Crispy baked potato chips topped with flavorsome beef, creamy guac, chunky pico de gallo and fresh greens. It tastes like a treat dish but is actually healthy and lower in calories. Delicious as a meal but also perfect for a movie night snack.

Healthy Beef Nachos

tsp chipotle powder - for the potatoes and beef

arugula spinach

Cholula / chilli sauce (optional)

Wash and slice the potatoes into thin slices, transfer them into a bowl. Drizzle or spray on oil, season with salt and toss to coat. Bake in the oven for 12 minutes or until slightly brown, then flip around and bake for another 8-10 mins until crispy.

While your potatoes bake, in a pan, add oil and cook the ground beef with ginger, paprika, chipotle powder, salt on medium heat for a few minutes until beef is cooked through.

Add the tomato paste and cook until the sauce is mixed well. Remove from heat and set aside.

Prep

In a bowl, mash avocados with a fork until slightly chunky

Chop up cilantro, onions and dice up jalapeño into small pieces and add to bowl of chunky avocado.

Without over-mashing the avocado, gently mix together until mixed together well. Add salt and pepper to taste and set aside.

Make the guacamole

In another bowl, toss together your diced tomatoes, onions, cilantro and jalapeño.

Add lime juice and salt, then mix well and set aside.

Make the pico de gallo

Assemble all the ingredients onto a large plate, starting with the potatoes as a base layer then adding beef on top.

Garnish with fresh arugula and spinach, then top it off with the guacamole and pico the gallo.

Serve with some Cholula or chilli sauce of your choosing for an extra kick (optional).

Preheat oven to 425° F. Grease a large rimmed baking sheet or line with foil or parchment; set aside.

In a large skillet over medium-high heat, cook the ground beef and onion until the onion is tender and the meat is no longer pink. Drain off the fat; return beef and onion to the skillet. Add taco seasoning (and water if called for on the packet). Cook according to the instructions on the seasoning packet.

Arrange half of the tortilla chips on the prepared baking sheet. Top chips with half of the beef mixture, half of the cheese, and half of the jalapeños (if using).

Repeat layers once more.

Bake in the oven until the cheese melts, about 10-15 minutes. Add optional toppings; serve immediately.

Heat oven to 375 degrees Fahrenheit. Place tortilla chips in a blender and pulse into fine crumbs. Pour in the melted butter and continue to pulse until well combined. Press into the bottom of a 13 x 9 baking dish. Bake for 8-10 minutes, or until golden brown. Set aside to cool.

Meanwhile, heat oil In large skillet over medium-high heat. Add onion, red peppers, green peppers, ground beef and garlic salt; cook, stirring to break up clumps of beef, until the peppers are soft and beef is no longer pink, about 5 minutes. Drain off any excess fat from skillet.

Pour the jar of salsa into a large bowl. Fold the cooked meat mixture, 1 cup of the cheddar cheese, 1/2 cup of pepperjack cheese, and olives into the salsa. Scrape entire mixture into the prepared crust. Sprinkle the remaining cheeses over the top.

Bake at 375 degrees for 30 minutes. Sprinkle green onions and cilantro evenly over the top.

Drain any excess fat.

Reduce the heat to low and stir in the taco seasoning. Saute for a few minutes longer.

Place one bag of tortilla chips on each of two different baking sheets, and top each set of chips with half of the refried beans.

Sprinkle half of the meat mixture over each of the batches of chips, and separate the cheese evenly between the two baking sheets.

Bake for 10-15 minutes until the cheese has melted.

Sprinkle immediately with the chopped tomato and green onion and serve.
