Lazy Girl Boxed Brownies: aka how to make boxed brownies better when you're feeling lazy but still want a delicious dessert.

Lazy Girl Boxed Brownies

boxed brownie mix,

instant coffee or espresso powder

vanilla extract

almonds

cocoa nibs

chocolate chips

finishing salt,

Preheat oven to 350°F. Grease and line an 8&#8243;x8&#8243; pan with parchment paper. Set aside.

Mix brownie batter according to package instructions. In addition to the water, oil, and egg amounts specified on the package, add in instant coffee/espresso powder and vanilla extract.

Pour batter into prepared pan, then top with roasted almonds and cocoa nibs.

Bake according to package instructions, making sure to use the knife test to check for done-ness. Allow to cool slightly while you melt your chocolate chips.

To melt the chocolate chips, place in a microwave-safe bowl and microwave in 15 second increments on 50% power. Stir chips in between each addition.

Once fully melted, drizzle over brownies and finish with sea salt.

I added Heath bar crunch to the mix! I was in a crunch. I grabbed the crumble bag, couldn't stop there, I added 2 tbl Kraft mayo and thought, I could have used sour cream, or coke a cola. Took the prepared mix and ran to supper with friends. 

Fresh baked with ice cream flavor of their choice and everyone totally happy happy. 
We scattered around the dining room and living room, 6 ft. Social distance, clean hands, no temps or sickness. Still family is family. Then I left, happy to see them.

So I replaced the water with coffee from one of those plunger coffee makers and I put two tblsp's of instant coffee. I also added a tblsp of sour cream and a splash of stout (I was having a Guinness at the time and I said what the heck... a splash cant hurt). The mixture was much much wetter and I was very worred the extra ingredients would make it cakey but it didn't.... they took an extra 10 maybe 12 mins extra- best to gauge this yourself with knif test. But they were intensly chocolatey and very fudgy (it hadnt risen much and pressed down on the top to condense it a bit and I could feel the firmness ????) I can't wait to try it with nuts and chocolate and maybe I'll have a bourbon next time I cook ???? (sorry for the big long message)

Well I tried doing the caramel with the brownies.......what a waste it came out to hard I guess I left it in the oven to long but I will try it again but can I get some mor recipes on brownies thanks in advance

My favorite trick for boxed brownies is to drop the oven temp to 300F and increase the bake time just slightly (5-ish mins). Keeps them moister and gives them a wonderfully crackly crunchy top.

People say the stupidest things.   Salt is not bitter and cannot add bitterness.  Chocolate is in fact bitter and that is why espresso in part heightens the taste of chocolate.    The chocolate nibs add so much flavor as well.  Another favorite brownie box hack is to add a Symphony bar after adding half the batter to the pan and then top the bar with the rest of the batter.  Nothing taste better.  It is especially good the next day when the chocolate gets a bit of its snap back which should be impossible because baking couldn't temper the chocolate bar but somehow it does get a snap the next day.    These are amazing as written but I admit I added black walnuts instead of almonds because that is what I had.
