best ceviche recipe

A simple delicious Ceviche recipe with fresh fish, cucumber, tomatoes chilies, lime, cilantro, and optional avocado.

Ceviche! 

½ a red onion, very thinly sliced

garlic

black pepper

cilantro

serrano

lime juice limes)

grape

cucumber

olive oil (optional)

semi-firm Avocado, diced, as garnish, optional

Slice the red onion very thinly and salt generously and let stand 15 minutes until it begins to release its liquid (this will remove the bitterness). Rinse well, squeeze dry.

Place fish, garlic, onion, salt, pepper, fresh chilies, and lime juice in a shallow serving bowl, gently mix, and marinate in the refrigerator for at least 30 minutes before serving. The longer you marinate the firmer and more &#8220;cooked&#8221; the fish will become.

Before serving, gently toss in the fresh cilantro, cucumber and tomato and a drizzle of olive oil, gently mix.

Taste for salt and add more if necessary. If adding avocado, gently fold it in at the end, after everything is mixed, making sure to use one that is not too soft.

How to Make Ceviche! 

Easy Shrimp Ceviche with raw or cooked shrimp that is cool, zesty and refreshing. Dip into with tortilla chips, spread on a tostada or add to tacos.

Best Ever Shrimp Ceviche Recipe

lb shrimp (peeled, deveined & tails off)

lime juice (6 large limes)

tomato (diced)

avocado (diced)

red onion (minced)

cilantro (minced)

jalapeno (seeded & diced)

Salt and pepper

If using frozen shrimp, add it to a medium bowl and cover with warm tap water. Let thaw for 10 minutes.

In the meanwhile, squeeze juice from limes and add to a large bowl. Please do not use bottled juice.

Drain shrimp and give it a gentle squeeze. Dice it and add to the bowl with lime juice.

Marinate: Cooked shrimp for 15 minutes; raw shrimp for 1.5 hours or until opaque and pink. Acid will &quot;cook&quot; the shrimp.

While shrimp is marinating, dice tomato, avocado, red onion, cilantro and jalapeno and add to another bowl. Refrigerate if making ceviche with raw shrimp. I also recommend to dice avocado right before combining shrimp with veggies to avoid brown avocado.

Add vegetables to the bowl with shrimp, stir and add salt and pepper to taste. Remember tortilla chips are salty. So I would salt after the taste test with a chip.

Serve cold with chips, on a tostada and even in tacos.

How to Make Shrimp Ceviche

Made this recipe last night for the second time using Mahi Mahi and it was AMAZING.  It takes some work to make, but if you like ceviche this recipe is way worth it.  I marinated my fish for 1 hr. and 30 min. and it blew us all away it was so DEVINE.  The best I've ever had.  Heaven.  Even my 11 year old boy cleaned out his bowl using the tortilla chips and we all went for seconds.  I wish I could make this once a week for my family....   thank you for sharing your recipe Sylvia!!
