Classic Thai beef salad recipe (Yum Nua)  is made with grilled beef steak, cucumber, tomato and fresh mint and cilantro herbs. Perfect for low-carb and gluten-free diet.

Classic Thai Beef Salad (Yum Nua)

lb (340 g) beef tenderloin, rib-eye, sirloin,

soy sauce

pepper

cucumber cucumber

oz (113 g) cherry tomato (cut in half)

shallot (sliced)

(60 ml) mint (loosely packed and torn)

(60 ml) cilantro (loosely packed and torn)

tbsp fish sauce

tbsp palm sugar (or light brown sugar)

lime juice

red chili (finely minced)

Season your beef steak with soy sauce and pepper. Let it sit for 15 minutes.

Grill your steak over a very hot grill to get the grill marks. Cook to your desired done-ness. Let the steak rest for 5 minutes, then slice thinly across the grain.

For the salad dressing, mix together the fish sauce, sugar, lime juice and chili in a small bowl. Taste and adjust sweetness, saltiness and tartness according to your taste.

In a large mixing bowl, combine beef, cucumber, tomato, shallot, and herbs. Drizzle about 3 tbsp of dressing and toss together. Taste and add more dressing if needed.

Ooo what a beautiful salad packed with flavour and texture but with only a handful of ingredients! I don't actually think I've ever had a Classic Thai beef salad, but this is right up my alley!

A simple and satisfying salad you'll come to again and again! The beef can be grilled, pan fried, broiled, or even cooked crumbled, your choice.

Easy Thai Grilled Beef Salad Recipe

large lime, (zested & juiced (about

peanut oil or olive oil

rice vinegar (or apple cider vinegar)

sesame oil

fish sauce

sriracha sauce or red pepper flakes, (to taste)

honey

ginger

garlic (minced)

beef*

zest from lime, (about 1 tablespoon)

sriracha sauce (or red pepper flakes)

salt

garlic powder

carrots, (peeled and cut into ribbons with the vegetable peeler)

red bell pepper, (thinly sliced)

sesame seeds

Combine all the dressing ingredients in a small bowl and whisk together.

Let sit to meld flavors while making the rest of the salad.

Make Dressing:

Mix ground meat with fish sauce, lime zest, sriracha, salt and garlic powder, stirring well to incorporate evenly. Shape into 8 small patties about 1/2-inch thick.

 Grill patties until done, 5-6 minutes each side (**see note below for other cooking methods).

Make Patties:

While patties are cooking, divide the lettuce and shredded cabbage between 4 dinner plates.

Top with the carrots, bell pepper and onion slices.

When the patties are cooked, arrange two of them on each plate, nestling them into the greens.

Drizzle with dressing and garnish with sesame seeds.

Make Salad:

A hearty, satisfying salad with seasonal vegetables and a flavorful garlic and black pepper dressing.

Steak Salad with Creamy Garlic-Pepper Dressing

olive oil

Greek yogurt (or sour cream)

lemon juice

rice vinegar, (white balsamic,

Dijon mustard

black pepper (or to taste)

salt (or

lettuce

onion

garbanzo beans (or 1 can, drained)

steak

tomatoes

feta cheese (crumbled)

Add all the ingredients to the jar of a blender and whir until blended. Thin with 1 to 2 tablespoons of water as needed for pouring. (Makes 1 1/4 cups*)

Layer the ingredients in the order listed on a large platter, ending with the feta cheese.

Drizzle with some of the dressing and pass the rest at the table.

With its chewy noodles, fresh herbs, crunchy veg and tender lemongrass beef, this noodle salad is an explosion of flavour.

(6 oz) dried rice vermicelli noodles

(10.6 oz) rump steak, trimmed, cut into 3mm-thick slices

Lebanese cucumber, seeds removed,

peeled,

bean shoots

tbsp white vinegar

tbsp sugar

chilli,

vegetable oil

Thai basil leaves

crispy fried shallots*

Lemongrass marinade:

lemongrass, white part only, bruised, sliced

tsp black peppercorns

tsp sugar

Step 1

Use a mortar and pestle to pound the lemongrass, peppercorns and garlic to a rough paste. Combine steak with lemongrass paste as well as the fish sauce and sugar. Set aside while you prepare the rest of the salad ingredients.

Step 2

Soak the rice vermicelli in room temperature water for 3-4 minutes or until softened slightly. Then cook in boiling water for 1-2 minutes or until just tender. Drain and rinse under cold running water until the noodles are cool. Drain the noodles and divide among serving bowls. Top with cucumber, carrot and bean shoots.

Step 3

Make a dressing by whisking together the fish sauce, vinegar, lime juice, sugar and chilli. Set aside.

Step 4

Heat vegetable oil in a wok or large frying pan over high heat. Add the beef and stir-fry for 2-3 minutes or until almost cooked. Add 1 tablespoon of the fish sauce dressing and cook for another 30 seconds. Remove from heat and divide the beef among the serving bowls. Top with basil, mint and fried shallots. Serve warm.
