Healthy Cornbread

whole wheat flour

cornmeal

baking powder

salt

low fat milk

lemon juice

honey

eggs

Preheat the oven to 338 degrees Fahrenheit or 170 degrees Celsius. Line an eight-inch square baking pan with wax paper. Set aside.

In a medium mixing bowl add the flour, cornmeal, baking powder and salt. Whisk together until combined. Set aside.

In a separate mixing bowl whisk together the milk, lemon juice, honey, eggs and oil. Whisk until well combined.

Pour the milk mixture into the flour mixture and stir until the batter is smooth with no lumps.

Fill the prepared cake tin with the cornbread batter.

Bake the cornbread for 10-15 minutes or until an inserted toothpick comes out clean.

Remove the cornbread from the oven and allow it to cool in the tin for five minutes before moving to a cooling rack.

Cut into sixteen equal pieces.

This vegan honey is made with just three ingredients and is incredibly easy to make. It also looks, feels, and tastes very similar to real honey!

How to Make 3-Ingredient Easy Vegan Honey

filtered apple juice, (100% pure)

organic cane sugar

Add all of the ingredients into a medium-sized saucepot, place it over high heat, and bring it up to a boil, constantly stirring to dissolve the sugar and prevent it from sticking to the bottom of the pot.

As SOON as it is at a steady boil, turn the heat down to medium/medium-high and cook it at a medium and steady boil for 35 minutes. If the liquid bubbles to the top of the pot and looks like it may boil over, turn the heat down ever so slightly.

Stir occasionally.

Then, remove it from the heat and allow it to cool down slightly at room temperature. Lastly, pour the vegan honey into a glass jar and place it in the refrigerator to cool completely. ***The vegan honey will look somewhat loose right now, but it will be much thicker once it is cold!

Store the vegan honey in the refrigerator.
