No bake blackberry cheesecake is light, smooth, creamy, and delicious, with a buttery graham cracker crust, cheesecake layer, and blackberry mousse on top.

No Bake Blackberry Cheesecake

Graham-style cracker crumbs (about 10 oz.)

butter, melted (100 grams)

heavy cream

(8 oz.) blocks cream cheese,

icing sugar

lemon,

vanilla extract

(15 ml) packs gelatin powder, divided

water, divided

In a large bowl, stir together graham cracker crumbs and melted butter until well mixed. If you are using whole graham crackers, simply add the crackers into a food processor and process until fine crumbs form.

Press the crumb mixture firmly into a parchment lined 8-inch springform pan and freeze for at least 15 minutes, allowing the crust to set before filling.

Make the Crust:

In a large mixing bowl, add heavy cream and whip with a stand mixer or hand mixer until stiff peaks form, about 3-4 minutes. Set aside.

In a medium mixing bowl, use the mixer to combine cream cheese, sugar, lemon juice, lemon zest, and vanilla extract until evenly combined.

In a small mixing bowl, add 1/4 cup of water and 1 pack (15 ml) gelatin powder on top and let it sit for 3-4 minutes (or according to package instructions). Then, microwave on high for 15 seconds or warm up the jar in a hot water bath for 1 minute and stir well until gelatin is completely dissolved

Add the dissolved gelatin and half of the whipped cream to the cream cheese mixture and stir until well combined. Pour the filling into the cooled crust and smooth out the surface using a small icing spatula. Refrigerate for at least 1 hour to set or freeze for at least 15 minutes.

Make the Cheesecake Filling:

Add 1 cup blackberries in a blender and blend until smooth, about 1 minute. If you prefer a smoother filling, strain the blackberry puree through a mesh sieve and discard the seeds.

Dissolve the second pack of gelatin powder in the remaining 1/4 cup water (using the same method as above).

Add the dissolved gelatin and blackberry puree into the remaining whipped cream and mix with a hand mixer or spatula until evenly combined.

Pour the blackberry mousse filling over the cooled cheesecake filling and smooth out the surface using a small icing spatula. Refrigerate for at least 6-8 hours or overnight to set completely. The longer the better it will set.

Garnish with the remaining 1/2 cup blackberries on top and serve.

I like to nest the bowl in another bowl with ice water to help cool it quickly.

In a medium saucepan, add in the blackberries, sugar, lemon juice, and lemon zest. Cook over medium heat for about 20 minutes or until the blackberries are completely broken down.

Strain out the seeds in the blackberry sauce with a fine mesh strainer.

Place back in the saucepan over medium heat.

In a small bowl, add in the cornstarch and about 1/4 cup of the strained blackberry sauce. Whisk until combined and there are no lumps.

Add the cornstarch mixture into the saucepan with the rest of the blackberry sauce and whisk until combined.

Let the sauce come up to a boil while stirring constantly. Once the sauce comes up to a boil, let it boil for 1 minute to thicken the sauce. Remove from heat and let cool.

Blackberry Sauce

Preheat oven to 325 degrees. Spray the sides of a 9-inch springform pan with nonstick baking spray. Wrap the sides of the pan with a strip of parchment paper.

Mix the crushed Oreos, melted butter, and sugar until it resembles wet sand and can be packed down.

Press the crust evenly into the bottom of the prepared pan.

Place in the oven for 10 minutes. Remove from the oven and let cool while you work on the cheesecake filling.

Crust

Add the cream cheese to a large mixing bowl. Beat with a hand mixer on medium until the cream cheese is smooth. Scrape down the sides of the bowl.

Add in the sugar and beat on medium again until combined.

Add in the eggs one at a time and beat in each egg completely before adding the next. Scrape down the bowl after adding each egg.

Add in the sour cream, heavy cream, lemon, and lemon zest. Beat on medium until the mixture comes together. It will be runny.

Pour the batter on top of the crust in the prepared pan.

Pour the blackberry sauce evenly on the cheesecake. Using a skewer or knife, swirl the sauce into the cheesecake.

Wrap the springform pan with 2 layers of heavy-duty tin foil. Place the cheesecake into a slightly bigger pan and fill with one inch of water.

Place in the oven with a tented piece of tin foil over the top of the cheesecake to prevent browning on the top. Let the cheesecake bake for 1 hour 25 minutes or until done. To make sure the cheesecake is done, gently give it a wiggle. If it slightly jiggles in JUST the middle like jello, then it&#039;s done. If it jiggles all over, it needs to bake longer. Turn off the heat and crack the oven door slightly. Let it cool in the oven for 1 to 2 hours until it reaches room temperature and then place in the fridge to chill overnight.

Remove the cheesecake from the springform pan. Slice and serve.

Mini Blackberry Lavender Cheesecakes

oz (180 grams) blackberries, pureed and strained

tbsp (65 grams) sugar

(100 grams) graham cracker crumbs

tbsp (26 grams) sugar

tbsp (42 grams) butter, melted

oz (339 grams) cream cheese, room temperature

(104 grams) sugar

tbsp (12 grams) flour

(58 grams) sour cream

lavender extract

tsp vanilla extract

eggs, room temperature

Violet gel icing color, optional

(120 milliliters) heavy whipping cream, cold

tbsp (29 grams) powdered sugar

To make the blackberry topping, add the berries to a food processor and puree until smooth. You should end up with a little more than 1/2 cup of puree.

2. Combine the berry puree, sugar and cornstarch in a medium saucepan. Cook over medium-low heat, stirring consistently until mixture thickens and comes to a boil, about 5 minutes.

3. Allow to boil for 45 seconds to 1 minute, then remove from heat. Pour into another bowl and refrigerate and allow to cool completely.

4. Preheat oven to 325°F (162°C). Add cupcake liners to a cupcake pan and spray them with non-stick spray.

. Combine the graham cracker crumbs, sugar and melted butter until well combined. Divide the mixture between the cupcake liners (about 1 1/2 tablespoons per cup) and press into the bottoms.

Bake the cheesecakes for 18-20 minutes, then turn off the oven and leave the door closed for another 10 minutes.

Crack the oven door and allow cheesecakes to cool for 15-20 minutes, then put in the fridge to finish cooling.

Divide the blackberry filling between the cheesecakes, spooning the mixture onto the top.

To make the whipped cream, add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer. Whip on high speed until stiff peaks form.

No-Bake Mini Blackberry Cheesecakes

walnuts (or sub almonds, hazelnuts, pecans)

gluten-free oats (or regular oats)

Lightly grease a 12-cup muffin pan. Cut strips of parchment paper and lay them in the slots for easier removal, (*see photo above).

Put the walnuts, oats, and dates into a food processor or blender and process until it forms a coarse, slightly sticky mixture.

Divide the crust mixture into 12 equal pieces (about 25 g each) and press them into the muffin tins to cover the bottom, using your fingers, a glass, or a teaspoon.

Walnut Oat Crust

Put the cashews, coconut milk, agave syrup, lemon juice, and vanilla extract (if using) into a blender and blend until smooth and creamy. Pour ⅔ of the cream filling into the muffin cups until half full, leaving the rest to make the blackberry layer. Tap a few times to release any air bubbles, then pop it into the freezer for 20 minutes to set.

Cheesecake Filling

Add the blackberries to the remaining cream filling and blend together until smooth.

Pour it on top of the plain layer of each muffin, smoothing out evenly (the filling will slightly expand when frozen so be sure to not over-fill the tins). Freeze for at least 2 hours, until set.

Once frozen, remove by pulling on the parchment tabs or loosening them with a small knife to pop out.

Let thaw for 10 minutes before serving to soften or enjoy them completely frozen!

Instead of making mini cheesecakes I decided to make a bigger cake out of it. 
I never liked eating cheesecake (made out of dairy), but a plant based one is a complete game changer! 
The combination of fat rich coconut milk, vanilla aroma, lemon juice and, of course, cashew nuts gave an amazing balanced flavor and texture. 
These 3 layers eaten together make such a perfekt connection.

This week I made your raspberry white chocolate cake twice(!) and these wonderful little beauties for someone on a “no refined sugar” diet.
They had it all: easy to make, great taste and a pleasure for the eyes as well.
