Blueberry Greek Yogurt Popsicles are a healthy frozen treat recipe with delicious vanilla yogurt and juicy fresh blueberries. Kids love &#39;em!

Blueberry Greek Yogurt Popsicles

blueberries (fresh or frozen (defrosted))

honey

vanilla yogurt (divided)

In a small bowl, stir honey and blueberries together. Set aside.

In a blender combine blueberry mixture and 2 cups yogurt, blend until a smooth consistency is achieved.

Fill ice pop molds with 1½ cups vanilla yogurt.  Layer blueberry mixture on top.  Freeze 4-24 hours, until ice pops are frozen through.  I like to freeze mine for 24 hours.

Serve and enjoy!

Grab some sweet blueberries and Greek yogurt because you’re going to want to make these creamy blueberry popsicles. These two simple ingredients are the stars here, with a few little extras that make them extra creamy, extra yummy and the perfect frozen treat for hot summer days.

Blueberry Yogurt Popsicles

blueberries

cream (heavy cream, half-and-half or table cream)

lemon zest

full-fat Greek yogurt

Blend the blueberry mixture

Add the fresh blueberries, honey or maple syrup, cream and lemon zest to a blender.  Blend until smooth.

Add the yogurt

Add the Greek yogurt and give it a very quick blend on low speed, just until everything is combined (making sure not to over-blend!). You can also simply stir it through by hand. 

Fill the popsicle molds

Pour the blueberry yogurt mixture into your popsicle molds, leaving a little room at the top. This recipe makes 6 large popsicles in my favorite mold but the yield may vary depending on the size of your molds.

Freeze and enjoy

Freeze for at least 4-6 hours or until the popsicles are completely firm (preferably overnight!). When you’re ready to enjoy, run the mold under warm water for a few seconds and it should slide right out.
