Beef Fajita Breakfast Scramble

1½ lb skirt steak or flank steak

green bell pepper, red

onion,

tbsp vegetable oil, (divided)

eggs

sharp cheddar cheese, (shredded)

tsp cumin

tsp garlic salt

tsp chili powder

½ tsp black pepper

½ tsp red crushed peppers

lime juice

Add cumin, garlic salt, chili powder, pepper and red crushed peppers into a large sealable baggie. Seal, shake to combine and then add lime juice. Shake to mix.

Place skirt steak into baggie, seal, shake and then place into the fridge for 4 hours or overnight.

For The Marinade

Heat cast iron skillet, or large frying pan, over high heat. Add two tablespoons of oil to pan and then add peppers and onions.

Sauté until tender but still crisp. Remove from skillet and place in large bowl and set aside.

Add remaining two tablespoons of oil into pan and heat over medium high heat.

Remove steak from baggie and place in hot skillet.

Cook 5-6 minutes on each side for medium. Remove from skillet and place on cutting board.

Remove from steak skillet and place on cutting board. Cut against the grain and then cut into bite size pieces.

Place steak into large bowl with peppers, stir and set aside.

Add whisked eggs to skillet. Cook until desired doneness.

Next, add steak and peppers to scrambled eggs, mix to combine.

Top with cheese, let melt and then enjoy!

Cooking The Fajitas

Make your own Steak Fajitas at home with leftover strip loin steak

Steak Fajitas

sweet red pepper

½ sweet orange or yellow pepper (or any 2 colour combination)

red onion

vegetable oil (avoid olive oil)

Tbsp fajita seasoning

tortillas (8 inches diameter)

tsp black pepper (or ½ tsp regular pepper)

salt

½ tsp smoked paprika (or regular but smoked is better)

garlic powder

cayenne pepper

cheddar cheese

sour cream

salsa

tomatoes

cilantro

jalapeno pepper

avocado

lime wedges

Combine all seasoning ingredients.

Slice peppers and onions into thin strips.

Remove fat and grizzle from steak and slice across the grain into thin strips.

Heat large skillet to medium-high heat. Add vegetable oil and heat well. Add peppers and onions and allow to char slightly before stirring around.

Move vegetable mixture to the side of the pan and add meat. Spread out as best as possible and allow to cook slightly.

Sprinkle 1 Tbsp of seasoning mixture over top. Reserve remaining seasoning for future use. Stir fry meat and vegetable mixture until heated through and seasoning well blended.

Heat tortillas if desired for easier rolling.

Add 1/6 of meat mixture to each tortilla in a line across the middle. Do not over fill. Top with desired toppings. Fold side in slightly at the end of the line to form the bottom, then roll into a tube leaving the top end open.

FOR THE GARLIC LIME RICE: Rince the rice...

FOR THE GARLIC LIME RICE: Rince the rice in a fine mesh strainer under cold running water for 2 minutes, using your fingers to rub the rice to remove any starch, set aside. Heat the butter in a large sauté pan over medium heat. Add the rinsed rice and allow to toast for 2-3 minutes, stirring frequently so the rice doesn’t stick or burn. Add the garlic, continue to cook for 30 seconds or until the garlic is fragrant. Add the chicken broth, salt, and lime juice and allow to come to a boil, stir just once to break up lumps. Cover, reduce heat to low and allow the rice to cook for 12-15 minutes or until the water dries up. Let stand for 5 minutes before adding cilantro and fluffing with a fork.
