Blackcurrant, vanilla and banana smoothies

Frozen blackcurrants (Main)

tsp Vanilla essence

½ Bananas, cut into chunks (Main)

Put all the ingredients in a blender and whiz until the blackcurrants stop rattling.

Scrape down the sides and whiz again. If it seems too thick, add a little more milk.

Blackcurrant Smoothie Shake

coconut yoghurt

coconut water

banana

almond meal

milliliters blackcurrant fruit syrup

tsp chia seeds

Blend

Place coconut yoghurt, coconut water, banana, almond meal and blackcurrant fruit syrup in a blender .Process for a couple of minutes until smooth.

Pouring Smoothie

Spoon 1 tsp of chia seeds each in four 250ml capacity glass bottles. Divide the blackcurrant shake equally between the four bottles by gently pouring on top of the chia seeds.

Shake

Secure the lid tightly and shake the bottle well to mix the drink evenly.

Chill

Chill in the fridge for 2 hours or overnight. Can be enjoyed chilled or at room temperature. Keep in a lidded glass bottle in the fridge for up to three days.

Blackcurrant Pancakes

self-raising flour

tsp baking powder

caster sugar

milk

blackcurrants

Vegetable oil

Icing sugar

Put the flour, baking powder, sugar, egg and milk into a jug and mix them together, then stir in the blackcurrants.

Cook

Heat 2 tsp oil in a frying pan over a medium-high heat. Place tablespoonfuls of the batter into the pan – you’re aiming for pancakes about 7cm in diameter. Don’t let the heat get too high, or the outsides will burn before the insides have had time to cook.

Flip

Once bubbles appear on the surface of the pancakes, flip them over to cook the other side.

Blackcurrant &amp; Lemon Cocktail

creme de cassis

vodka

lemon juice

200 ml soda water or club soda

Lemon

Fill a cocktail glass with ice and pour in the creme de cassis, vodka, and lemon juice.

Add lemon slices for garnish if you like. Stir before drinking.
