Place 8 ounces Blueberries and ¼ cup Granulated sugar into a saucepan over medium heat.

Cook over medium-low heat, stirring frequently until it boils, then continue stirring constantly until the mixture thickens. Remove from heat and cool completely.

Make the Crust

In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Spoon the mixture into individual jars and press down lightly with your fingers to form a firm crust layer.

Prepare the Cheesecake Filling

Beat together cream cheese and sugar until smooth and fluffy. Add lemon juice and lemon extract, mixing until fully combined and scraping the bowl sides as needed.

Whip the Cream
