Beef Stroganoff

600 g / 1.2 lb scotch fillet steak / boneless rib eye ((Note 1))

vegetable oil (, divided)

onion ((or 2 small onions), sliced)

300 g / 10 oz mushrooms (, sliced (not too thin))

g / 3 tbsp butter

tbsp flour ((Note 2))

beef

Dijon mustard

sour cream

Salt and pepper

chives (, for garnish (optional))

Use your fist (or rolling pin or mallet) to flatten the steaks to about 3/4cm / 1/3" thick. Slice into 5mm / 1/5" strips (cut long ones in half), discarding excess fat.

Sprinkle with a pinch of salt and pepper.

Heat 1 tbsp oil in a large skillet over high heat. Scatter half the beef in the skillet, QUICKLY spread it with tongs. Leave untouched for 30 seconds until browned. Turn beef quickly (as best you can!). Leave untouched for 30 seconds to brown. Immediately remove onto a plate. Don't worry about pink bits and that it will be raw inside.

Add remaining 1 tbsp oil and repeat with remaining beef.

Turn heat down to medium high. Add butter, melt. Then add onions, cook for 1 minute, then add mushrooms.

Cook mushrooms until golden. Scrape bottom of fry pan to get all the golden bits off (this is flavour!).

Add flour, cook, stirring, for 1 minute.

Add half the broth while stirring. Once incorporated, add remaining broth.

Stir, then add sour cream and mustard. Stir until incorporated (don't worry if it looks split, sour cream will "melt" as it heats).

Bring to simmer ,then reduce heat to medium low. Once it thickens to the consistency of pouring cream (3 - 5 minutes), adjust salt and pepper to taste.

Add beef back in (including plate juices). Simmer for 1 minute, then remove from stove immediately. (Note 4)

Serve over pasta or egg noodles, sprinkled with chives if desired.

½ pounds Beef Round Steak

Cut steak into small strips, approximately 1-1 ½ inches long. Chop the onion.

Brown the steak and onions in a skillet with the butter over medium heat. Once browned, add the cream of mushroom soup and sour cream, mix thoroughly.

Continue to cook over medium heat, until the mixture starts to simmer. Turn heat down to low, cover the skillet and continue simmering, for about 45 minutes, or until meat is tender, stirring occasionally.

While meat is simmering, cook the egg noodles according to manufacturer’s recommendation.

Once done, pour the meat and soup mixture over hot, buttered egg noodles. Enjoy!!

sirloin steak (cut 1/2" thick)

flour (divided)

salt

pepper

olive oil

butter

onion

mushrooms (sliced)

Toss beef with 1 tablespoon flour, salt &amp; pepper. Shake off excess flour.

Heat olive oil over medium high heat in a saucepan. Brown beef in small batches until lightly browned, about 1 minute on each side. Remove from pan and set aside.

Reduce heat to medium and add butter &amp; onion. Cook until softened, about 4-5 minutes.

Add mushrooms &amp; garlic and cook until softened, about 4 minutes more. Stir in 2 tablespoons of flour and cook 1 minute.

Add broth, Worcestershire sauce, dijon mustard, and thyme. Bring to a boil, reduce heat and simmer 5 minutes. (You can thicken the sauce further if desired, see note).

Add beef (with any juices). Cook 2 minutes more or just until heated through. Stir in sour cream.

Season with salt &amp; pepper and serve over egg noodles and garnish with parsley.

Slow Cooker Beef Stroganoff

button mushrooms, (quartered)

cognac

egg noodles

Set a large 6-quart slow cooker to low heat. Cut the beef roast into small bite-size chunks, or cut against the grain into thin strips.

Place the butter in a large skillet and set on the stovetop over medium heat. Once melted, add the onions and garlic. Sauté for 2-3 minutes, then add the beef pieces. Brown the beef on all sides, about 5 minutes. Then sprinkle the flour over the beef and stir to coat. Cook another 3 minutes. Pour the mixture in the bottom of the slow cooker. *If using an Instant Pot or Multi-Cooker, do this in the crock on the Sauté setting, then lower the heat to Slow Cook.

Add the chopped mushrooms to the crock. In a bowl, whisk the sour cream, cognac, beef base, Dijon mustard, and thyme together. Pour the mixture over the mushrooms, then add in 3 cups water. *If using less than 1 cup cognac, add extra water to equal 1 cup.

Cover the crock and slow cook for 5-6 hours on high, or 7-9 hours on low, until the beef is fork-tender. Stir in the egg noodles. Cover again and slow cook another 20-30 minutes, until the pasta is cooked to al dente. Taste, then salt and pepper as needed.

Boil egg noodles according to package instructions and drain well.

Meanwhile, add 1 tablespoon butter to a Dutch Oven or large skillet over medium-high heat.  Add the steak and cook until browned on both sides. Work in batches so you don&#8217;t crowd the pot. Remove to a plate and cover to keep warm. Melt the remaining tablespoon of butter in the pan with the other fat. Add the onions and mushrooms and cook over medium-high heat for 4-5 minutes or until the onions are soft and the mushrooms are browned. 

Reduce the heat to low and add the garlic, cooking for 1 minute. Sprinkle in the flour. Stirring constantly, cook for another 2 minutes.

Slowly stir in beef broth, Worcestershire sauce, and mustard.  Simmer for about 10 minutes or until thickened.

Remove from the heat and stir in the sour cream. Season with salt and freshly ground black pepper to taste.  Add the cooked noodles and cooked beef back to the pot and simmer over gentle heat to warm everything for 1-2 minutes.  Garnish with chopped fresh parsley.

Everyone's favorite retro meal, beef stroganoff, now in casserole form with this easy recipe!

Beef Stroganoff Casserole

sweet onion,

garlic, chopped

tomato sauce

small curd cottage cheese

cream cheese,

black pepper

cheddar cheese (I like the Cabot brand!)

Preheat oven to 350 and spray a 2 quart casserole with cooking spray.

Cook up the egg noodles according to package directions (usually around 8 minutes).

Sauté beef, onions and garlic in large skillet over medium-high heat until the meat is cooked through, about 6-8 minutes.

Stir in tomato sauce, cottage cheese and cream cheese and cook another 2-3 minutes until fully combined. It&#8217;s okay if the cream cheese isn&#8217;t fully melted&#8230;a few chunks are good!

Add cooked noodles and pepper to the skillet, stir to combine and pour the whole mixture into the prepared casserole. Sprinkle cheddar evenly on top.

Bake for about 20-25 minutes until bubbling and a little browned. Cool for about 5 minutes and serve!

Kate, When I got the recipe I hadn't made it yet, but when I did. It was to die for. I passed it along to my former mother-in-law and my oldest son and shared it with my neighbors.. Now. If you are going to make Beef Stroganoff. Then this is surely the way to make it. I hope anyone that is looking for a recipe for Beef Stroganoof goes for this one.
