Amazing peanut butter blueberry overnight oats that taste like a classic PB&amp;J. You’ll love these healthy, no sugar added overnight oats made with yogurt and chia seeds for an extra boost of protein! Make them ahead of time for a healthy meal-prep friendly breakfast.

Peanut Butter Blueberry Overnight Oats

vanilla

vanilla almond milk

chia seeds

rolled oats, gluten free if desired

For the layers/toppings:

low sugar blueberry jam (or your favorite jam)

peanut butter (or your favorite nut butter)

Add yogurt and almond milk to a medium bowl and stir until well combined and creamy. Stir in chia seeds, oats, and blueberries. Cover bowl and place in the fridge for at least three hours or overnight.

Once ready to assemble, grab two 12 ounce mason jars. Fill each jar halfway full with oat mixture, then add a tablespoon of blueberry jam followed by a tablespoon of peanut butter to each jar. Top with remaining oats, then cover and place in the fridge for later or enjoy immediately.

Once ready to serve you can top with a few extra blueberries if you’d like. Serves 2.

Blueberry Crumble Overnight Oats

old fashioned rolled oats (not instant)

Almond Breeze Almondmilk Unsweetened Vanilla

Tablespoons vanilla protein powder

blueberries (plus more for topping)

Tablespoons old fashioned oats

oat flour

Tablespoon coconut sugar (cane sugar works too)

½ Tablespoon coconut oil, melted

Tablespoon sliced almonds

cinnamon

Place all ingredients (besides those for the topping) in a container and stir until well combined. Seal with a lid and place in the fridge overnight.

Prepare the crumble topping by combining all ingredients in a small bowl. Set aside. (This can be done the night before as well.)

Bring out of the fridge in the morning and stir. You&#8217;ll notice that the protein powder, oats and chia seeds soak up a lot of the liquid so you may want to add a little more almond milk before serving. Portion overnight oats into two containers, top each with the crumble topping and a few extra blueberries. I also did a drizzle of almond butter! Enjoy.

Blend the blueberries. Add the blueberries to a high-speed blender. Pour in the plant-based milk, yogurt, maple syrup, lemon juice, and vanilla extract. Blend for 5-10 seconds or until smooth.

Transfer to jars. Finally, transfer the blueberry oats to individual jars and close with the lids. Note: This recipe makes 3 small portions or two larger ones. This is totally up to you.

Chill overnight. Once you have filled the jars, place them in the refrigerator and let them chill overnight or for a minimum of 6 hours. The following morning, all you have to do is add your favorite toppings and enjoy!
