Recipe for Spinach and Feta Cheese Borek - A classic Turkish Borek recipe made with stuffing phyllo sheets with spinach and feta.

Spinach and Feta Cheese Börek

Phyllo Dough

vegetable oil

skim milk

plain yogurt

salt

black pepper

(1 lbs.) fresh baby spinach, washed and dried

onion

olive oil

black pepper (optional)

sesame seeds (I used black and white)

feta cheese (crumbled)

Whisk olive oil, milk, 1egg, yogurt, salt and pepper in a bowl until combined.

Heat 1 tablespoon of olive oil in a large pan. Add the chopped onion and cook until fragrant, 3-5 minutes. Add the spinach, salt and pepper. Close it with a lid. Cook it, in medium heat, until the spinach loses most of its volume, around 5 minutes. Give it a stir and turn the heat off. Let it sit for 15 minutes.

When it cools down, using a mesh strainer, strain it from all of its juices. Place it in a bowl, add the feta cheese and stir it gently until combined.

Line a baking sheet (mine is 12X17) with parchment paper. Lightly spray it with vegetable oil.

Place 2 sheets of phyllo dough and brush it with 3 tablespoons of the milk mixture.

Repeat the same process one more time.

Place 1 sheet of phyllo dough and spread the spinach-feta cheese filling evenly leaving 1/2 inch space on the edges and corners.

Continue with placing 2 sheets of phyllo dough and brushing it with 3 tablespoons of the milk mixture TWICE.

Place the last phyllo dough on top and brush it with 2 tablespoons of the milk mixture.

Cover it with stretch film, place it in the fridge and let it rest at least 2 hours or overnight.

When ready to bake, heat the oven to 350 F. degrees.

Slice the borek evenly as desired. Brush it with 2 egg yolks and sprinkle each piece with black and white sesame seeds.

Transfer it into the oven and bake until it is golden brown, 30-35 minutes.

Serve immediately.

If you have ever been to Turkey you probably have eaten Turkish borek. This is my version of borek made with the ingredients we have available here in the US. While borek made with phyllo dough is not the same as borek made with "yufka", my version here as close to the real thing as possible.

Borek is one the most popular and basic dishes of Turkish cuisine. It's basically a layered savory pastry with several kind of filling options. It's made with yufka, a thicker wheat phyllo dough. There are lots of types of borek in Turkish cuisine. Some are different in texture, some in filling, some in method and some in shape. Su boregi, which means water borek is different in texture and method. To make su boregi, the yufkas are boiled before baked. So, it has a softer texture than most of the other types of boreks. The yufka of the su boregi is also a little bit thicker than normal yufka. So, in a way ir resembles to lasagna, not in terms of taste of course. But the appearance reminds it. So there is a fake borek recipe made with lasagna leaves in Turkey. Generally it tastes more like lasagna than borek. But in my recipe I do a few things to make it more like borek. The first thing I do is to rinse the lasagna leaves after cooking them. Because we just need the pulp, not the taste and smell of it. The second thing I do to suppress the taste and smell is to use plenty of ingredients for sauce and mortar. In this way, while eating it, doughy texture of the lasagna is felt but in the flavor the sauce and cheese is dominant. Yeah, of course, it's not 100% su boregi, but it's getting close. Enjoy the recipe ... Ingredients: 16 ready to use lasagna leaves, 400 g curd cheese, cottage cheese or crumbled white cheese, 1 handful of chopped parsley, 1 cup of milk, 2 tbsps butter, 1/4 cup oil 2 eggs. Preparation: Boil the water in a large saucepan, add the lasagna leaves and cook until tender (stir occasionally to prevent them to stick to each other), Melt the butter in a saucepan while the lasagna leaves cook, Take it from the stove, add milk and oil and stir, Add the eggs and beat them quickly, Combine the cheese and parsley together in a separate bowl, Strain the softened lasagna leaves, add warm water and stir and strain again, Place 4 sheets of lasagna into a 20 * 26 cm baking dish, Pour over some sauce, Spread one-third of cheese mortar, Spread 4 more lasagna leaves and spread the sauce over it, Spread half of the remaining cheese mortar, Place 4 sheets of lasagna and spread the sauce, Spread the remaining cheese, Place the remaining 4 lasagna leaves over the remaining sauce, Bake in a preheated oven at 180 C degrees until the desired amount of browning. Turkish Style Cooking

Melt the butter in a saucepan while the lasagna leaves cook,

Take it from the stove, add milk and oil and stir,

Combine the cheese and parsley together in a separate bowl,

Strain the softened lasagna leaves, add warm water and stir and strain again,

Place 4 sheets of lasagna into a 20 * 26 cm baking dish,

Spread 4 more lasagna leaves and spread the sauce over it,

Spread half of the remaining cheese mortar,

Place 4 sheets of lasagna and spread the sauce,

Place the remaining 4 lasagna leaves over the remaining sauce,

Bake in a preheated oven at 180 C degrees until the desired amount of browning.

First, know that yufka, like phyllo dough, is delicate and might break. That's completely okay.

To make the spinach filling: Heat olive oil in a pan over medium heat. Saute onion until golden, add spinach and cook until the spinach is wilted. Once the spinach is cool enough to handle, mix it with cheese, salt and pepper.

To make potato filling: Wash and peel the potato. Cut it into large chunks and boil until fork tender. Mash the potato completely and add Aleppo pepper, salt and black pepper.

To make the cheese filling: Mix cheese with parsley, salt and pepper.

Place a triangle shaped yufka dough on a clean surface, with the wide side facing you. Wet your finger with water and moisten the edges. This will help the edges to stick while rolling.

Add one to two tablespoon of filling one inch away from the wide edge and form it into a thin log.

Fold the outer corners over the filling and roll the borek. Dip your index finger in water and wet the edges again and roll tightly. Set aside and continue with the remaining yufka and filling. 

Heat 2 tablespoons vegetable oil in a non stick pan over medium heat. Once the oil is hot, place the boreks in the oil and fry on all sides until crispy and golden. Don't over crowd the pan. Place the boreks on a kitchen paper towel to absorb the excess oil. 

Continue with the remaining boreks and add more oil if needed.
