Brie Grilled Cheese with Fig Jam & Apples

sourdough bread

brie cheese (sliced)

tbsp fig jam

apple (sliced)

tbsp butter

Take two slices of the bread and add sliced brie to both slices. Then top with some sliced apples and spoon over some of that fig jam too. Don&#x27;t be scared to add more or less of an ingredient. Make it to your liking.

Place the remaining two slices of bread over the top of both sandwiches and melt two tablespoons of butter in a pan over medium-low heat. Place the sandwiches in the pan and cover. Allow to cook until golden on the bottom side.

When the bottom is golden, add remaining butter and flip the grilled cheese. Cook with the lid on until golden on opposite side and the cheese has melted.

Heat a grill pan over medium low heat. Add the sandwich and grill until the bottom side is browned, about 3-4 minutes. Flip over, cover the pan with a lid or sheet pan, and grill another 3-4 minutes, or until cheese is melted and sandwich is browned. Serve immediately.

Apple and Brie Grilled Cheese with Hot Honey

Organic apples, thinly sliced

Brie,

Butter

tbsp

tbsp Salted butter,

tbsp Fireweed honey, or other mild honey

Mix butter, honey and chili flakes together. If your butter is not soft enough, microwave it in 10 second intervals until soft but not liquid.

Hot Honey Butter

Lay all 8 pieces of bread out and lightly butter top side of each. (You may not need all 3 tbsp if your butter is soft and easy to spread thinly.)

Lay 4 pieces of the bread, buttered side down in a large, heavy bottomed frying pan. Spread 1/2 tbsp honey butter on each slice in the pan, top each with 2 slices of brie, 1/2 thinly sliced apple fanned out and then top with remaining 1-2 slices of brie. Spread remaining honey butter on the unbuttered side of the leftover slices of bread and place honey side down on top of sandwiches.

Turn on frying pan to medium-low and cook apple sandwiches until golden brown on bottoms. Flip carefully and continue to cook until browned on second side. (Approx 5 minutes per side) Remove from pan and let cool 5 minutes before slicing in half and serving.

Serve alone or with a simple salad or light vegetable soup.

Apple Brie Grilled Cheese

This fall-inspired grilled cheese is packed with sweet and savory flavors, thanks to a combination of apple, brie and a spicy mustard sauce.

Apple Brie Grilled Cheese Sandwich

brie

Honeycrisp apple (thinly sliced)

spinach

unsalted butter

Slice brie into thin slices. I don&#39;t include the rind in the sandwiches.

Make the honey mustard sauce by whisking together spicy brown mustard, honey and hot sauce in a small bowl. Adjust honey and hot sauce to taste.

Spread a thin layer of mustard sauce on a slice of sourdough (feel free to spread it on both pieces of bread). Top with brie slices, apple slices, a handful of spinach and the remaining sourdough slice.

Heat a large skillet over medium heat. Add the butter. Once melted, add one grilled cheese sandwich. Cook on one side for 3-4 minutes, until golden and crisp. Flip and cook another 3-4 minutes. Decrease heat to medium-low if the sandwich is browning too quickly. Enjoy sandwiches immediately.

So tasty!  I made these to go with a pumpkin black bean soup I make and these were a great addition to the meal. Make sure you use a sturdy bread as the apples add a little moisture to the bread and Brie does not have much heft to it. Just thinking about this sandwich again has my mouth watering.
