Best Ever Potato Salad - loaded with bacon, chives, cheese, and ranch seasoning, this potato salad will become a traditional family barbecue recipe.

Best Ever Potato Salad

lbs. Signature Farms Red Potatoes (skin peeled and diced)

sour cream

Signature Kitchens Extra Virgin Olive Oil Mayo

-1/2 cup ranch seasoning powder

chives (finely chopped)

lb. Signature SELECT bacon

cheddar cheese

Cook bacon according to package directions. Once completely cooked &amp; cooled, coarsely chop into small chunks.

In a small mixing bowl, stir together sour cream, mayo, cheese, coarsely chopped bacon, chives, and ranch seasoning powder {start with 1/4 cup &amp; add more if you desire a stronger ranch taste, we use 1/2 cup, sounds like a lot but once it is all together it is perfect}. Set aside.

Place potatoes in a large pot of boiling water, add salt if desired. Bring to a boil and let them simmer 8-12 minutes, or until potatoes are tender or easy to pierce with a fork.

Drain the potatoes and allow to completely cool. I rinse the potatoes with cold water to stop the cooking process and speed up the cooling.

Once potatoes are completely cool add the sour cream mixture; stir together to combine.

Add salt and pepper to taste. Cover and set in the fridge until ready to serve.

If you would like your potato salad a little less chunky, use an electric mixer and beat the potato salad on medium for 1-2 minutes. This will break up any large chunks, and give you a smoother texture. I do this to make the potato salad a little more creamy but left enough chunks to give it some depth.

lbs baby potatoes (Yukon gold or red potatoes)

eggs (large)

pickles (sauerkraut or fresh cucumber, diced)

tbsp red onion (finely chopped)

tbsp dill (finely chopped)

tbsp yellow mustard

tbsp any light colour vinegar

plain yogurt (2%+ fat)

mayo

salt

tsp black pepper

To cook potatoes and eggs on the stove: In a medium pot, add potatoes, eggs and enough cold water to cover. Place lid on top and bring to a boil on high heat. Reduce heat to low and cook for 7 minutes. Remove eggs with a slotted spoon into a bowl with cold water. Keep cooking potatoes more depending on size: baby - extra 10 mins, medium - 20 mins, large - 25 mins. Or until fork tender.

To cook potatoes in Instant Pot: To 6 or 8 quart Instant Pot, add 1 cup cold water, basket or trivet and place potatoes on top. Cook on High Pressure with Quick Release: baby potatoes - 10 mins, medium 12 mins, large - 15 mins. Then you will have to make Instant Pot eggs separately or boil them on the stove for 7 minutes.

Drain potatoes and let cool for 20 minutes uncovered.

In the meanwhile, prep and add to a large salad bowl: pickles, red onion, dill, mustard, vinegar, yogurt, mayo, salt and pepper.

Chop the eggs and add to the bowl.

Cut potatoes into desired size pieces - some like chunky potato salad (cut into 2 inch cubes) and some more mushy (diced potatoes). Add to the bowl and gently stir salad with large spoon.

Chill for at least 3 hours or overnight before serving.

Serve cold with corn on the cob, grilled chicken breast or turkey burgers.

Best Potato Salad Recipe

lb gold potatoes (, scrubbed)

apple cider vinegar

black pepper (, more to taste)

Place potatoes in a large pot and cover with cold water. Bring to a boil over high heat. Once boiling, continue to cook until just fork tender, about 20 minutes. Drain; slightly cool about 5-10 minutes. Peel the potatoes (optional) and cut into cubes. Place into a medium bowl; set aside.

In a small bowl, combine the vinegar, salt and pepper. Pour over the warm cubed potatoes and gently mix. Place in the refrigerator to chill for 20 minutes.

Meanwhile, in a large bowl, mix together the mayonnaise, mustard and celery seed. Stir in the celery, onions, and pickles until evenly coated. Add the cooled potatoes and the eggs; gently mix. Season to taste with additional salt and pepper. Optional: Garnish with dill and paprika.

This potato salad is doused in a creamy dressing and loaded with bacon. What&#039;s not to love?!

Hard-Boiled Eggs, (diced (see notes))

Sour Cream

Dijon Mustard

Lemon, (juice only)

tsp EACH: Sugar, Salt, (or to taste)

tsp White Pepper, (or to taste)

Potatoes

Potatoes: Place potato slices in a pot of cold water with 1 tsp salt. Bring to boil and cook until fork tender. Just be vigilant and don&#039;t over cook them or they’ll turn mushy. Drain (don’t rinse) and leave to steam dry and completely cool. Now is a good time to prep the eggs &amp; bacon.

Dressing

Dressing: In a small mixing bowl combine mayo, sour cream, lemon juice, mustard, chives, parsley, sugar, salt and white pepper.

Potato Salad

Potato Salad: In a larger mixing bowl combine the potatoes with egg, bacon, red onion and dressing. Gently toss until everything is evenly distributed.

Serve

Serve: Cover and pop in the fridge to allow the flavours to marry, or serve up right away!

The Best Potato Salad in the World!

An adaptation of Julia Child's classic recipe, this French potato salad is a favorite! It features zingy red potatoes, capers, and parsley. 

French Potato Salad

baby red potatoes

shallot (about 1 large)

white wine vinegar

capers, drained

parsley

olive oil

pepper

Fill a large pot with cold water and add 1 tablespoon kosher salt. Add the whole potatoes and bring to a boil. When it comes to a boil, set a timer for 8 minutes. Cook until fork tender (taste test to check).

When the potatoes are done, drain them. When they are cool enough to handle, slice them into bite sized pieces. Place the potatoes in a bowl and gently mix in the minced shallot, white wine vinegar, kosher salt, and 1/2 cup warm water. Let stand for 5 minutes, gently stirring occasionally. The potatoes will absorb the water as they stand.

Add the capers, parsley, olive oil, and a few grinds black pepper. Taste and add additional salt if necessary. Serve warm or room temperature.

This is the best potato salad I've ever made. YUM. It's my new go-to. Wow. Interesting method but turns out fantastic.

Baby potatoes are boiled until tender, smashed, and baked to golden, crispy perfection. Toss with crunchy veggies and zesty Old Bay dressing, and you’ve got a unique take on potato salad that is sure to be on heavy rotation this summer!

Old Bay Smashed Potato Salad

baby potatoes

Kosher salt, (to taste)

Place the potatoes in a large pot, season with salt to taste, cover with water, and bring to a boil. Cook the potatoes until fork tender, but not too soft, 25-35 minutes. Drain and cool for 5-10 minutes.

Meanwhile, preheat your oven to 425°F.

Place the potatoes on a prepared baking tray. Using the bottom of a cup or the flat side of a spatula, gently smash the potatoes. Drizzle with the olive oil and season with a pinch of salt and pepper. Bake the potatoes until the edges are crispy and golden, 25-30 minutes. Remove and let cool for 5-10 minutes.

While the potatoes are in the oven, place the mayo, relish, apple cider vinegar, old bay seasoning, and celery seed in a large bowl and whisk to combine. Place the smashed potatoes into the bowl along with the celery, red onion, chives, parsley, and dill. Toss gently to combine. Taste and adjust seasonings, if necessary.

You can serve immediately, but I like to place mine in the refrigerator to cool for at least one hour to serve chilled.

The BEST Potato Salad Recipe

Boil

Boil the potatoes. Fill a large pot with water. Add the potatoes and bring to a boil. Salt the water, reduce to a simmer and cook for 20 minutes or until a fork inserts easily with a little resistance.

Make hard boiled eggs. Fill another pot with water and bring to a boil. Reduce the heat to low (so that there&#39;s no bubbles breaking the surface) and use a skimmer to gently add the eggs. Cook the eggs for 12 to 14 minutes, then place in an ice water bath to immediately stop their cooking.

Cool

Cool and chill. Once the potatoes have finished cooking, drain the water. Fill the pot with cold water to cool the potatoes down, then drain again. Place both the eggs and potatoes in the refrigerator to cool completely.

Dice

Dice the potatoes and eggs. Once your potatoes and eggs are fully cooled, peel the eggs, and then dice both the potatoes and eggs into 1-inch sized pieces.

Stir

Stir it all together. Add the diced potatoes and eggs to a large mixing bowl along with the mayonnaise, celery, radishes, green onion, dill, salt, and pepper. Stir gently until well combined. Serve the potato salad immediately or refrigerate for up to three days.

BEST POTATO SALAD RECIPE | how to make potato salad easy, healthy and delicious!

This recipe for the best potato salad is light and flavorful. Potatoes, celery, onions and eggs are combined with a delicious homemade dressing infused with herbs and spices.

celery ((1 cup, finely diced))

green onions ((½ cup, sliced thin))

honey

sea salt ((or

Quarter potatoes (or halve if they are small red potatoes) and place them in a 5-quart saucepan. Fill the pan with cold water until the potatoes are covered by 1”

Bring water to a boil and boil until the potatoes are soft and easily pierced with a fork (but not falling apart).

Drain the potatoes in a colander and let them cool until they are cool enough to touch. Mix/toss them every few minutes to help release heat from the bottom layer of potatoes.

Once the potatoes are cool enough to handle, peel the skins off of them, then dice them into ½” pieces.

Transfer the diced potatoes to a large bowl (preferably one with a lid because you will be chilling the salad).

Prepare the Potatoes

While the potatoes are boiling, make the dressing.

Whisk together mayonnaise, mustard, honey, lemon juice, sea salt, pepper, paprika and fresh dill in a small bowl until combined.

Make the Dressing

Add the celery, green onions, and hard-boiled eggs to the diced potatoes in the large bowl. Stir to combine.

Add the dressing and mix until evenly distributed.

Assemble

Cover the potato salad and chill in the refrigerator for at least 6 hours, or overnight.

Sprinkle with additional fresh dill and serve cold.

Made this and it was delicious! I normally use yellow mustard instead of Dijon and also relish! I followed the directions and the dressing is awesome!

I also add sweet relish &amp; some diced red &amp; green bell peppers.  The bell peppers give it a nice crunch &amp; great added flavor!

This is close to what I make.  I use a lot of hard boiled eggs and six is common. I also use drained pimentos. Depending upon the size of the salad I may use a large jar and a small jar. I also use sweet pickle relish but ultimately I can and have you deal relish both work well. Some people put in crumbled up bacon but I don't. Nor do I use celery and especially not onion with people having allergies to it. I put hard-boiled eggs sliced on top for a decoration and sprinkle it with paprika.

I just made the chocolate chip cookies.  Easy recipe ....Due to health issues I cut sugar to 3/4 on white and brown; and used salted butter and omitted the salt.  They were sweet enough and did not notice the difference w/o salt because we are salt free people.. Thanks for recipe
