I used ground pork breakfast sausage instead of bacon. It still came out fantastic. Everyone loved this breakfast dish.

Just finished this.  It was so good.  I left out green onion and added peppers and sausage.  Super Yummy.

I used half pound of bacon and more green onion than the directions suggested, but this recipe was an amazing hit with my family.

My family loved this. I used left over pulled pork from the night before and doubled the garlic (we love garlic!) and it came out great. I had a hard time getting the eggs just right-at 5 minutes for me, the white was still runny. But then at 8 minutes when the white was cooked, the yolk was too. Still tasted amazing and would definitely make again

Hearty Breakfast Skillet

Cook the hash browns

Heat the olive oil in a large oven-proof or cast iron skillet and add the hash browns, flipping occasionally until browned. At 6 minutes, add the chili powder, garlic powder, cumin, fennel seeds, and kosher salt. Cook another about 6 minutes until browned, continuing to flip so they don’t stick. 

Add the cheese and eggs

Reduce the heat to low. Add the green onions (reserving a handful for the garnish) and cheese and mix it in. Make divots for the eggs (all the way down to the bare pan) and add 1/4 tablespoon butter into each well. Crack 1 egg into each well, and top each with a pinch of kosher salt. Add a sprinkle of additional shredded cheese on top. 

Cook the eggs on the stovetop

Increase the heat to medium low and cook for 3 minutes on the stove. Meanwhile, preheat the broiler.

Finish in the broiler

Transfer the skillet to the broiler and cook for 3 to 4 minutes until the whites of the eggs are set.

Serve

Garnish with salsa, the reserved green onions, and fresh cilantro. Serve warm. 

The idea of this recipe is good. The actual recipe is not very well written for first timers. I wish it included how high to heat the oil to at the start. It would also be nice to see the steps further broken down - steps one and two are 3-4 different actions each. I struggled to get this to work for me - enameled cast iron resulted in a sticky glued down mess (maybe I didn’t wait to get hot enough, but the recipe gives no indication of how hot it should be). A nonstick skillet yielded better results, and I liked the final flavor profile. But the actual cooking process was very frustrating.

I just tried this and incorporated frozen veggies (stir fry mix) with the hash browns and it came out so good! 

Will definitely be making this again!

Breakfast Skillet Recipe

Preheat oven to 400° F. If baking bacon, you can add it now for about 15-20 minutes.

Bring 1 tablespoon of oil to medium heat in an oven safe cast iron skillet. Add peppers and onions and cook, tossing occasionally, until golden and tender, about 5 minutes. Add potatoes and all spices. Cook potatoes, tossing occasionally, until golden and starting to crisp, about 5-7 minutes. You may need to add an additional tablespoon of oil to really golden up.

Evenly arrange potatoes in the skillet and top with cheese and chopped bacon. Create 4 small impressions in the potatoes and carefully crack 4 eggs around the edges of the skillet, ensuring the yolks stay intact. Sometimes it helps to crack the eggs in a small prep bowl and carefully slide into the skillet.

Bake for 10 minutes or until egg whites are no longer clear. You want the egg yolks still runny! Sprinkle with fresh parsley and serve.

Thank you for this lovely recipe.  I made it this morning, for my family (Christmas morning, 2022).  I omitted the onions and added some onion powder, as my husband is not a fan of actual onions.  I used a red bell pepper, since that's what I had on hand.  It was AWESOME.  The bottom layer of potatoes made a wonderful crust (not burnt at all, just nice and toasty).  The eggs set up beautifully.  It was a huge hit.  This would also make a wonderful, quick, light dinner or lunch.  :)

This Easy Breakfast Skillet recipe is loaded with the good stuff including potatoes, eggs, bacon and sausage topped with shredded cheese. It&#039;s a quick, hearty breakfast all made in just one pan! 

Breakfast Skillet

bacon (, chopped)

breakfast sausage links*

onion (, diced)

red bell pepper (, diced)

garlic (, minced)

salt and pepper

¼ teaspoon smoked paprika

cheddar cheese (,

green onions (, chopped, for garnish)

salsa (, for serving)

Hot sauce (, for serving)

Add sausage links to a 12’’ skillet and cook over medium heat, stirring occasionally, until browned and cooked through. Remove to a paper towel lined plate. Add bacon to the pan and cook until crisp, stirring occasionally. Remove bacon to the plate, leaving 3-4 Tablespoons grease in the pan (add a little oil or butter if there&#39;s not enough grease).

Add potatoes to the pan in a single layer and season well with salt and pepper. Cook, flipping only occasionally, until crisp on all sides, and fork tender (around 8-10 minutes, or less if using frozen diced hash browns).  Push potatoes off to the side of the pan and add onion, bell pepper and garlic.  Sauté for about 3 more minutes.

Chop the sausage into bite sized pieces and add both sausage and bacon back to the pan. Sprinkle with smoked paprika.

Use a wooden spoon to make 6 wells in the pan to crack eggs in to. Crack the eggs into each well and sprinkle them with a little salt and pepper. Sprinkle shredded cheese evenly over everything.

Cover pan with a lid and cook over low heat for a few minutes until egg whites are set and cheese is melted. Garnish with green onion and serve with red or green salsa and hot sauce.

I used grated hash browns browned in avocado oil, chopped onions and red bell pepper, cut up sliced deli ham, sprinkle of mixed cheese on top, Himalayan salt, milled pepper, and extra large eggs.  I put a pat of butter in the egg wells before adding the eggs, covered and let the eggs cook. Very satisfying breakfast, lunch and dinner. I usually have one meal a day to practice intermittent fasting. Thanks for the recipe.😊

I am a self-confessed "breakfast guy".  I must admit I was getting bored with the usual breakfast fare, then along comes this delicious recipe from Lauren!  If you are having a get'er-done-day this will power you through the day I promise you that!  In an effort to eat healthier, I made the following changes to the recipe:
- Turkey sausage/bacon
- Avocado oil
- Mrs Dash Table Blend instead of salt
- Kept the skin on the russet potato
