rinse baking pan several times with some of water, scraping to loosen all browning, and add rinsings and remaining water to stockpot.

Bring stock to boil slowly, reduce heat and simmer, covered, for 3 1/2 hours.

Strain broth through double cheesecloth or bouillon strainer and refrigerate overnight. Residual meats, if combined with fresh vegetables in aggressively seasoned sauce -with, say, plenty of Madeira and Worchestershire sauce - will make quite good pot pies for freezing.

To clarify the consomme

Mix first 4 ingredients thoroughly and stir into cold stock.

Bring stock slowly to boiling point, stirring frequently. Do not let it come to full boil; simmer very gently, uncovered, for 40 minutes. Add thyme and simmer 10 minutes more. Remove from heat, allow to settle and cool for 10 minutes and strain through double cheesecloth or bouillon strainer. (The residual solids can be used for pet food.)

Reheat clarified consomme, check for salt, and serve piping hot in demitasses or small bouillon cups.

Put bones in kettle and add cold water to cover. Bring to boil and simmer 1 minute. Drain well. Rinse bones under cold water and when thoroughly chilled, return to clean kettle.

Add six quarts of water, peppercorns, carrots, leeks and celery.

Tie cloves, parsley, thyme sprigs and bay leaves into bundle and add. Bring to boil and simmer uncovered for 5 hours.

Soak the bones in cold water to draw out as much blood as possible, about 1 hour (or longer if you have time). Rinse well and drain.

Soak the meat in another bowl to draw out as much blood as possible, about 1 hour. Drain. Keep it in the fridge until ready to use.

Preparation

Add the bones to a large stockpot (preferably 8 quarts or largewith enough cold water to cover. Bring it to a boil over high heat. Reduce the heat to medium, and boil for 5 minutes.

Drain. Rinse the bones, and clean out the pot to remove any brown bits. Return the bones to the pot.

Parboiling

Fill up the pot with cold water, leaving a little room for boiling. Bring it to a boil over high heat, and reduce the heat to medium.

Cover, and boil until the broth becomes rich and milky, about 5 hours (or longer if you have time). Adjust the heat a little, if necessary, to maintain a medium boil. (On my stove, this is somewhere between medium and medium low.) Add more water (boiling hot water to maintain the cooking temperature) to cover the bones, once or twice while boiling. (This photo was taken at the 3-hour point.)

Add the soaked meat (and more water if needed to submerge the meat). Boil until the meat is tender, for 1-1/2 to 2 hours. Remove the meat. Once cooled, thinly slice the meat to add to the soup when serving. Pour the broth through a colander into another pot or a large bowl to cool.

Boiling

Fill up the pot with fresh water again. Bring to a boil over high heat. Reduce the heat to medium. Cover, and boil until the broth becomes rich and milky, 3 - 5 hours. Reduce the heat a little, as necessary, to maintain a moderate boil. Add more water if the liquid reduces too quickly while boiling. Pour the milky broth through a colander into the pot or large bowl that contains the first batch. You can repeat this one more time, if desired. Just mix them all at the end to even it out.

Optional step (highly recommended)

You can use a fat separator to remove the fat, or keep it in the fridge (or out on the deck or balcony in the winteuntil the fat solidifies to spoon off the fat.

To serve, place some rice and, if desired, noodles in a serving bowl, add the meat pieces, and then ladle the hot broth on top. Typically, chopped scallions, salt and pepper are served separately so each person can season to taste. Serve piping hot with kimchi.

Hearty and nutritious Instant Pot beef bone broth in just under 5 hours rather than 12-24 hours you would need for stovetop cooking or slow cooking. Get all the health benefits of bone broth by adding it to your meals or simply sipping a cup or two on a regular basis.

Instant Pot Beef Bone Broth

Prep. Cut the vegetables into large chunks. You can leave the garlic cloves whole, just peeled. Rinse the bones well to remove any blood or other impurities.

Sear the bones. Set the Instant Pot to Saute (Normal setting) and once hot, add a little oil. Sear the beef bones (in batches if needed) for 1-2 minutes on each side and then on the edges as well. Remove to a plate and press Cancel to stop the Saute function. 

Deglaze. While still hot, pour in a cup of water to deglaze the pot. Use a spatula to scrape off the bits of meat or fat stuck to the bottom, which will remain in the liquid.

Add all ingredients. Add the bones back to the pot and lay the vegetables around. Add the garlic, peppercorns, bay leaves and half a teaspoon of salt. Pour in 5 more cups of water (total of 6 cups, about 1.5 litres). You can add a little more water if you want. 

Pressure cooker. Select the Soup/Broth button and press it a couple of times to cycle through setting options until it says MORE and the time shows 4 hours on HIGH. You can also do this manually by selecting Pressure Cooker, HIGH pressure and adjusting the time to 4 hours but it can be a little tedious to change the time.

NPR. Once the time is done, allow the pressure to release naturally. Total time including pressure build-up and release should be about 4.5-5 hours. 

Strain &amp; store. Remove the bones and strain the stock into a large bowl or a separate pot. Pour into clean glass jars or Tupperware containers and cool down before refrigerating or freezing. 

So funny you say that about the smell, it’s cooking right now and man the entire house is thick with that smell. Bleh. I’m sure it’ll taste good though. I put chunks of the steak fatty trimmings in w the bones and I’m hoping that doesn’t ruin it having fat in there. I plan to scoop it out later.

I JUST MADE THE BONE BROTH. It tastes delicious . It just did not got jelly like.

I followed all directions and used an 8 quart IP. It hissed loudly  for most of the 4 hours and in the end I had cooked veggies and bones and literally no broth. Any idea what went wrong? I will try adding water and recooking for less time.

Tried it again in my 6 Q instapot this time and it wirked out perfectly (and quietly)
