This Blueberry Baked Oatmeal recipe is the perfect make-ahead breakfast to feed a crowd! The addition of Greek yogurt and almond meal make it high-protein! It’s gluten-free and refined sugar free, and totally customizable!&nbsp;

Healthy Blueberry Baked Oatmeal

oats

almond meal/flour

tsp baking powder

¼ tsp baking soda

sea salt

cinnamon

coconut sugar (or any granulated sugar of your choice)

TBS melted butter (or coconut oil)

milk (regular, almond, coconut etc.)

Vanilla Greek yogurt (or your favorite kind)

eggs

tsp pure vanilla extract

blueberries ((fresh

cinnamon sugar

Preheat oven to 350 degrees F. Grease a 9x13” glass baking dish and set aside.

In a small bowl, combine oats, almond meal, baking powder, baking soda, salt sugar and cinnamon. Set aside.

In a separate, small microwave safe bowl, melt butter (or coconut oil).

In a large bowl, whisk together Greek yogurt, eggs, and vanilla and whisk until combined.

Add melted butter and milk and whisk until combined.

Add dry ingredients to wet ingredients and mix well.

Gently fold the blueberries into the mixture.

Spread evenly in a 9x13” pan.

Sprinkle cinnamon sugar over the top of your oatmeal.

Bake at 350 degrees F for 30-40 minutes (shorter if using fresh berries, longer if using frozen). The oatmeal should be browned on the top and the top should spring back when you gently touch it with your finger.

Let cool for 15 mintues and serve warm. You can also refrigerate after baking and serve cold!

Blueberry Baked Oatmeal

This berry baked oatmeal is the perfect breakfast meal prep! It&#39;s golden on the outside, soft on the inside and loaded with sweet berries.

Berry Baked Oatmeal

old fashioned rolled oats

almonds

baking soda

salt

milk (dairy

honey

unsalted butter or coconut oil

vanilla extract

½ cups frozen mixed berries

Grease

Preheat the oven to 375°F (190°C). Grease a 9-inch square baking dish.

Stir

In a large bowl, stir together the oats, ½ cup of almonds, cinnamon, baking soda, and salt.

Whisk

In a separate medium bowl, whisk together the milk, honey, eggs, butter, and vanilla.

Pour the wet mixture into the dry, add the frozen berries, stir it all together, and then transfer the mixture to the baking dish. If you&#39;d like, top it with a few extra frozen berries. Then sprinkle the remaining ¼ cup of almonds on top.

Bake

Bake for 40 to 45 minutes, or until set. Serve immediately plain, or top with a dollop of yogurt or a drizzle of maple syrup.

Just when I thought overnight oats or the classic stovetop oatmeal were my favorites, this baked oatmeal proves its worth for breakfast. It's easily sliceable into 6 portions and can be jazzed up with a quick dollop of creamy yogurt. I'd say this healthy baked oatmeal recipe is another perennial winner for breakfast meal prep.

Baked oatmeal, filled with berries, and lightly sweetened with brown sugar is a great way to start the day. 

Summer Berries Baked Oatmeal

old fashioned oats

brown sugar

baking powder

ginger (optional)

butter

milk

strawberries (about ½" pieces)

raspberries

blueberries

½ cup sliced almonds (optional)

Preheat the oven to 350°F. Grease a 9x13 pan with butter. Stir together the oats, brown sugar, baking powder, salt, cinnamon, and ginger in a large mixing bowl.

Add the melted butter, eggs, and milk. Stir to coat. Gently fold in the berries and the almonds, if desired.

Pour into the prepared pan and bake for 26-30 minutes, until a knife inserted comes out clean. Let cool about 10 minutes before serving.
