Beat the eggs in a mixing bowl.

Heat a skillet over medium high heat. Once heated, add some cooking oil. Reduce the heat to medium. Pour in the beaten eggs. When the egg starts cooking, break the egg into smaller pieces using a fork or chopsticks.

Add the rice when the egg is partly (70 – 80%) cooked and stir the rice evenly. Add the soy sauce and gently mix with the rest of ingredients. (Optional) Add some sesame oil, sesame sesame seeds and green onions then gently toss to coat.

Serve.

Savory Breakfast Fried Rice is a perfect anti-cheat breakfast when you need that classic greasy spoon satisfaction without the actual greasy spoon. This salty, smoky fried rice with eggs and bacon will fill you up, but won&#039;t weigh you down. Cooks up fast and easy with leftover rice for instant gratification.

Breakfast Fried Rice

Line a plate with paper towels. Set aside.

Add bacon to a cold 12” skillet or wok. Add the bacon to the skillet, then heat to medium heat. Cook the bacon, stirring occasionally, until the fat renders and the bacon is crisp, 10 minutes. Remove the bacon using a slotted spoon and transfer to the prepared plate to drain.

While the bacon cooks, crack the eggs into a bowl. Season with ¼ tsp kosher salt and ¼ tsp ground pepper. Lightly beat with a fork.

Drain all but 2 tablespoons of bacon fat from the skillet. Add the eggs, swirl to coat the bottom of the pan, then cook 1-2 minutes, until the edges are set. Using a rubber spatula, lightly scrape the edges towards the center to scramble the eggs. Allow to cook and set another 1-2 minutes, then scramble again. Repeat this process 1-2 times more, until the eggs are scrambled to your liking. Remove the eggs from the pan and set aside.

Increase the heat to medium high. Add the butter and heat until it melts then foams. Add the onion, toss to coat in the fat, and saute until translucent, 5-6 minutes. Add the garlic and cook, stirring constantly, until very fragrant, about 1 minute more.

Add the rice to the skillet and toss with the onions and garlic until well combined. Smooth the rice and onion mixture into an even layer and fry, undisturbed, for 4-5 minutes.

Pour the soy sauce over the rice, then loosen the rice from the bottom of the skillet with a wood spoon, stirring the soy sauce into the rice. Add the frozen vegetables and sesame oil. Work the vegetables into the rice, tossing frequently, until the vegetables are defrosted and warmed through and the rice appears dry.

Remove the skillet from heat. Stir in the bacon, scrambled eggs, and green onions. Serve immediately with additional soy sauce to taste.

This was just right for a quick Sunday brunch! In honor of St. Patrick’s Day I used Irish butter. ☘️Excellent made just as written. Next time I might add diced green peppers to the onions and garlic and a drizzle of hot chili oil for a wee kick. Highly recommend and thanks for sharing this!

Yes Please! Happy to be the first to comment on this yummy breakfast option. Just made this with my leftover long grain fancy basmati rice. I didn't use bacon so I started with the scramble (though 2Tbs of butter was too much) and then moved on to my onions and peppers and garlic. Toasted the rice as advised and would have let it go longer but the onions were starting to burn. Used 2 Tbs soy instead of 3 and then threw in my cubed up low sodium spam (no further veggies) before stirring the eggs back in off heat. The toasted sesame oil was great in this dish (1 tsp). Wish I had the green onions for on top, next time. Wil make again!

4-5 Tablespoons low-sodium soy sauce

sesame oil

Cook meats: Add Canadian bacon in a single layer to a large non-stick skillet or cast iron pan over medium heat. Cook undisturbed for 2 minutes. Stir and cook undisturbed for 1 minute. Remove to a large bowl. Add pork sausage to skillet and cook over medium heat, crumbling into small pieces as it cooks, until browned. Remove to bowl with Canadian bacon.

Sauté Veggies: (If there’s no grease left in the pan from the meat, add 1 Tablespoon oil or butter). Add veggies to the pan. Season with salt and pepper. Sauté over medium high heat for a few minutes until tender. Stir in garlic and cook 30 seconds. Remove to same bowl.

Scramble Eggs: Reduce heat to medium low. Add 2 Tablespoons of butter to the pan. Once melted, add eggs and cook until scrambled, stirring occasionally. Remove eggs to bowl.

Fry Rice: Add remaining 2 Tablespoons of butter to the pan and once melted, add rice. Spread rice into an even layer and cook over medium-high heat. Add green onion, soy sauce, sesame oil and toss to combine. Allow the rice to cook undisturbed, stirring every minute or so, to allow it to crisp a little.

Combine: Return everything in the bowl back to the pan and toss to combine. Taste and season with additional soy sauce, salt or pepper.

Preheat the Blackstone grill over medium low heat (approximately 350 degrees F). Set up a cooler zone on the grill by turning the burner to low on one section of the grill.

Add the bacon to the hot zone on the grill and cook for 7-10 minutes, flipping halfway through the cook time, until the fat renders and the bacon is crispy.  Move the bacon to the cooler side of the grill. Dice it into bite size pieces and clean the majority of the bacon grease off of the griddle. Leave a small amount of bacon grease on the grill to fry the eggs.

Crack the eggs directly onto the grill. Season them with salt and pepper.  Scramble the eggs on the grill and then push them over to the cooler side of the grill with the diced bacon.

Melt the butter on the grill and add in the minced garlic.  Allow for it to cook for 1 minute and stir in the cooked rice. Sauté the rice for 4-5 minutes until it starts to brown. Make sure that the rice is in an even layer on the grill so that it browns evenly.

Drizzle the soy sauce and sesame oil over the rice. Stir in the frozen vegetables.  Toss the rice with the vegetables frequently until the vegetables are defrosted and tender and the rice is coated in the sauce.

Gently stir in the chopped bacon and scrambled eggs.

Serve immediately topped with the green onions and enjoy!
