Comforting, flavorful vegan quesadillas with smoky spices, “cheddar cheese,” and black beans! A satisfying, plant-based meal with just 9 ingredients and 30 minutes required!

Vegan Quesadillas with Smoky Black Beans

Tbsp olive oil ((or sub avocado oil))

tsp sea salt

tsp cumin

chili powder

Tbsp finely chopped pickled jalapeños ((optional))

black beans,

Easy Vegan Cheddar Cheese ((or sub store-bought vegan shredded cheese))

(8-inch) flour tortillas ((or sub 8 corn tortillas))

Magic Green Sauce

Heat oil in a large rimmed skillet over medium heat. Once hot, add onion and sauté until softened and translucent, about 3 minutes. Add bell pepper and continue to cook until slightly softened and brightened in color, about 5 minutes. Add salt, cumin, chili powder, jalapenos (optional), and black beans, and mix to evenly distribute.

Add the lesser amount of cheese to the bean/vegetable mixture and stir to combine. Taste and adjust, adding more cumin for smokiness, chili powder or jalapeños for spiciness, or vegan cheese for cheesiness! Turn off the heat and set aside.

Heat a cast iron or non-stick skillet over medium heat and place a tortilla in the pan. After ~1 minute the tortilla should be warm and pliable. Spread ~1/4 of the quesadilla filling over half of the tortilla then fold the tortilla over to enclose the filling. Let the quesadilla cook until golden and slightly crispy on the underside, about 2 minutes. Flip and cook until the second side is also golden and crispy.

Transfer quesadilla to a plate, and repeat the process with the remaining tortillas and filling. Slice into triangles and serve! Delicious with guacamole, salsa, and/or magic green sauce.

Leftover filling will keep in the refrigerator for 3-4 days and cooked quesadillas for 1-2 days. Both the filling and quesadillas are freezer friendly. Reheat in a skillet until warmed.

Black Bean Quesadilla

onion (finely chopped, about 1/2 an onion)

bell peppers

corn (frozen

black beans (15 oz can,

cilantro (chopped)

Mexican Chili Powder

shredded cheese

Prep: Chop onions and peppers. Rinse and drain cilantro and roughly chop it. Drain and rinse canned black beans.

Heat a nonstick pan on medium-high heat. Add 2 tablespoons olive oil. Add black beans, onions, peppers, and corn, and saute for 2 minutes. If adding jalapeños, add in this step and saute along.

Add chili powder, paprika, coriander, cumin and salt and saute for another 1 minute. Turn off the heat.

Stir in cilantro and remove the filling in a bowl. Using tongs and a wet kitchen towel, carefully wipe the hot pan clean.

Prepare the Filling

Spread about ¼ cup of shredded cheese on one-half of a tortilla. Adjust the quantity of cheese based on your liking.

Using a spoon, spread about ¼ cup of the bean and corn filling on top of that.

Top that with another ¼ cup of shredded cheese (adjust to taste). Fold over the plain half of tortilla, to make a half moon.

Assemble Quesadillas

Heat the nonstick pan on medium-high heat. Add 1-2 teaspoons of olive oil.

Place two quesadillas in the pan and brush some olive oil on top. Cook for about a minute on this side, or until golden crisp.

Using tongs or a spatula, flip the tortillas over. Cook for another minute or so, until it reaches the desired crispness.

Cook the Quesadillas in a NonStick Pan

Set the temperature to 370F. Lightly grease the quesadillas with cooking spray or brush some olive oil. Place greased side down. Cook for 4-5 minutes.

This time may vary depending on the intensity of your air fryer, and how crisp you like your quesadillas. If you like them medium crisp, check at 3 mins.

Note: Insert a couple of toothpicks in the quesadillas to prevent the tortilla from flipping open. Alternatively, you can place an oven-safe trivet on top.

Pull out the basket. Grease the quesadillas on top. Using tongs flip them and set another 4-5 minutes (or less), depending on how crisp you like them.

I have an XL size Air Fryer so I can make 2 quesadillas at a time. Repeat this process based on your air fryer size.

Cook the Quesadillas in Air Fryer

Place the baking sheet in the oven and preheat the oven to 400F for 8 mins. By pre-heating the baking sheet, quesadillas crisp evenly.

Bake for 8 mins, or until you reach your desired crispness.

Cook the Quesadillas in Oven (Great for Parties)

Remove quesadillas and rest on a cutting board for 1-2 minutes. Cut in 3 slices or 2 based on your preference.  Serve with your favorite condiment, like Guacamole, tomato salsa, sour cream or Sriracha.

6 whole-wheat tortillas
3 cups shredded cheese

Black bean Quesadilla - 30 Minute One Pan Meal

These simple and healthy Black Bean Quesadillas are an easy dinner everyone loves. Flour tortillas filled with cheese, black beans, corn, onion, bell pepper and spices. 

Black Bean and Corn Quesadillas

olive oil

garlic (, minced)

onion (, chopped)

bell pepper (any color, chopped)

can black beans

corn ((canned

salsa

brown sugar

cumin

shredded cheese ((monterrey jack, colby jack, or cheddar))

flour tortillas

sour cream (,

Add olive oil to a large skillet over medium high heat.&nbsp;

Add the onion and bell pepper and saute for 1-2 minutes.&nbsp;

Add garlic and saute for 30 seconds. Add black beans, corn, salsa, brown sugar, cumin and chili powder and stir to combine.&nbsp;

Reduce heat. Taste and adjust seasonings, if desired.

Heat another large skillet. Place one tortilla in the skillet. Add a sprinkle of cheese, followed by a heaping scoop of black bean and corn filling and spread into an even layer. 

Top with another sprinkle of cheese. Add a tortilla on top and cook until the bottom tortilla is golden. 

Use a large spatula to carefully flip the tortilla to the other side. Cook until cheese is melted and bottom tortilla is golden brown.&nbsp;

Serve with sour cream and salsa.

These are absolutely delicious!!! I must admit I used a combination of taco cheese and cheddar jack. I love them with salsa and sour cream on every bite. Great to keep the filling for quick and easy leftover meals. I’ve been eating them at some point in my day for the past 3 days and I’m not tired of them! Yummy!!

Very good recipe, for those using cheddar however I would advise mixing it with mozzarella as all cheddar produced a bit too sharp a flavour for me.
