The BEST low carb keto pancakes. This recipe makes thick and fluffy almond flour keto pancakes in 1 minute! As far as quick and easy keto breakfast recipes go it doesn't get much better than these pancakes, or should I say pancake? ... That just depends on how many you make! 

 Keto Pancakes MADE IN 1 MINUTE | THE BEST Low Carb, Fluffy, and EASY Almond Flour Keto Pancake Recipe

Tbsp (7 grams) Melted Salted Butter

Tsp Pure Vanilla Extract

Tbsps (35 grams) Keto Maple Syrup

Cup (56 grams) Almond flour

Tsp Baking Powder

Add all of the liquid ingredients into a medium sized bowl or large measuring cup (for easier pouring), and mix until combined.

Now, add all of the dry ingredients into the same bowl, and mix those until combined with the wet ingredients.

Coat 8 Ounce ramekin - or bigger - with baking spray, add the batter to the ramekin, and microwave.

Microwave times will vary!! In my 1100 Watt microwave, 45 seconds is the perfect cook-time.

However, I highly, HIGHLY recommend, erring on the side of less cooktime and slightly underdone, than overdone.

The middle should be slightly "wet" and look a little underdone when it comes out of the microwave. Don't worry, it will continue to cook once it's out of there.

Add butter, keto maple syrup, and enjoy!!

1 Minute Version:

Turn the stove up to medium heat, coat a pan with baking spray (or butter) and heat the butter/oil.

Once the oil/butter is heated add 1/2 to 1/3 of the batter to the middle of the pan and cook until bubbles start to form, and the outside ring of the pancake turns a "lighter" color. This will take a 3ish minutes to happen.

*Note: This pancake makes 2 medium sized pancakes, and 3 small sized ones.

Now, give your pancakes a flip, and cook for another 1-2 minutes. Just until you can press down on it, and you can feel some "give" to it...and it doesn't feel wet.

Cooking these pancakes on the stovetop:

Made this today on the stovetop and loved it. Added a touch of cinnamon for personal preference and topped it with Keto friendly maple syrup. The pancake (I made it as one giant pancake) was fluffy, light, and had great flavor. Thank you for another great recipe!

Just made these! Best ever. UK based so also love that you put the grams down 😊 One question tho. I made two decent size pancakes out of the batter mix. Are the cals and net carbs for all the batter  (a serving) or each pancake I made out of the batter??  Keep the recipes coming

Just made this for the second time! Today I added 1 tbsp pumpkin and 1/4 tsp pumpkin pie spice—- amazing!!

But when I log in the almond flour , 56 grams equal to about 320 calories. Am I doing something wrong here ? Should I add less almond flour to equal to 242 calories with 1 large egg includes which is about 70 calories ?

Subbed coconut flour for egg and added orange juice for moisture. Why didn’t it work? Not really! Mixed exactly as directed and cooked in waffle maker. Best keto pancake/waffle I’ve found.

I tried these in a mug and then in a waffle maker, both were soooo good!! It was so easy and delicious!

Hi Joe!  Thanks for a great recipe.   These were so delicious and fluffy as promised.  I doubled the recipe for two people.   It made eight pancakes about 3-4 inches across.  I added some Lily's semi-sweet chcoclate chips onto a few after I put the batter into the pan and they were great too.  My husband was so happy with these pancakes, he's a type II diabetic.  I hope you know what a difference you are making in people's lives by sharing your awesome recipes.

These easy Keto Buttermilk Pancakes are incredibly light and fluffy, with that classic tangy buttermilk flavor and absolutely perfect texture.

Keto Buttermilk Pancakes

almond flour

oat fiber

buttermilk

eggs (separated)

monk fruit/allulose

baking powder

vanilla extract

salt

Add the almond flour, oat fiber, baking powder and salt to a glass bowl and whisk to combine, then set aside.

In a separate bowl, add in the egg white and beat to stiff peaks using a hand mixer.

In a third mixing bowl, add in the buttermilk, egg yolks, sweetener and vanilla extract. Mix for about 2 minutes. Add in the egg whites and mix briefly, trying not to completely deflate them.

Pour in the almond flour mixture and mix just until combined. Let the batter rest for 15 minutes at room temperature.

Heat a large nonstick skillet to low and brush with avocado oil, coconut oil or clarified butter.  Don’t use regular butter, or the pancakes could burn.

Using an ice cream scooper, measure out about 3/4 of the scoop full and form a few small pancakes in the pan.  Don’t make them too big, otherwise they’ll be harder to flip.

Cover with a lid and cook for several minutes on each side until they are cooked through.  You’ll know it’s time to flip them when you see the batter is cooked around the outside and small air bubbles form on top.

It’s important that you cook them low and slow, covered, that’s the key to making these turn out perfect!  Serve warm with your choice of toppings: sugar-free maple syrup, butter, strawberry or blueberry sauce.

These Keto Blueberry Pancakes are light and fluffy, with fresh sweet juicy blueberries makes this one tasty and easy to make low carb breakfast.

Keto Blueberry Pancakes

Avocado oil

Separate the eggs. Whip the egg whites using a hand mixer in a mixing bowl, until you get soft peaks and set aside.

In another bowl, add the egg yolks, sweetener, vanilla and the heavy cream.  Mix using a hand mixer for about 2 minutes.  Add the egg whites in and mix briefly.

In a separate bowl, mix the almond flour, oat fiber and baking powder.  Add the dry ingredients into the wet and mix until combined.  Batter should be a little loose, but not too runny.  Add a little more heavy cream, if needed.  Gently fold in the blueberries.

Add some avocado oil, coconut oil or clarified butter/ghee to a skillet on low heat and add the pancake batter to make pancakes of about 3-4” in diameter.

Cook them on low heat with a lid on for a few minutes on each side, this is key! &nbsp;Once you start them start to puff up, tiny bubbles will form and the bottoms will start browning, it's time to flip them! &nbsp;Serve and enjoy!
