best couscous recipe

Couscous often gets forgotten about and honestly, I don't know why. It's much easier to make than most grains or pastas and you can take the flavor profile with it anywhere. A simple drizzle of olive oil and lemon juice is our favorite way to serve it, but the possibilities are endless. 

Lemony Herb Couscous

c. couscous

c. low-sodium chicken broth

olive oil

lemon

tbsp. parsley

Kosher salt

black pepper

red pepper flakes

Do you consider couscous a pasta or a grain?

A good dish. A little too much olive oil, but perhaps I need to use a milder oil.   I have a recipe for a cold dish of couscous, that has golden raisins and zucchini and more.  The kids all loved it. I had forgotten about it, and now I can’t find it.

Delicious. I used a little less olive oil. Was happy to find this recipe! It went very well with my creamy cucumber salad and seared lamb loin!

Nice blueprint. I use oregano instead of parsley and paprika instead of red pepper.

The instructions say to take the couscous off heat and let sit for 10 minutes. This results in soupsoup. Couscous package instructions say to simmer for 8-10.

How To Make Restaurant-Worthy Spanish Rice At Home

Couscous is so quick and easy to prepare, and makes the perfect base for this cauliflower and chickpea dish. The harissa yoghurt adds a nice bit of spice.

Moroccan Spiced Cauliflower & Couscous With Harissa Spiked Yoghurt

1tsp Cumin Seeds

1tsp Coriander Seed

1tsp Fennel Seed

1.5tsp Smoked Paprika

0.25tsp Chilli Powder

0.125tsp Ground Ginger

0.25tsp Ground Cinnamon

0.5tbsp Pomegranate Molasses

Cauliflower

Red Onion

Couscous

2tsp Harissa Paste

Parsley (to serve)

Drained Cooked Chickpeas

Toasted Almond (to serve)

Salt

Black Pepper

Vegan Yoghurt

If using whole cumin and coriander seeds, lightly grind them in a pestle and mortar. Add all of the spices plus salt and pepper, pomegranate molasses and the olive oil to a small bowl and mix.

Cut the cauliflower in half and then into quarters or thirds (depending on how big it is). Peel the onion and cut into eighths, keeping the stem intact. Place the cauliflower and onion onto a large baking tray and drizzle over the olive oil spice mix. 

Make sure the cauliflower is well covered, rub the spice mix into the crevices. Bake for 15 mins on the middle shelf, toss and bake for another 15 mins until cooked through and caramelised on the edges. 

Meanwhile, prepare the couscous. Measure the couscous and place in a heatproof bowl. Boil the kettle and measure out 480ml boiling water and pour this over the couscous. Add a drizzle of olive oil and half the harissa, if using and stir well. Cover with a lid or plate and set aside

Drain the chickpeas and add these to the couscous along with remainder of your harissa and season with salt and pepper. Stir to combine.

To make the harissa yoghurt, add the vegan yoghurt to a small bowl and stir through the harissa.

To serve, lay the couscous onto a large platter or bowl, add the cauliflower, harissa yoghurt, toasted almonds, parsley, and a final drizzle of olive oil and some extra pomegranate molasses if you like.

I really liked the flavours in this one but found the chickpeas/cous cous was quite a large portion so I would reduced the amount of these if making again.

Just wondering how much ground ginger is supposed to go in this please? Thanks!
