An easy slow cooker recipe for a Carolina favorite made with tender stewed chicken and long grain rice. No precooking the chicken and no instant rice &#8211; everything cooks in the crock pot!

Packed with rich flavor, this appetizer recipe uses pecan wood to infuse the chicken and the dip with hearty smokiness.

Smoked Buffalo Chicken Dip

oz cream cheese

oz block Pepper Jack cheese (shredded)

oz block Colby Jack cheese (shredded)

blue cheese crumbles

buffalo sauce

ranch dressing

green onions, (greens sliced thin)

¼ tsp smoked paprika

brown sugar

¼ cup smoked paprika

tbsp coarse sea salt

tbsp black pepper

Light grill or smoker and set up for two zone cooking, establishing temperature at 225° F as indicated on a reliable leave-in thermometer.

While grill is preheating, season your chicken breasts evenly with rub. Once the grill has preheated, add a chunk of pecan wood to the coals and place the chicken over indirect heat. Let chicken smoke until internal temperature reaches 145° F, about 40 minutes.

While chicken is smoking, add cheeses to a large mixing bowl, reserving 1/2 cup of the shredded cheese.

Remove chicken from the grill and adjust the temperature of the grill to 300° F. Let the chicken cool and chop it into quarter-size pieces that are about 1/2-inch thick. Add the chicken to the mixing bowl and fold in one tablespoon of rub, then add the ranch and wing sauce and stir until thoroughly mixed.

Transfer the dip to a cast iron pan, and top it with remaining shredded cheese and smoked paprika. Place dip on grill over indirect heat for 30 minutes.

Remove dip from the grill, garnish with green onions, and serve hot.

1. Preheat the oven to 425° F. Line a baking sheet with parchment paper.2. In a food processor, combine the cornflakes, parmesan, paprika, onion powder, garlic powder, and a pinch of salt. Pulse until you have fine crumbs. Alternatively, you can crush the crumbs in a ziplock bag by stepping on them. Dump the crumbs into a shallow bowl.3. Beat the eggs in a bowl, add the hot sauce and chicken, and toss well to coat. 3. Dredge the chicken through the crumbs, covering fully. Place on the prepared baking sheet. For a thicker coating, dip the chicken back through the eggs, then through the crumbs a 2nd time. Place on the prepared baking sheet. Drizzle with olive oil. Bake for 20-25 minutes, until crisp all around. 4. Just before the chicken is done cooking, make the sauce. In a sauce pot, warm together the honey, hot sauce, cayenne, chili powder, onion powder, and garlic powder, plus a pinch of salt. 5. Drizzle the warm sauce over the chicken. Top with herbs. If the sauce thickens, warm for 5 seconds in the microwave. Enjoy!

- 1 1/2 pounds boneless skinless chicken breasts

In a small bowl, combine the salt, pepper, rosemary, oregano, thyme, cayenne, minced garlic, lemon juice, olive oil, and red wine vinegar.

Place the chicken breasts in a large zip top bag. Pour the prepared marinade on top, zip the bag and give it a good shake until the chicken is evenly coated. Allow the chicken to marinate for 10 minutes - 2 hours. I like to stick to a 30 minute marinade if possible.

Preheat an indoor or outdoor grill to medium high heat. Spray the grates with nonstick cooking spray if desired. Place the chicken breasts on the grill, discard any leftover marinade. Cook the chicken breasts for 5-6 minutes per side or until the internal temperature reaches 165ºF.

Serve immediately, garnish with chopped parsley if desired.

Heat oil in a saucepan or pot and add your onions and minced green chili

Saute on medium heat till the onions edges are a golden colour, 6-7 minutes

Add a splash of water and your crushed ginger and garlic, cook for a minute

Stir in your tomatoes, turn the heat up and cover to rapdily soften them to save time. After a minute or so open the lid and saute on medium high heat till the moisture is gone and the masala looks lovely and cooked (oil rises to the top).

Now stir in the chicken and spices and cook stirring frequently until the chicken changes colour.

Cover and cook on low heat until the chicken is cooked through (breaks easily), add a little water if necessary.

Tip: If this is a make ahead dish and you want to avoid any funky smells cook on low heat with a splash of water for about half an hour and then proceed to the next step.

When the chicken is done then take the pot off the heat and gently mix in your well whipped room temperature yogurt.

Now taste and adjust seasoning and consistency of the gravy with water. Bring to a boil to make the gravy cohesive.

Add your favourite things from the finishing touches section, cover with a lid and turn the heat off. So much YUM!
