Cheesecake Swirl Pumpkin Bread

(195 grams) all purpose flour

tsp baking soda

tsp baking powder

cinnamon

nutmeg

cloves

tsp salt

(112 grams) unsalted Challenge butter, room temperature

(310 grams) sugar

eggs

(348 grams) pumpkin puree

oz (226 grams) Challenge cream cheese, room temperature

(52 grams) sugar

tsp vanilla extract

Preheat oven to 350 degrees. Grease a 9×5 loaf pan very well with non stick baking spray.

2. In a medium size bowl, combine the flour, baking soda, baking powder and spices. Whisk together to combine, then set aside.

3. In a large mixer bowl, combine the butter and sugar and mix just until combined.

4. Add the eggs one at a time, mixing until well combined after each addition.

5. Turn the mixer to medium speed and beat until light and fluffy, 2-3 minutes.

6. Add the pumpkin purée and beat until well combined. The mixture may like a little curled and separated.

. Add the dry ingredients and mix on low speed just until combined. Do not over mix. If you need to stir it a bit more, use a spatula and do it gently by hand. Set batter aside.

. To make the cheesecake swirl, add the cream cheese and sugar to another large mixer bowl and beat until well combined and smooth.

. Add the egg and vanilla extract and mix until well combined.

0. Add about half of the pumpkin bread batter to the bottom of the loaf pan and spread evenly.

1. Spread the cheesecake filling evenly on top of the pumpkin bread batter.

2. Drop spoonfuls of the remaining pumpkin bread batter over the top of the cheesecake filling and gently spread together to form an even layer.

3. Bake for about 1 hour and 15 minutes, or until a toothpick inserted in the middle comes out clean. You can tent the bread after about 45 minutes to an hour, if needed, to keep it from browning too much on top.

4. Remove the loaf from the oven and allow to cool for about 20 minutes and then remove to a cooling rack to cool completely. The bread will rise as it bakes and then fall a bit as it cools.

5. When completely cooled, store pumpkin bread well wrapped or in an air tight container in the fridge. Bread is best for 3-4 days.

Better Than Starbuck's One-Bowl Pumpkin Bread

pepitas (pumpkin seeds)

Preheat oven to 350ºF (180ºC). Spray a 9x5-inch loaf pan (see the Café Tips above in the post for using other size pans) with baking spray. Set aside. Line a sheet pan with foil. Set aside.

Place eggs in a medium-large bowl and whisk together.

Add pumpkin and whisk until smooth. Add the oil, white and brown sugars and the vanilla. Mix until nice and smooth.

Sprinkle the pumpkin pie spice, cinnamon, baking soda, baking powder and salt over the pumpkin mixture and mix until well combined.

Add the flour and stir just until the flour has disappeared and no large lumps remain.

For the bread:

Combine pumpkin seeds (pepitas), honey and oil and stir to combine. To make mixing easier, you can pop the pepita mixture in the microwave for 10-15 seconds to thin out the honey. Set mixture aside.

For the topping:

Transfer batter to prepared pan. Smooth the top and scatter the pumpkin seed mixture over the top. Place on the prepared sheet pan and bake for 55-65 minutes. Check the bread after 40-45 minutes and if the top seems to be getting brown, pull the foil up around the sides of the pan and loosely over the top. Return to the oven and finish baking, until a toothpick inserted into the center of the loaf comes out clean or the internal temperature is 195-205˚F when checked with an instant thermometer.

For the smaller pans (see Café Tips above) you'll only need to bake for 25-30 minutes.

Cool for 20 minutes, then slide out of the pan and transfer to a cool rack. Cool completely before slicing (if you can wait!).

To bake:

Preheat oven to 325° F. Grease one 9” x 5” loaf pan with butter and dust with flour.

In a medium bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, cloves and ginger until combined. Set aside.

In large bowl of an electric mixer (or using a hand mixer), beat butter and sugar until just blended, about 30 seconds. Add egg and vanilla and beat well. Continue beating until very light and fluffy, about 3 minutes. Add pumpkin and mix until combined. The batter might look curdled at this point—that's okay.

With the mixer on low, beat in flour mixture until incorporated.

Pour batter into prepared pan and bake for 60 to 70 minutes, or until a toothpick inserted in center comes out clean. Let pumpkin bread cool in pan about 10 minutes before removing it onto a wire rack. Let cool to room temperature.

To make the glaze, melt butter in a saucepan along with syrup. Add salt and sugar and whisk until smooth. While warm, spoon glaze over pumpkin bread (the glaze will harden as it cools).

In large bowl, whisk to combine the pumpkin, granulated sugar and brown sugar. Beat in eggs, vegetable oil and vanilla extract. Slowly whisk in the flour mixture, until there are no lumps.

Pour batter into prepared loaf pan and smooth the top with a spatula. Bake for 50 to 55 minutes, until a toothpick inserted in the center comes out clean. Around the 30 minute mark, lightly cover the top of the bread with foil, to make sure the top does not overly brown.

Allow to cool for 10 minutes, then slice and serve warm, or allow to cool completely.
