Blueberry Buckle is a deliciously tender lemon kissed cake studded with fresh blueberries and topped with a sweet buttery streusel topping. This old fashioned recipe is a favorite to serve with coffee, tea or for dessert.

Blueberry Buckle

white sugar

lemon zest

Preheat oven to 350°F. Grease an 8x8 pan.

In a large bowl, cream sugar, butter, egg &amp; lemon zest until fluffy.

In a separate bowl combine flour, baking powder, and salt. Add to sugar mixture, alternating with milk mixing just until combined.

Toss blueberries with 1 tablespoon flour. Fold into batter and spread in prepared pan.

Combine all topping ingredients in a small bowl until crumbly. Sprinkle over batter and bake 40-45 minutes or until a toothpick comes out clean.

Farmhouse Blueberry Coffee Cake

blueberries (well-drained)

butter (chilled)

Preheat oven to 375°F and lightly grease a 7 x 11 inch pan.

Mix thoroughly sugar, shortening and egg.

Stir in milk.

In a separate bowl sift together flour, baking powder and salt. Then gradually stir into the rest of the mixture.

Carefully fold in blueberries.

Pour mixture into baking dish.

Cake

Mix sugar, cinnamon and 1/3 cup of sifted flour together.

Cut chilled butter into slices over top of the dry mixture. Use a pastry cutter or fork to blend together until pieces of butter are no bigger than peans.

Sprinkle crumb mixture over top of batter and bake for 40 - 45 minutes until a cake tester comes out clean.

Streusel

And when it comes to baking, you can’t beat a buckle, an old-fashioned streusel-topped blueberry coffee cake.Although I may be a loyal cobbler fan, I think it’s high time Americans rediscover the art of the buckle. Both U.S. standard and metric measurements are listed, but for consistently delicious results, go metric. This recipe first appeared in Season 11 of Good Eats.

Combine the sugar, flour, and nutmeg in a small bowl then work in the butter, using a fork or pastry cutter to combine. Work until the mixture has a crumb-like texture. Set aside.

Heat the oven to 375ºF. Spray a 9-inch square glass baking dish with nonstick cooking spray and set aside.

Whisk the flour, baking powder, salt and ginger together in a medium bowl and set aside.

In a stand mixer fitted with a paddle attachment, beat together the butter and sugar on medium speed until light and fluffy, approximately 1 minute. Reduce the speed a bit and thoroughly incorporate the egg. Reduce speed to low and add one-third of the flour mixture. Once incorporated, add one-third of the milk then repeat alternating until all ingredients are combined.

Gently stir in the blueberries and pour the mixture into the prepared baking dish and sprinkle on the topping mixture.

Bake on the middle rack of the oven until golden, about 45 minutes. Cool for 30 minutes before serving.
