If you&#039;ve never had a Beyond Burger, let me be the first to welcome you to your new favorite veggie burger! This recipe, with a southwestern twist, tastes just like a regular burger and packs even more flavor.

Beyond Burger Patties

Caramelized Poblanos and Onions (recipe below)

Brioche burger buns (toasted)

Avocados (sliced)

Pico de Gallo

Chipotle Mayo

Lettuce

poblano peppers (finely sliced)

Kosher salt

In a large skillet, heat the olive oil over medium high heat. Add the onion and poblano and sauté for 10-15 minutes until it starts to caramelize. Reduce the heat to medium and add a few tablespoons of water starting at the 15 minute mark and continue to caramelize for a total of 45 minutes until deeply brown but not burnt. Season with salt and set aside.

Cook the Beyond Burgers according to the package directions.

Place your toasted buns on a plate and add the lettuce leaves to the bottom of the bun. Top the lettuce leaf with the Beyond Burger. Top the burger with sliced avocado and caramelized onions and poblanos. Add some pico de gallo on top. Slather the top half of the bun with the chipotle mayo and top the burger with the bun. Serve immediately.

Vegan Beyond Burger Tacos

Beyond Meat

avocado oil

yellow onion, diced

garlic cloves,

vegetable stock

taco shells, hard

pico de gallo

Blend your taco seasoning by whisking together the spices until evenly combined.

To prepare your taco filling first place your skillet over medium-high heat. Add in the oil, and saute the minced onion and garlic for 3 minutes until they begin to brown. Add your beyond meat and cook for 4 minutes then mix in 2-3 tablespoons taco spice and continue to cook until meat is golden brown.

Add 1/2 cup vegetable stock and saute meat and spices for 1-2 minutes until the stock has been reduced by half.

To prepare your taco toppings, rinse the cilantro and roughly chop then set aside in a small bowl. Slice the lime into wedges and set aside as well.

Now you're ready to plate your tacos or package it up to enjoy later on!

Air Fryer Beyond Burger Recipe

(2 patties) Beyond Burger, thawed

salt

burger buns, we use brioche ((gluten-free if needed))

mayo

cheddar slices ((vegan if needed, we like Chao))

red onion, sliced

Preheat your air fryer to 350ºF (180ºC).

Season the patties with salt and black pepper on both sides, rubbing gently.

Using a spatula, transfer them to the basket of your air fryer. Air fry for 8-9 minutes, flipping halfway through. You know they&#39;re ready when the inner temperature has reached 165 degrees F (74 C). The patties should be golden brown on the outside and pink on the outside.

Cook the patties

Cut your brioche buns in the middle. Spread mayo on the inner side of the top and bottom halves.

Layer lettuce, one beyond patty, cheddar, tomato slices, and red onion. Repeat with the second burger. Serve!
