A patriotic berry salad with fresh berries, crunchy maple walnuts and blue cheese. The red white and blue theme makes it perfect for Memorial Day or the 4th of July.

Summer Berry Salad with Maple Walnuts

baby greens (I used OrganicGirl Supergreens!)

blueberries

strawberries,

blue cheese, feta or goat cheese

walnuts

maple syrup

cinnamon

sea salt

olive oil

Tablespoons white balsamic vinegar

Tablespoon dijon mustard

coconut sugar

sea salt and ground pepper, to taste

Preheat oven to 350°. Add walnuts to a baking sheet and toss with maple syrup, cinnamon and sea salt. Spread in a single layer and roast for 7-9 minutes. Remove from oven and allow walnuts to cool.

While walnuts are roasting, make the dressing by whisking together vinegar, mustard, sugar, olive oil, salt and pepper. Taste and add more salt and pepper if needed.

Add greens to a large bowl and top with berries, cheese and maple walnuts.

Add dressing and toss just before serving to leave dressing on the side and allow everyone to dress their own salad.

This colorful salad features a delicious mixture of leafy greens, blackberries, blueberries, apples and walnuts!

Apple Berry Walnut Salad

Place two large bowls on counter or work space. Fill each with an even amount of both lettuces, leaving room for toppings.

Top each bowl of lettuce evenly with blueberries, blackberries, apples, walnuts and cheese, neatly arranging each topping in a section of the bowl.

Either top salad with dressing of choice or place dressing in a container on the side. Enjoy!

Beat cream cheese, yogurt and Lemon Ginger Sugar and Spice Blend in medium bowl until smooth. Gently stir in berries. Cover. Refrigerate until ready to serve.

Serve alone or over pound cake, sprinkled with additional Lemon Ginger Sugar and Spice Blend, if desired.

This light, fresh fruit salad is a delicious way to get in those fruit + vegetable servings! The mango yogurt dressing really pulls it all together!

Mangoberry Salad Recipe

spring mix lettuce ((about 6 cups))

mangoes

strawberries (sliced)

½ cup sliced almonds ((I used the candied salad-topper almonds))

vanilla greek yogurt ((you could use regular yogurt, too))

lemon juice

mango

honey

salt

In a large bowl, toss the spring mix, mangoes, blueberries, and strawberries together.Top with sliced almonds.

Salad:

In a blender (or food processor) mix together yogurt, lemon juice, mango, honey and salt.Blend until smooth, then pour over salad (or serve on the side)

Dressing:

A light salad made with a mix of fresh spring berries and a lemon verbena vinaigrette.

Spring Berry Salad with Lemon Verbena Vinaigrette

champagne vinegar

lemon verbena leaves (loosely packed)

spring mix salad greens

berries

sunflower seeds

Combine vinegar, olive oil, and lemon verbena leaves in a blender. Blend on high until leaves are pureed into the vinaigrette. (If you don't have a high-powered blender like the Vitamix, you may want to strain the dressing through a fine mesh sieve or cheesecloth.)

Divide greens onto 4 plates.

Top each with 1/2 cup of berries and sprinkle with sunflower seeds.

Drizzle vinaigrette over the salad. (There might be extra—don't feel like you need to use it all!)

Absolutely delicious!  It's the perfect refreshing meal with so many options to add in.  I like to add some chicken, feta and almonds or roasted sunflower seeds for a crunch. The dressing is yummy and super easy to throw together.  I'm looking forward to trying other recipes from these two &lt;3

I am not a huge salad eater, but this is one salad I can&#039;t get enough of. It is so yummy and full of flavor and texture. The berry and citrus combination is so yummy, and the salad dressing is beyond delicious.

Citrus Berry Salad Recipe

clementine oranges

1½ Tablespoons balsamic vinegar

Combine spinach leaves, oranges, raspberries, blackberries and strawberries in a large bowl.

Top your salad with chopped walnuts and feta cheese crumbles.

In a medium size bowl, whisk together orange juice, olive oil, balsamic vinegar, and honey until fully incorporated.

Pour the salad dressing over the salad before serving and toss to coat.

The dressing was a little too orange juicy for my taste, but the rest of the salad was incredible!

2-3 clementines/mandarins (or 1 large orange)

Strawberry Balsamic Dressing

Make the candied nuts. Then make the strawberry balsamic dressing.

Prepare your salad: Add mixed greens to a plate/bowl. Remove stems from strawberries and slice. Peel clementine and break into single segments. Top salad greens with strawberries, blueberries, and clementine.

Add candied walnuts, and top with desired amount of dressing.

If saving leftovers or preparing for later, store salad and dressing separately in the fridge until ready to enjoy.

We all enjoyed this as a side dish with our dinner... the candied nuts are really yummy!
