Authentic Beef Enchiladas.This easy enchilada recipe is loaded with juicy ground beef, melty cheese, and drenched with a homemade Tex Mex Enchilada Sauce. 

Authentic Beef Enchiladas

Ground Beef

Cook the ground beef over medium heat. Break the beef up while it cooks, cook until browned and no longer pink. 

Turn the heat off. Drain the grease. Add the seasonings to the meat, stir to combine. Then stir in the tomato sauce. Set aside. 

Homemade Enchilada Sauce: 

Heat the oil or butter in a medium size skillet over medium heat.

Add in the flour and stir to mix. Will be a thick mixture. Allow this to cook for just 1-2 minutes.

Add in the spices. Stir to form a thick paste.

Stir in the broth and tomato paste. Stir until smooth. Continue to heat to just below a simmer, sauce will thicken slightly.

Enchiladas:

Preheat oven to 350℉ degrees.

Spread enchilada sauce into the bottom of a glass 9x13 baking dish. Set aside. 

Heat vegetable or canola oil over medium heat in a medium size skillet. 

Once the oil is hot enough to bubble up when a tortilla is dipped in, gently lay the tortilla into the oil using tongs. Allow the tortilla to cook in the oil for about 10-15 seconds, then flip and cook the other side. (Tortillas will not be browned and crisp, we still want them flexible)

Once all tortillas have been fried, dip into the enchilada sauce. Or brush the sauce on.

Lay the tortilla down and add a spoonful of ground beef and a small sprinkle of cheese. 

Roll the tortillas and lay into a baking dish, seam side down. Continue until the dish is filled. 

Spread leftover sauce over the top of the enchiladas. Sprinkle with leftover shredded cheese. 

Bake for 10 minutes until the cheese is melted. 

Serve warm and enjoy.

Preheat oven to 350°F

In a medium-sized mixing bowl or plastic bag, add flank steak and chipotle seasoning. Stir to coat evenly.

Add olive oil to a large skillet and preheat over medium-high heat.. Add steak and saute until just done, approximately 4 to  5 minutes. Remove from heat and set aside.

Add a little more olive oil to the pan if needed. Add onions and peppers to the pan and saute until they are soft and begin to caramelize for about 10 minutes.

Add steak, garlic, salt, and pepper to the onions and peppers in the skillet. Stir until combined.

Carne Enchiladas Filling

Grease a 13 x 9-inch casserole dish. Spread 1/2 cup of the enchilada sauce onto the bottom of the dish.

For each tortilla, spread ⅓ cup of filling mixture in the center, then sprinkle 1 tablespoon of queso fresco, 1 tablespoon of cheese blend, and 1 to 2 tablespoons of the enchilada sauce.

Roll each corn tortilla (they will be full) and place each enchilada seam side down into a greased 13 x 9-inch casserole dish.

Pour the remaining enchilada sauce evenly over the casserole, then top with remaining cheese.

Cover the enchiladas with aluminum foil and bake for 30 minutes. Remove foil and bake for 10 more minutes, or until heated through and bubbly.

Beef Enchilada Recipe

Brown ground beef over medium-low heat. Drain meat to remove any excess drippings. Add 1/4 cup of enchilada sauce into brown meat and stir until well-combined.

Preheat oven to 350º F.

Pour 1/2 cup enchilada sauce into the bottom of a 9x13 oven-safe, casserole dish.

Drizzle oil into the bottom of a skillet over a medium-low heat. Add corn tortillas, one at a time, and cook for about 1 minute each. Do not allow to become crispy.

Drain tortilla and then layer on beef, sour cream, cheese and cilantro. Roll tortilla to keep all ingredients inside. Then place seam side down in the casserole dish. Once all enchiladas have been assembled and placed into casserole dish, pour remaining enchilada sauce over to make sure well covered. Top with remaining cheese.

Place in oven and bake 15 minutes, or until cheese has fully melted.

Remove from oven and top with additional cilantro, if desired.

Preheat the oven to 350°F.

In a medium bowl, mix together the shredded beef, green chilies, corn, and ½ cup enchilada sauce. Spread ½ cup of enchilada sauce into the bottom of a 9 x 13 baking dish.

Scoop about ⅓ cup of filling into the middle of each of the tortillas, and sprinkle with cheese (reserving about 1 cup of cheese for the top of the enchiladas). Roll each tortilla up and place them seam-side down in the prepared baking dish.

Pour the remaining enchilada sauce over the top of the rolled-up tortillas, spreading to cover the tortillas completely. Sprinkle with the remaining shredded cheese.

Bake for 20-25 minutes, or until the cheese is melted and the sauce is bubbling. Serve hot.

Heat the oil in a large skillet over medium heat. Sauté the onion until softened, about 2-3 minutes.

Add the meat and while it cooks, mince it with a wooden spoon. Once the meat is no longer pink, stir in the jalapeño, garlic and 1 cup of the enchilada sauce. Stir to combine and season with salt and pepper to your taste, and add the cilantro. Meanwhile, preheat the oven to 400ºF and grease a rectangle baking dish with a bit of olive oil.

To assemble the enchiladas, add about 1/2 cup of the meat mixture to a tortilla, and sprinkle with a spoonful of shredded cheese. Roll tightly and arrange in your prepared baking dish. Once all the enchiladas are nicely sitting on your baking dish, pour over the 1/2 cup of enchilada sauce. Sprinkle with the extra 1/4 cup of cheese.

Bake in the preheated oven for 20-25 minutes, or until bubbly and cheese has melted.
