These oven-roasted cauliflower steaks with a gluten-free breading are a great side dish or entrée. This healthy recipe is fairly easy to make, low-carb, and vegan. Serve with a creamy cashew tahini dip.

Roasted Cauliflower Steaks

tbsp soy sauce ((gluten-free if needed))

tbsp balsamic vinegar

maple syrup

tsp cumin

tsp smoked paprika

Salt and pepper (to taste)

Trim the stem and remove the leaves from the cauliflower heads. Do not remove too much of the stem, otherwise, your &quot;steaks&quot; will fall apart.

With a large knife, cut the cauliflower lengthwise through the center into 1 1/2-inch (4 cm) thick pieces. Depending on the thickness of the stem you might end up with 2 or 3 &quot;steaks&quot;. Don&#x27;t throw away the little cauliflower pieces which aren&#x27;t connected to the stem, use them as well to make cauliflower &quot;wings&quot;.

Add some water with salt to a large pot and bring to a boil over high heat. Once the water boils, add the cauliflower, cover the pot and cook the cauliflower for 4-5 minutes to soften it a little. After 4-5 minutes, remove the cauliflower and set aside. You can also steam the cauliflower instead of cooking it.

In a small bowl mix together oil, soy sauce, balsamic vinegar, maple syrup, cumin, smoked paprika, salt, and pepper to taste.

Preheat oven to 410 degrees Fahrenheit (210 degrees Celsius) and line a large baking sheet with parchment paper.

Prepare the breading by simply mixing all ingredients (chickpea flour, nutritional yeast, paprika, smoked paprika, salt, and pepper) in a bowl with a whisk.

Place cauliflower steaks on the lined baking sheet. Brush with the marinade from all sides (see pictures above in the blog post).

Dip the cauliflower steaks in the breading and coat from all sides. Then spray with some cooking spray for a crispy breading.

Bake for about 25-30 minutes, or until golden brown, crispy and fork-tender. Flip cauliflower steaks after 15-20 minutes.

Transfer to a platter and serve with fresh herbs, lemon juice, and your favorite dip. I made a cashew tahini dip (check the notes below for the recipe). Enjoy!

Chicken Fried Steak

vegetable oil

buttermilk (see notes for substitutions)

eggs

corn starch

¾ cup half and half

Place saran wrap over each cube steak and use the rough end of a meat tenderizer to pound it thin, about ½ inch thick or so. This really makes a nice difference in the consistency of the meat even though cube steak has already been tenderized.

Pat the steaks completely dry. Combine the marinade ingredients in a large casserole dish.

Cover and marinate the steaks in the fridge for 1-2 hours, or overnight. (The longer the better.)

Combine breading ingredients. Generously coat each steak just before you fry it.

Add enough oil to cover the steak by 1/3 and heat it to 350° F. (Make sure it’s properly preheated or the breading will fall off.)

Cook the steaks in batches of 2, leaving room around each. Fry for about 3-4 minutes on each side, until golden brown. Use kitchen tongs to carefully check the bottom and flip.

Remove and transfer to a wire cooling rack and allow excess oil to drip out from the bottom. This keeps the bottom nice and crispy.

Once all the steaks are fried, keep them warm in a 200° F oven while you prepare the gravy.

Transfer the pan drippings into a small heat-proof bowl. Don’t clean the pan.

Allow the black flecks to fall to the bottom and skim 3 tablespoons of clean oil off the top. Set aside.

Melt the butter in the same pan over medium heat.

Whisk in the flour for 1 minute to cook off the raw flour taste.

Add the oil drippings and minced garlic. cook for 1 minute.

Add the seasonings, and then the chicken broth in splashes, stirring continuously.

Add milk and half and half in splashes, stirring continuously. Bring to a gentle boil, then reduce to a simmer.

Let it simmer and thicken until desired consistency is obtained.

Baked Garlic Parmesan Fish Sticks

1½ lbs Tilapia

Tbsp Shredded Parmesan Cheese

Almond Flour

1½ tsp Italian Seasoning/Dried Oregano

1½ tsp Garlic Powder

tsp Onion Powder

Salt

Pepper

tsp Olive Oil

Preheat the oven to 400°F and line a baking sheet with parchment paper (or foil greased with cooking spray/oil).

Slice fish fillets into even 1” thick strips and pat dry with paper towels.

In a large shallow bowl or plate stir together shredded parmesan, almond flour, Italian Seasoning, garlic powder, onion powder, salt and pepper.

Brush all sides of fish with melted olive oil, or use finger tips to smear.

Place fish sticks in parmesan coating and use hands to coat all sides. The parmesan will not stick much to the strips.

Transfer to prepared baking sheet, and repeat with all sticks.

Sprinkle on remaining shredded parmesan.

Bake for 12 minutes or until fish flakes when tested with a fork.
