Make this refreshing sweet bell pepper salad as an easy weeknight side. With onions, fennel, and feta cheese, eating the rainbow never tasted so good!

Sweet Bell Pepper Salad

mixed bell peppers, sliced

fennel bulb, sliced thinly

feta cheese crumbled

garlic,

tbsp extra virgin olive oil

tbsp Champagne vinegar ((or rice wine vinegar))

tsp salt

pepper

*If using strong onions, slice and soak the onions in 2 tbsp white vinegar and 1/4 cup of water for 10-15 minutes. Drain, then use.

Slice the vegetables and add to a medium - large serving bowl.

Mix ingredients for the dressing. Make sure to rub the fines herbs between your fingers or rub on your palm to break the up to release their flavor.

Toss and taste to adjust seasoning. Add the feta cheese and toss gently. Serve cold. NOTE: Tastes better if left to sit in the refrigerator for an hour before serving.

Serves 6 at 4.4g net carbs per serving.

NOTE: For an easier version, you can use your favorite oil and vinegar salad dressing instead of making your own.

This colorful Bell Pepper Salad is super quick and easy to put together. It is excellent for daily meals as well as potlucks and parties.

Bell Pepper Salad

10.5 oz thinly sliced bell pepper

half a small carrot, peeled and thinly sliced ((about ¼ cup 40 grams))

half a small red onion, peeled and thinly sliced ((about ¼ cup 30-40 grams))

mint leaves

lemon juice

white wine vinegar

extra virgin olive oil

dijon mustard

garlic

oregano

salt ((to taste))

black pepper ((to taste))

Remove the tops and discard the seeds from the bell peppers. Cut in half lengthwise, then cut into strips.

Thinly slice the carrot and red onion. Soak the onion slices in iced cold water for several minutes to remove the bitterness if you don&#39;t like too much raw onion taste.

Transfer bell pepper, carrot and onion to a mixing bowl. Whisk together all the ingredients to make the dressing and adjust taste to your liking. Then pour the dressing over the salad ingredients and toss to combine.

Add in mint leaves now if you want to serve the salad right away. Or refrigerate the salad and add mint leaves once ready to serve.

I made it without onion due to an onion allergy - it was delicious
