Beef Salpicao is a one-pan, quick, and easy dish made of tender beef chunks coated with a savory sauce that is full of rich, garlicky flavor. It is done in less than 15 minutes using easy-to-find ingredients—the perfect addition to your weeknight meal rotation

Beef Salpicao Recipe

garlic (thinly sliced)

butter

oyster sauce

pepper

Worcestershire sauce (or soy sauce)

cornstarch

In a bowl, combine beef, Worcestershire sauce, and pepper. Stir well. Add the cornstarch and mix until meat is well coated.  Marinade for a few minutes or until ready to use.

Add oil and garlic to a wok or large pan and turn the heat to medium-low. Fry garlic until lightly golden and crispy. Remove the garlic from the oil.

In the same wok or pan with oil, turn the heat to high.  Once hot, add the meat and spread it in the pan evenly.  If needed, do this in 2 batches. Once added to the wok or pan, do not stir the meat for about a minute or until the bottom side is brown and lightly charred. Then stir to cook the other side. Remember not to overcook the meat. 2 minutes per batch tops.

Add the first batch back to the pan (if done in batches). Move the meat to the sides and add butter. Stir and cook for 30 seconds.

Add the oyster sauce and stir to coat the meat, then allow the meat to absorb the sauce. Add back the fried garlic, stir and turn off the heat.

Transfer to a serving dish. Garnish with parleys or chives if available.

BEEF SALPICAO

These sheet pan beef skewers are a quick and easy meal from Melissa Clark. Beef sirloin is marinated in oil, garlic, and fragrant spices, skewered and quickly broiled, and served with a cilantro and mint yogurt sauce.

Sheet Pan Beef Skewers

olive oil

garlic (finely grated)

salt

cumin

paprika

cinnamon

allspice

black pepper

cayenne pepper (optional)

boneless beef sirloin

plain full-fat yogurt or sour cream

Kosher salt

cilantro

red onion

Lemon wedges (for serving)

Soak

If you’re using wooden or bamboo skewers, soak them in water for at least 1 hour to help prevent them from catching fire under the broiler (you don’t need to do this with metal skewers).

In a large bowl, mix together the oil, garlic, the salt, cumin, paprika, cinnamon, allspice, black pepper, and cayenne, if using.

Marinate

Add the meat and toss well to coat the pieces. Cover and let the meat marinate for at least 30 minutes at room temperature or up to 24 hours in the refrigerator.

In a small bowl, mix together the yogurt, a pinch of salt, garlic, and the cilantro or mint. Refrigerate until ready to serve.

When you’re ready to cook, set a rack about 4 inches (10 cm) below the broiler element and heat the broiler. Line a rimmed baking sheet with aluminum foil.

If you&#39;re using wood skewers and want to retard them from catching fire under the broiler, you can wrap the exposed ends with foil.

Thread

Press meat and onions onto the skewers, alternating them and pressing the pieces next to  each other. Place the skewers on the baking sheet.

Broil

Broil until the tops are browned and slightly charred, 3 to 4 minutes. Using oven mitts, flip the skewers over and continue broiling until the meat is browned and charred at the edges on the other side, but still rare or medium-rare inside (or medium, if you prefer), 2 to 4 minutes more.

Serve

Serve the skewers with the yogurt sauce and lemon wedges.

30-Minute Crispy Korean Beef

lb beef sirloin (thinly sliced)

green onion (finely chopped)

soy sauce

sweet rice wine (mirim)

brown sugar

tbsp minced garlic

ginger paste

tbsp sesame oil

sesame seeds

tsp pepper

Spread the beef over the cutting board and pound strong with the back of your knife all over the meat. Do not cut through. Flip the meat to the other side and do the same. Gather up the meat and cut 3-4 times.

In a large mixing bowl, mix the rest of ingredients together except oil.

Add the beef to the sauce, and toss to coat as you are kneading the meat. Let it sit on the room temperature for 10 minutes.

Heat a heavy bottom skillet until very hot. Drizzle a little oil and spread a small amount of beef mixture thinly on a hot skillet. It should sizzle immediately. Cook for 2 minutes, turn to the other side and cook for another 1 minute. The meat should have some caramelized surface.

Serve hot with rice and a simple side salad. Enjoy!

If you have abundant cucumbers, this quick tender beef and cucumber stir-fry is a perfect rice bowl dish for an easy weeknight meal.

cucumber (seeded and sliced thinly)

Korean soup soy sauce (gukganjang)

Place cucumber slices in a bowl and add the 1/2 teaspoon salt. Let it sit for 10 minutes. Squeeze out the cucumbers to remove the moisture.

For the beef, combine beef with Korean soy sauce for soup, soy sauce, sesame oil, garlic, sugar, and pepper in a small mixing bowl; set aside.

For the stir-fry, heat oil in a skillet over high heat. Add the cucumber slices and stir-fry for 1-2 minutes. Remove the cucumbers and set aside.

Add the beef and red chili slices to the skillet and stir-fry until they are just browned. Return the cucumbers and toss with beef and chili. Sprinkle sesame seeds and serve with rice.

I tried this out today.  I worried because my cucumber was a bit old and turning bitter but it came out delicious.  Thanks a lot for posting!
