Puff pastry breakfast in a cup! These easy breakfast cups are perfect for breakfast, brunch, or on the go. This is the best puff pastry breakfast recipe!

Puff Pastry Breakfast Cups

puff pastry

eggs

milk

bacon (cooked and crumbled)

shredded cheese

⅛ tsp pepper

Preheat oven to 400° and grease a muffin tin. Set aside. Thaw puff pastry sheet using instructions on box.

Cook the strips of bacon in a pan over medium heat until fully cooked and crispy. Remove from pan to a paper towel-lined plate. Once cool, crumble into bits.

Once the puff pastry sheet is thawed, unfold and roll it a few times with a rolling pin to flatten and spread it out just a bit. If you don't have a rolling pin, just skip that step. Cut the pastry puff dough into 9 equal squares (a pizza cutter makes this super easy). Place each puff pastry square into the muffin tin, gently pressing the dough into the bottom and stretching up the sides. Gently poke a few holes in the bottom with a fork, being careful not to go all the way through the dough.

Fill the cups with equal amounts of cheese and bacon.

In a large measuring cup or bowl, whisk together the eggs, milk, salt, and pepper. Pour this overtop the bacon and cheese inside the puff pastry. Fill them about halfway up at first and then go back around to top them off with whatever egg you have left.

Bake in the oven for 15-20 minutes, until golden brown and eggs no longer jiggle. Remove from the oven and allow the cups to cool for 5-10 minutes before removing. The easiest way to get them out of the pan is to gently run a butter knife around the outside of the egg cup and they should loosen up and pop out. Top with fresh parsley if you'd like and enjoy!

Breakfast tomatoes are a quick, simple, healthy breakfast/ brunch dish. Thick tomato rings are stuffed with a chickpea flour-based tomato filling and pan-fried until golden. This egg-free tomato omelette is gluten-free, dairy-free, vegan, and full of fiber and protein!

Breakfast Tomatoes

tomatoes

chickpea flour

yeast

tsp black salt (or salt)

onion powder

garlic powder

tsp smoked paprika

turmeric

Black pepper (to taste)

water ((see notes))

chives (chopped)

You can watch the video in the post for visual instructions.First, slice the tomatoes into even-sized rings (about ½-inch / 1-1½ cm thick) and, depending on their size, use a knife or glass to remove the middle of the tomato rings. Set the rings aside and dice the remaining inner flesh (core and seeds) into tiny pieces.

Transfer the finely diced tomato to a bowl with the chickpea flour, nutritional yeast, kala namak, and all the spices.

Pour the water into the bowl, a little at a time, whisking between each addition. Add the chives and stir once more. The juiciness from the tomatoes should help achieve the correct medium-thick batter. However, if it's too thick, add more water, one tablespoon at a time.

Add a swirl of oil to a large skillet and heat over medium heat. Once hot, add as many tomato rings as you can fit in a single layer.

Spoon the chickpea batter into the middle of each tomato ring and cook for several minutes (3-5), flipping halfway, until both sides are set and golden.

Repeat with more tomato rings until no batter is left, then sprinkle them with fresh chives and enjoy!

Preheat your oven to 375°F and generously grease a 12-cup muffin pan with cooking spray or butter.

Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Crumble it into small pieces and drain any excess grease.

Cook the bacon until crispy, then chop it finely.

In the same skillet, softly scramble the 4 eggs, keeping them slightly underdone. They will continue to cook in the oven.

In a large bowl, whisk together the pancake mix, milk, 2 eggs, melted butter, vanilla, and 2 tablespoon maple syrup until just combined. Be cautious not to overmix.

Spoon about 1 tablespoon of pancake batter into each muffin cup.

Add a layer of scrambled egg, sausage, bacon, and shredded cheddar on top of each.

Spoon more pancake batter over the filling until each muffin cup is about 3/4 full.

For visual appeal, sprinkle extra bacon, sausage, and cheddar on top.

Bake for 15–18 minutes until puffed, golden brown, and cooked through in the center.

Meanwhile, mix the melted butter, maple syrup, brown sugar, and cinnamon together for the topping.

Once baked, let the pancake bites cool for about 5 minutes before brushing or drizzling the warm maple butter generously over the tops.

Finish with extra crispy bacon, a sprinkle of cheddar, and green onions if desired.
