Put potato pieces through a potato ricer, and rice them into a medium bowl. Set aside.

Wash and roughly chop the potatoes into even 1-inch chunks (peel or leave them unpeeled if you don&#8217;t mind the texture of skins). Try to make the chunks as even as possible.

Place the potatoes in a large pot and cover with 1 inch of cold water. Stir in 1 tablespoon kosher salt. Bring to a boil.

Once boiling, cook until they are very tender, about 10 to 15 minutes (pierce a piece of potato with a fork to assess doneness). Drain and allow to steam while sautéing the garlic in Step 4.

When the potatoes are done, melt the butter in the same pot. Add the minced garlic and sauté for 1 to 2 minutes, until fragrant but not browned. Remove the heat and pour in the milk, stir for 15 seconds to warm the milk. Then add the potatoes back to the pot.

For my first time ever making mash potatoes from scratch, I opted for this recipe and they are so good. The only change I made was I roasted a head of garlic and added to the part where you warm the milk. I made the mash for Thanksgiving but added a few things... sauteed diced light green part of leek and sweet onion, few red pepper flakes, and a pinch of black garlic. I used about 4TB of veg butter, cashew milk, Himalayan salt. Total crowd pleaser!
Best part, Saturday I used a couple big tablespoons of this mash dolloped over about 1 1/2C shredded kale with just a little veg broth. I covered this to microwave 1:40sec.  GREAT LUNCH ITEM!  I could also add nutritional yeast for B12 and some seasoned &amp; browned TVP for more protein.  LOVE BEING AND EATING VEGAN !!

These potatoes are DELICIOUS and so easy! I baked russet potatoes in a 450 oven, skins on, no prep, for one hour. After baking, I sliced the potatoes in half, scooped out the pulp and could literally mash with a spoon because the potatoes were so tender.
