I am the dad and the chef for my family. I'm always looking up new recipes to try and keep things interesting.  I have never taken the time to go back and write a review for all of the delicious things I have cooked. But,  oh man! This was one of the best tasting things I've ever cooked!! 10 out of 10! The salsa was good, but the fish was fantastic by itself!

I made this last night I bumped the sugar down to 2 teaspoons instead and I did a teaspoon of chili powder also other then that I kept the recipe the same. I also added lemon to the salsa so the avocado doesn’t turn brown if we didn’t finish it all. The fish was so good. I’m making more today.

Delicious! Followed the recipe. Loved the hint of sweetness. Great avocado  salsa. Had a bunch of the salsa leftover (fish was all gone!) so added a can of drained/rinsed chickpeas for a bonus salad tomorrow.

Used just a pinch of sugar and was fairly happy with the result. Too salty for our taste (perhaps because no sugar to balance) but I’ll def make this again with less salt. Added some white onion to the pico - delish!

Take out the brown sugar completely. It was way too sweet and wasn’t a great flavor combo.

I should’ve read the comments on the sugar because it def ruined the entire fish for me. Way too sweet. Next time I’ll omit. Other than that, good recipe.

I didn't try the avocado part, but the tilapia was delicious. I didn't use brown sugar. I used a tad bit of honey, just a small drizzle on each piece of fish. It was delish!

Parmesan-Crusted Tilapia

Blackened Tilapia is a great way to have healthy baked tilapia that is bursting with taste and spicy goodness. With a great flavor profile, you can easily adjust or eliminate most of the heat.

Oven Baked Blackened Tilapia

Tilapia fillets (about four)

extra virgin olive oil

paprika (of your choice)

salt

onion powder

cayenne pepper (to taste)

thyme

mayonnaise

lemon juice

sweet pickle relish

Preheat oven to 425 degrees.

Combine 3 tablespoon paprika, 1 teaspoon salt, 1 tablespoon onion powder, one teaspoon black pepper, 1/4 to 1 teaspoon cayenne pepper, 1 teaspoon dry thyme, one teaspoon dry oregano, and 1/2 teaspoon garlic powder. The cayenne heat level will be 9/10 at 1 teaspoon, 7/10 at 1/2 teaspoon and 3-4/10 at 1/4 teaspoon.

This makes more seasoning than you need and save it tightly sealed for another cooking. You should only use 1/3 to 1/2 of this per pound of tilapia.

Line a sheet pan with foil and add 2 tablespoon olive oil. Brush it over the foil in an area that will have fish.

Rinse and pat dry 1 pound of tilapia. Brush with olive oil. Cover the fillets with the spices and rub it in (both sides). Use only about 1/3 - 1/2 of what you mixed. Save the rest for another cooking.

Place on the oiled pan and give a light spray of PAM. Place in the preheated oven.

If you want a homemade tartar sauce, combine 1/3 cup mayo, 2 teaspoon lemon juice, 1 teaspoon sweet pickle relish and 1/4 teaspoon onion powder. Mix well.

Cook until nicely brown and flaky. Internal temperature should be 145 degrees. This is about 10 minutes for big fillets and a minute or two less for small to medium fillets. Be sure to check the fish a few minutes before you think it should be done.

10-Minute Blackened Tilapia with Avocado Cucumber Salsa

Heat a large skillet (preferably cast iron) over high heat until screaming hot. You might want to turn your fan on or open a window for this one!

Meanwhile, pat the tilapia filets dry with a paper towel. Coat each in 1 tablespoon of the blackening seasoning, pressing it onto the fish so it sticks on every part of the surface.

Melt butter (4 tablespoons) in the skillet. Add the tilapia and cook for 2 minutes on each side, or until fish is fully cooked and flakes apart easily with a fork. If you need to cook it in two batches, use half the butter for each batch.

Meanwhile, mix the avocado, cucumber, parsley, lemon juice, and kosher salt to taste in a small bowl.

Serve blackened tilapia with the avocado cucumber salsa, with more lemon wedges (optional).

Combine all the slaw ingredients and refrigerate.

 Mix the dried spices and seasoning together in a small bowl, squeeze the lime on the fish then rub the seasoning onto fish.

Heat a cast iron skillet on grill or stove on high heat till really hot. Spray with nonstick oil spray.

Cook fish until opaque in the center and well browned on the outside, about 5 minutes on each side.

 Heat the corn tortillas on the grill until they slightly char, about 1 to 2 minutes.

Cut the fish into 8 pieces (or you can flake it if it's easier).

Divide the fish equally between 8 tortillas and top each with 1/2 cup slaw. Serve with lime wedges.

Combine the garlic powder, onion powder, paprika, Italian seasoning, Old Bay, and cayenne pepper (optional) and mix.

Lay the fish filets flat and sprinkle seasonings on the first side, lightly pat them in, and then sprinkle the remaining seasoning on the back side and pat in. This can sit in the refrigerator for up to an hour seasoned.

Heat a large cast iron skillet over high heat for 2-3 minutes, then reduce to medium high and add the butter.

Once the butter is melted and starting to brown, but not smoke, season the fish with salt and pepper to taste, then put it flat in the skillet. Do not crowd the skillet.  Cook the fish in batches if necessary.

Let the fish cook for 2-3 minutes on the first side without moving or checking it, then flip and cook 2-3 minutes on the other side, or until it reaches the desired doneness, or about 145˚F. Cooking time will vary depending on the size and thickness of your fish filets.

Remove the fish from the skillet (to prevent it from continuing to cook) and serve warm with fresh parsley or lemon juice if desired.

Blackened Fish Tacos with Creamy Cucumber Salad and Pickled Onion

cod (thaw and pat dry)

cayenne powder

jalapeno (diced small, remove seeds and veins)

lime juice (fresh squeezed)

avocado (peel, pit and cube)

Peel and thinly slice a medium-sized red onion. Place the slices in a colander over a sink. Boil a pot of water and pour the boiling water over the onion slices. This will help soften them. Next, combine warm water, white or rice vinegar, and sugar in a small, sealable container. Stir well. Add the sliced onions, cover, and refrigerate. They’ll need at least an hour before they are ready to enjoy.

Quick Pickle the Onions

Combine cored and diced English cucumber, diced jalapeno, fresh squeezed lime juice, salt, mayonnaise, and light sour cream in a mixing bowl. Refrigerate until ready to use.

Make the Cucumber Salad

Combine dried oregano, garlic powder, paprika, salt, black pepper, and cayenne powder to make the seasoning blend. Pat the fish dry with a paper towel. Drizzle with olive oil followed by the blackening spice. Rub the spice all over the fish, both sides. Heat a non-stick skillet over medium high heat and add about one tablespoon of olive oil. Once it’s hot, add the prepared fish to the pan. Cook for 2-3 minutes per side or until the fish is white and flaky. If it is opaque, it is not done. Thickness of the fish will greatly impact cooking times. Remove from the heat, set aside.

Make the Blackened Fish

Heat four tortillas of choice. Option to add cubed avocado. Next, break the fish apart and spread it out evenly among the tacos. Top with creamy cucumber salad, pickled onions, and garnishes of choice. Cilantro, lime wedges and scallions are all great additions. Enjoy!

Preheat the grill to 400-450°F. Use a paper towel to pat the Mahi Mahi fillets to remove any excess moisture. Then brush them with olive oil on all sides.

In a small bowl, combine the smoked paprika, onion powder, salt, pepper, sugar, garlic powder, dried thyme, dried or oregano, and cayenne pepper. Mix well. Sprinkle the blackened seasoning over the Mahi fillets on all sides. Gently rub to make sure the blackened seasoning sticks to the oil.

Once the grill is hot, place the Mahi steaks on the hot grates and grill for 4-5 minutes, until the fish releases easily from the grates. If it&#39;s sticking, it&#39;s most likely not quite ready to flip.

Flip the fish and continue to grill for another 3-4 minutes, for a total of 7-9 minutes cook time. Allow the fillets to rest for 2-3 minutes before serving.
