Best Skillet Breakfast Potatoes

Yukon gold potatoes

Dice

Peel and dice the potatoes into a 1/2&quot; dice.

Boil

Add the potatoes to a pot and cover with cold water. Bring to a boil and cook for 5 minutes, then drain.

Saute

Heat the oil in a large cast iron skillet over medium heat. Add the potatoes to the pan and try to get them on a single, flat layer. Cook without stirring for about 4-5 minutes, so that the bottom side browns.

Add the diced onion, garlic powder, and paprika, then stir. Saute for another 5-10 minutes, letting the potatoes cook on each side for a couple of minutes.

Season

Remove the potatoes from the heat. Season with salt and pepper, garnish with chopped parsley, and serve.

Preheat the oven to 425°F and line a baking sheet with parchment paper. Place the potatoes onto the sheet, drizzle with olive oil, and sprinkle generously with salt and pepper, the smoked paprika, and pinches of red pepper flakes. Toss to coat, spread evenly on the pan, and bake for 30 minutes or until golden brown and crisp around the edges. Stop here and serve as-is or mix with sautéed onions and peppers.

Make the onions &amp; peppers: Heat the oil in a medium skillet over medium heat. Add the onions, peppers, and garlic and sauté until soft and lightly browned, 5 to 8 minutes. Remove from the heat, stir in the potatoes and sprinkle with cilantro. Season to taste with salt and pepper and serve hot.

Cut the potatoes into chunks, there is no need to peel them.

Bring a pan of water to the boil and then add in the tablespoon of salt.

Add the potato chunks and bring the water back to a simmer. Simmer the potatoes for 10 minutes until just cooked through. Then drain well and set them aside to dry out a little. (see note 4)

Peel and chop the onion and garlic.

Place a large ovenproof skillet/frying pan over medium heat and pour in the oil.

Add the chopped onion and cook until it is starting to soften (3-4 minutes)

Add the chorizo sausage and use a spatula to break it up in the pan. Let it cook over medium heat until the sausage is cooked and starting to crisp in places.

Add in the paprika and stir together.

Use a slotted spoon to remove the chorizo and onions from the pan, leaving the oil behind.

Add the drained potatoes to the pan and stir well to coat them in the oil. Cook over medium high heat for 7-8 minutes until crusty and golden. (see note 3)

Add the chorizo and onion back into the pan and stir well. Season with salt and pepper and in the red pepper flakes (if using) and the garlic. Cook for a further minute until everything has come together.

Serve garnished with parsley.

Chorizo Hash - Skillet Chorizo Potatoes

Delicious crispy baked breakfast potatoes roasted to perfection in the oven with dried herbs, onions, garlic, and bell pepper.  These are so easy to make and even better than your favorite diner&#x27;s roasted potatoes.

Breakfast Potatoes ( Vegan )

onion (finely chopped)

garlic (finely chopped)

bell pepper (5.26 oz, finely chopped, red

tsp salt

thyme

tsp rosemary

cayenne

black pepper

Preheat the oven to 400F / 205 C.

Add all of the ingredients except oil to a baking dish. Drizzle with oil and mix everything well to coat evenly.

Bake for 25 to 35 minutes or until the potatoes are tender. Broil for a minute.
