Lauki Ki Sabji is a simple and healthy curry prepared with Bottle Gourd (aka Lauki, Doodhi or Ghiya) and few spices.

Lauki Ki Sabji (Bottle Gourd Curry) - Instant Pot Pressure Cooker

lauki (bottle gourd) (peeled and chopped about 1/2 inch pieces (about 3.5 cups))

coconut oil

cumin (jeera) seeds

curry leaves

green chilies (finely chopped)

ginger (finely chopped)

onion (finely chopped)

tomatoes (finely chopped)

water

salt (to taste)

lime juice ((or 1/2 teaspoon of amchur powder))

cilantro (coriander leaves)

turmeric powder

red chilli powder

coriander powder

garam masala

Firstly, wash Bottle Gourd, peel the skin and cut it into ½ inch pieces.

Press SAUTE on Instant Pot. Add oil to the POT. Once hot, add cumin seeds, let them splutter.Then add minced ginger, green chili, and curry leaves. Saute for 30 secs.

Add chopped onions. Saute till it turns light brown in color.

Next, add tomatoes and cook for 2 more minutes till the tomatoes turn soft.

Then add all the dry spices like turmeric powder, red chili powder, coriander powder, garam masala powder, lauki pieces, water, salt, and mix well.Make sure to Deglaze the pot, scrape any spice that is sticking to the inner pot in order to avoid the BURN alert.

Close the Instant Pot with pressure valve to Sealing. Cook on High Pressure for 5 minutes.When the instant pot beeps, do a NATURAL PRESSURE RELEASE (NPR).

Remove lid away from you, squeeze lemon juice and garnish with coriander leaves and mix well. If there is any excess water, change the setting to saute mode and get it to your desired consistency.BURN ALERT? If your instant pot has shown BURN in the past, add an extra 2 tablespoons of water and deglaze the pot before pressure cooking.Lauki Ki Sabji is ready, serve with hot with chapatis, roti &amp; parathas.

Instant Pot Method:

Follow the same process mentioned above for Instant Pot. Give 1-2 whistles and let the pressure release naturally. All the other steps remain the same.

Stovetop Pressure Cooker Method:

Follow the same process mentioned above for Instant Pot. Cover Kadai with a lid and cook till lauki gets soft on medium flame. Do stir once or twice in between. Once lauki is cooked, add garam masala and garnish it with cilantro. All the other steps remain the same for Bottle gourd curry.

Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 5 MINUTES.

When done ,Do a QUICK RELEASE

Open the lid . Garnish with chopped cilantro...

Bottle Gourd Curry Recipe

Rinse bottle gourd under running water. Peel the skin and taste test the center a bit to make sure it is not bitter. Then chop to bite sized pieces. 

Preparation

Pour oil to a wide heavy bottomed pan. When the oil is hot, add cumin, mustard, urad dal and chana dal. 

Fry till the dal turns golden. Add curry leaves and chili. Fry till the leaves turn crisp.

Add the bottle gourd, salt and turmeric. Fry on a medium to high flame for 3 mins, keep stirring to avoid burning. 

Lower the heat. Cover the pan and cook till the gourd is cooked fully, but not mushy.

Meanwhile, dry roast chana dal, urad dal and red chilies until the lentils are aromatic and golden. Lower the heat and add sesame seeds, coconut and cumin. Roast until the seeds begin to splutter.

Cool and add to a grinder along with garlic cloves. Make a fine powder. Keep checking the gourd in between so you don&#39;t over cook.

When the bottle gourd is just cooked to your liking, sprinkle coconut and the spice powder as much as you want. Start with 1 tablespoon spice powder.

Stir fry the bottle gourd for 1 to 2 minutes. Taste test and add salt if required. Save the left over spice powder in a glass bottle for the next use.

Serve bottle gourd curry with roti or with rice and rasam or sambar.
