This homemade syrup recipe is made with fresh or frozen blueberries and is a tasty topping to any pancake or waffle recipe!

Homemade Blueberry Syrup Recipe

Combine 2 Tablespoons water and cornstarch in a small dish and set aside.

In a medium saucepan, bring water, sugar or honey, and blueberries to a boil. Stir occasionally. Reduce heat and simmer for about 10 minutes. Add water+starch mixture and blend well. The sauce will thicken, the blueberries will have busted open and it begins to smell like pie.

Store in refrigerator up to two weeks. Take out a few minutes before serving at room temperature or warm.

First time I have ever made syrup or even used fresh berries.  I just recently moved to Washington state and berries are abundant!  My husband loves blueberries and this is going to be perfect for pancakes, biscuits, ice cream, etc. Thank you so much!!

The only question why keep in refrigerator for two weeks what the reason is because me and my mother just made some and I'm tempting to try already lol

I haven’t made this myself, but have eaten it and it’s amazing. Has anyone tried using half Stevia with the sugar? Does it taste just as wonderful?

Nice easy to make 1/2 C or less sugar would have been better  our blueberries were already quite sweet  Easy to switch away from cane sugar and gluten as well  i used potato starch and coconut sugar.

Blueberry Syrup Recipe

blueberries OR frozen blueberries

Sugar

Water

Lemon Juice (fresh)

salt

vanilla extract

In a non reactive pan, whisk together sugar and salt. Stir in the water and lemon juice.

boil

Turn the heat to medium high and stir in the blueberries, bring to a boil.

boil 2 minutes

Once boiling, cook for 2 minutes stirring constantly, scraping the bottom to prevent burning.

puree

Use an immersion blender or a food processor to puree the syrup for a smoother, thicker syrup.

simmer

Heat jars in simmering water until ready to use, do not boil.

wash

Wash lids in warm soapy water and set aside with bands.

ladle

Ladle hot syrup into a hot jar leaving a 1/4 inch headspace.

Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight.

place in water

Place jar in simmering water canner. Repeat until all jars are filled.

process

Bring water to a boil and process jars 15 minutes, adjusting for altitude.

remove

check seal

Check lids for seal, they should not flex when center is pressed.

label

Label and sore in a cool dry place and use within 18 months.

store

Once syrup is opened, store in the refrigerator.

Prepare the waterbath canner

Taste was great. I did add a tsp of clear gel and it came out just like store bought but better
