These ground beef taco bowls are the perfect high protein meal prep recipe. Serve them up with rice or cauliflower rice, sauteed bell pepper and onion, lettuce, avocado and my homemade cilantro lime crema.

Ground Beef Taco Bowls

beef

taco seasoning (1.3 ounce packet, about 4 tablespoons)

water

tomato paste

red bell peppers (sliced)

onion

olive oil

white rice

corn

romaine lettuce

avocado

cilantro lime crema (click for recipe)

heat skillet

saute beef

Add in the ground beef and saute until cooked through and no longer pink.

add tomato paste

Add in the tomato paste and saute for 1 minute.

add taco seasoning

Mix in the taco seasoning and water and reduce heat to low. Let simmer for a few minutes to let the flavors blend.

add oil

Meanwhile, add the olive oil to a skillet.

saute peppers

Add in the sliced bell peppers and onions and saute until soft, about 5-7 minutes.

assemble

Assemble your bowls with a base of rice (can sub cauliflower rice), lettuce, then layer on the beef, sauteed pepper/onion, corn, avocado and top with the cilantro crema. Enjoy!

Easy Ground Beef Taco Bowls

avocado,

low fat plain Greek yogurt

garlic, (minced)

lime juice

cilantro, (chopped)

sriracha ((optional))

cumin

salt

black pepper

red onion, (divided)

Olive oil, oil

garlic, (minced

salsa

Salt and pepper, (to taste)

rice ((brown, white, basmati))

cherry or grape tomatoes, (halved)

frozen corn, (thawed)

leafy romaine lettuce, (chopped)

In a small bowl, whisk together all of the dressing ingredients until fully combined. For an even creamier dressings you could put all ingredients in a blender or food processor and blend until smooth.

For the dressing

Heat a large skillet over medium high heat, add a drizzle of oil followed by the diced onion, garlic and ground beef. Break up with a wood spoon and cook until most of the pink is cooked out of the beef. Add the taco seasoning, salsa and 1/4 cup water. Simmer until most of the liquid has evaporated, remove from heat. Taste and adjust seasoning with salt and pepper.

Drain the ice water from the sliced red onion. Place as much rice, ground beef, tomatoes, black beans, corn and lettuce in the bowls as you’d like. Drizzle with the avocado dressing, and serve immediately with avocado, lime wedges, cilantro, red onion, salsa, or other desired toppings
