Nutty Blueberry Oatmeal Bars with a hint of coconut and citrus. They are moderately sweetened with maple syrup and make a delicious breakfast or nutritious snack anytime.

Blueberry Oatmeal Breakfast Bars (Vegan)

blueberries (fresh

coconut sugar (or light brown sugar)

corn starch/corn flour

lemon juice (plus zest of 1½ lemons)

rolled oats (porridge oats, gluten free if required)

almond flour/ground almonds

peanut butter

coconut oil (runny consistency)

maple syrup

flaxseed

Preheat oven.

Preheat the oven to 350 F/ 180 C/ gas mark 4. Lightly grease a 20-22 cm/8-8.5 inch pan and line with parchment paper. Set aside.

Pulse oats.

Pulse oats: Place the oats in a food processor and pulse until they have the consistency of instant oats.

Combine.

Combine ingredients: To the food processor add the almond flour, ground flaxseed, coconut oil, peanut butter and maple syrup. Pulse until all the ingredients are thoroughly incorporated and the mixture is sticky. Try not to overmix the ingredients.

Make base.

Make base: Press approx. ¾ of the oat mixture into the base of your pan (do this thoroughly).

Prepare blueberries.

Prepare blueberries: In a large bowl combine the blueberries with the lemon juice and zest, sugar and cornstarch and stir thoroughly.

Assemble.

Assemble: Spread the blueberry mixture over the oatmeal base.

Add topping. Bake.

Add topping and bake: Crumble the remaining oat mixture over the top, tuck into the blueberries a little by pressing gently and bake in the centre of the oven for 35-40 minutes or until lightly browned.

Cool.

Cool: Remove from the oven and set aside to cool completely before lifting out of the pan and cutting.

Blueberry Oatmeal Bars

old-fashioned rolled oats (gluten free if needed)

white whole wheat flour

brown sugar

cinnamon

salt

unsalted butter (melted (or substitute melted coconut oil to make vegan/dairy free))

blueberries* (about 10 ounces)

cornstarch

lemon juice (from about 1/2 small lemon)

sugar

vanilla extract

milk (any kind you like)

Place a rack in the center of your oven and heat to 375 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.

In a medium bowl, combine the oats, white whole wheat flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.

Scatter half of the blueberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.

Bake the bars for 30 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).

While the bars cool, prepare the glaze: in a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment paper handles, lift the bars from the pan. Drizzle with the glaze, slice, and serve.

To a medium bowl, add the oats, flour, sugar, melted butter, milk, vanilla, and salt. Stir well to combine into a uniform mixture. It will be thick and it should hold together easily when pressed between your fingers.

Set aside 1 cup of the batter to use as the topping.

Add the remaining batter mixture to the bottom of the prepared pan, pressing evenly to cover completely.

Evenly spread the blueberry jam over the batter. Then, sprinkle on the blueberries and lemon zest. Press the berries down very slightly.

Crumble the remaining dough mixture over the top to cover evenly and press it down slightly.

Bake for 35-40 minutes or until lightly browned. Remove pan from the oven and let cool on a wire rack until room temperature.

Use the parchment paper to lift the cooled bars out of the pan. Slice into bars carefully using a serrated knife.

We LOVE these bars. My husband says they taste just like pop tarts (trust me that’s high praise from them). My in laws tried them and loved them also. I use whatever jam I have on hand and 1/4 cup of sugar. Perfect every time!

Not just for toddlers! I make these for my family, but my kids are 6 and 8. My husband loves them too! Simple to make, and easy to customize (I usually use strawberry jam and frozen mixed berries because that's what I keep on hand). I also skip the lemon zest because I don't usually have lemons around. About to make another batch right now (second batch in three days!).
