Wash and pat dry each bhindi with a paper towel and then chop it into rounds (remove the head and little bit from the tail before chopping). Set aside. Heat 1 tablespoon oil in a pan on medium heat. Once the oil is hot, add the chopped bhindi to the pan. Let is cook on medium heat for 10 mins, then lower the heat to low and cook 5 more minutes. Stir often.The bhindi is mostly cooked by now&nbsp; (after 15 mins) and there should be very little sliminess left. Remove pan from heat.

To another pan (or use the same pan after transferring bhindi to a bowl), now add the remaining 1.5 tablespoons oil on medium heat. Once the oil is hot, add cumin seeds and let them sizzle for few seconds.

Add chopped onion and saute for 2 to 3 minutes until soft. Then add the ginger and green chili and cook for 1 more minute.

Add chopped tomatoes and cook for around 4 minutes until soft and mushy.

Then add the spices - coriander powder, turmeric, amchur, red chili powder and salt. Mix the spices well with the masala.I added a tablespoon of water at this point so that the spices do not burn. Stir well.

Add the cooked bhindi to the pan and mix well.&nbsp;Set heat to low-medium and cook for 5 minutes without covering the pan.

Sprinkle with garam masala. Garnish with ginger julienne if needed. Serve bhindi masala with rotis/paratha/rice.

Bhindi Masala is a North Indian curried dish made with tender okra pods, piquant onions, tangy tomatoes, bold spices and herbs.

Ginger-Garlic Paste (or 1 inch ginger and 3 to

tomatoes (2 medium-sized tomatoes)

coriander powder ((ground coriander))

½ teaspoon kashmiri red chili powder

fennel powder ((ground fennel - optional)

½ teaspoon Garam Masala Powder

amchur powder ((dry mango powder) or add as required)

salt (as required)

Rinse the bhindi (okra) well in water for a couple of times.

Dry them on a large plate on their own or wipe with a kitchen towel. Make sure there is no moisture or water on the okra pods.

Remove the base and stalk while chopping them. Chop into 1 or 1.5 inch pieces.

Also chop onions and tomatoes. Keep aside.&nbsp;

Make a paste of ginger and garlic in mortar-pestle and keep aside.

Preparation

Heat 2 tbsp oil in a kadai (wok) or pan.

Add the chopped bhindi and sauté stirring often till they are completely cooked. You will have to keep an eye on them and stir in between many times.

Taste the sautéed okra and if the crunchiness is not there and the bhindi have become soft, it means they are cooked. Keep the sautéed bhindi aside.

Sautéing bhindi

All the oil will be used up. So add 1 tbsp oil to the same pan.

Add chopped onions and saute stirring often till they become translucent.

Add the ginger-garlic paste and saute for a few seconds or till the raw aroma of the ginger-garlic disappears.

Add the chopped tomatoes and saute stirring often till the tomatoes become soft and mushy.

If the tomato mixture becomes too dry and starts sticking to the pan, then add about ¼ cup water. Mix well and continue to cook.

All the above cooking is done in a open pan and you don't need to cover the pan with the lid.

Add all the dry ground spice powders one by one.

Mix well and saute for a few seconds.&nbsp;

Sautéing onions, tomatoes, spices

Add the sautéed bhindi, crushed kasuri methi, salt and mix so that the onion-tomato masala coats the okra well.

Cook for about 2 minutes. Stir in between.&nbsp;

Then switch off the flame and add chopped coriander leaves. Mix again.

Serve bhindi masala hot or warm garnished with a few coriander leaves and accompanied with chapati, roti or naan. It can also be packed for lunch box. It also makes for a nice side dish with any North Indian meal.

Bhindi masala is a delicious dish made of okra, onions, tomatoes &amp; spices. It is not only easy to make but is super tasty. Serve bhindi masala with roti, plain paratha or plain rice.

cumin seeds ((jeera))

onions ((2 medium) (finely chopped or processed))

green chilli slit ((optional))

ginger garlic (paste

tomatoes ((2 medium) (deseeded & chopped or pureed))

salt ((adjust

turmeric (or haldi)

red chili powder

garam masala

coriander powder ((optional))

½ teaspoon kasuri methi ((dried fenugreek leaves) (optional))

water

coriander leaves (or cilantro (optional))

Rinse bhindi very well under running water &amp; drain them.

Wipe off with a clean kitchen cloth or tissues to remove all the moisture. You can also leave on the counter top for a while to air dry. Any moisture on the bhindi will make them slimy while cooking so wipe dry them completely.

Chop off both the ends and discard them. Chop the bhindi to ¾ inch pieces. 

Heat 1½ tablespoons oil in a pan. 

Saute bhindi on a medium flame for about 5 to 7 mins stirring often until they are partially cooked. At this stage they should be no more sticky &amp; slimy after sauteing.

Transfer them to a plate and set aside.

Add 1½ to 2 tablespoons more oil to the same pan. Then add cumin seeds. 

When they begin to splutter, saute onions and green chili until they turn golden.

Next saute ginger garlic for 2 mins till the raw smell of the garlic goes away. 

Then saute tomatoes with salt until they turn soft and mushy.

Stir in red chili powder, turmeric, garam masala &amp; coriander powder. Saute until the mixture leaves the sides of the pan.

Pour 6 tablespoons (little less than half cup) water &amp; mix well. Cook the masala until it turns thick. This brings out the flavors of spices. (check video for consistency)

Taste test and add more salt if needed. Stir in the kasuri methi &amp; bhindi.

Cover and cook on a low heat until bhindi turns slightly tender and the aroma comes out.&nbsp;

Open the lid and evaporate any excess moisture.

&nbsp;Serve bhindi masala with roti or rice.

Wash okra and pat dry. Leave on a kitchen towel for a few hours to ensure that it&#39;s completely dry.

When okra gets dry, chop off the head and pointed tip and then cut them into medium size pieces.

Heat oil in a cooking pot and add cumin seeds.

When the cumin seeds start spluttering, add sliced onion and cook until it starts turning brown.

Add turmeric powder, red chili powder, and coriander powder. Saute for a few seconds.

Add chopped tomatoes and green chilies. Cook for 4-5 minutes on medium flame or until the tomatoes turn mushy and are nicely cooked.

Next, add chopped okra. Cook on a medium flame for around 15 minutes or until okra gets nicely cooked and becomes slime free. Gently stir occasionally after every 5-6 minutes to avoid burning.

Once okra is cooked, add salt and mix. Cook for another minute.

Finally, add garam masala. Mix and switch off the stove.

Sheet Pan Bhindi Masala Indian Okra

Okra (about 1 lb)

Preheat oven on Broil setting.

Move a shelf to two notches down from the top of the oven so it’s not too terribly close to the broiler.

Prepare a heavy-duty baking sheet by lining with foil or parchment paper.

Slice the okra into 1/4 inch chunks and place in a bowl.

Add the rough chopped onion into the bowl.

Pour over the oil and all the spices (Everything except tomatoes and cilantro).

Spread out the spiced vegetables across the baking tray, ensuring as even and flat a layer as possible.

Broil for 15 minutes, stirring once halfway. Don’t panic if you see some stickiness to the okra. This will dissipate once it cooks.

As the okra and onions are almost cooked, clear away a space in the middle, and place tomatoes in this space to broil along with the okra and onions.

Once the tomato has wilted and is cooked through, remove the pan from the oven, pour lemon juice, and mix everything together well.

Plate and garnish with cilantro.

Serve with naan, chappatis, or eat plain. I often eat this hot one day, and with yogurt the next day as a cold salad.
