Beef stew meets beef hotpot in this delicious beef hotpot in the slow cooker recipe. Easy to prep, tastes amazing and you will want to lick the bowl when you are done.

Beef Hotpot In Slow Cooker

500 g Air Fryer Sliced Potatoes

Medium White Onion

400 g Lean Diced Beef

Medium Swede/Rutabaga

Medium Carrots

Tsp Extra Virgin Olive Oil

Can Diced Tinned Tomatoes

Tbsp Tomato Puree/Paste

Tsp Garlic Puree

Tsp Rosemary

Tsp Thyme

Tsp Parsley

Salt & Pepper

Crockpot

Dice

Dice and peel your onion and sauté in the slow cooker on the stovetop with a little extra virgin olive oil and then add the diced beef.

Saute

Cook the beef in the slow cooker until lightly browned on all sides.

Prepare

Peel and dice the swede and carrots and load them into the slow cooker with everything else but the sliced potatoes.

Cook

Mix well and then place the lid on the slow cooker. Cook on high for 3.5 hours or on low for 6 hours. Prep your air fryer sliced potatoes, cook, and then put to one side.

Stir

After the 3.5 hours on high stir frozen peas into your beef stew and if not thick enough add extra tomato puree.

Decorate

Then decorate the top of your beef hotpot with your just air fried sliced potatoes.

Serve

Cook for an extra 30 minutes with the sliced potatoes on top before serving.

Stretch a pack of mince to make this hearty dish. It's perfect eaten straight from the bowl with a spoon and some crusty bread on a cold winter's night

Cut each onion into eight wedges. Roughly chop the carrots and cut the potatoes into large chunks. Put the kettle on.

Heat a large non-stick pan, add the mince and fry quickly, stirring all the time, until evenly browned. Crumble in the stock cubes and mix well. Add the prepared vegetables, stir them around, then pour in 900ml/1½ pints of hot water from the kettle. Bring to the boil.

Reduce the heat, cover and simmer for 25-30 minutes, until the veg are tender. Stir in the baked beans and a generous splash of Worcestershire sauce and heat through. Taste and add salt and pepper if necessary.

Scatter over the parsley, then ladle the hotpot into bowls. Put the Worcestershire sauce bottle on the table in case anyone fancies a bit more spice.

Chilli Beef Hotpot

lean Ground/Minced Beef

/ 240 milliliters Beef Stock

Red Pepper, (finely diced)

White Onion, (finely diced)

Garlic, (finely diced)

Worcestershire Sauce

tbsp EACH: Paprika, Cumin, Chilli Powder ((hot or mild))

tsp EACH: Ground Coriander, Oregano, Sugar, Salt

tsp Black Pepper

tbsp Olive Oil

Baby Potatoes

tsp EACH: Paprika, Garlic Powder, Salt, Black Pepper

Sour Cream ((recommended))

Avocado ((optional))

Coriander/Cilantro ((optional))

Cheese ((optional))

Add olive oil to a 10&quot;/26cm cast-iron skillet or oven-safe pan over medium heat. Add the red pepper &amp; onion and fry until they begin to soften, then add in the garlic and fry for another 30-60 seconds. Add the beef and fry until brown all the way through, breaking up with your wooden spoon until well crumbled as you go.

Stir in the tomato puree and fry for 1-2 mins, then add in the beef stock, chopped tomatoes, kidney beans, paprika, cumin, chilli powder, ground coriander, oregano, sugar, salt &amp; pepper. Give it a good stir then simmer for 15mins, stirring occasionally. Preheat oven to 180C/350F.

Meanwhile, thinly slice the baby potatoes around 1/4&quot; (1/2cm). After the beef has simmered for 15mins, turn off the heat and wait for it to stop bubbling. Smooth the top with your wooden spoon. Starting from the outside, lay the potato slices in a ring, overlapping each one covering around 1/4 of the previous potato. Work your way to the centre, covering as many gaps as possible.

Sprinkle over paprika, garlic powder, salt &amp; black pepper then gently brush with oil. Tightly cover the top with foil then bake for 30mins. Remove the oven, discard the foil then bake for another 15-20 mins at 200C/390F, or until the potatoes are knife tender. You can then flick on the grill to crisp them up a little if you&#39;d like.

Plate up with your favourite toppings and enjoy!
