Aubergine bhaji, or brinjal bhaji, is a classic Indian side dish that pairs the rich, creaminess of aubergines with classic spices like garam masala and cumin. This recipe will serve 2 as a main and 4 as a side.

Aubergine Bhaji

Cut the aubergines in half, brush oil on the skins. Lay with the flesh side down in an oven roasting tray.

Roast them in the oven for 30 minutes, until the insides soften.

Remove the aubergines from the oven and, once they're cool enough to handle, chop them into rough chunks – about 1 inch in size.

Heat a splash of oil in a frying pan over a medium-high heat, then add the onion until it starts to soften and turn translucent.

Add the garlic, spices and tomato purée and cook for a couple of minutes until fragrant.

Stir in the roasted aubergine and water, stir well, then reduce to a simmer. Cook for 10-15 minutes with the lid on, stirring occasionally.

Season to taste and stir in the coriander.

Serve up with naan bread or chapatis alongside your favourite curry!

Brinjal bhaji, also known as "aubergine bhaji", is a vegan aubergine recipe that is typically served as a starter or side dish as part of an Indian meal.

Brinjal Bhaji

aubergines/eggplants

milliliters (2 tbsp) vegetable oil

(½ tsp) cumin seeds

red chillies

onion,

milliliters (1 tsp) red chilli powder

chopped tomatoes

2.5cm (1 inch) piece of ginger, chopped

green chillies, chopped

tsp salt

(¼ tsp) garam masala

milliliters (1 tbsp) chopped fresh coriander

Cook the aubergine in the tandoor or alternatively, smear a little oil on the aubergine and roast it in a moderate oven for about 10-15 minutes. When the skin starts to wrinkle and soften, allow to cool, then peel off the skin and mash to a pulp.

Heat oil in a pan, add cumin seeds and red chillies and when they begin to crackle, add the garlic and sauté will golden brown.

Now add the onions and sauté until they too begin to turn brown.

Add the chilli powder and cumin powder and cook for half a minute.

Add the tomatoes and cook until they are mashed.

Add the ginger and green chillies and mix in the mashed aubergine pulp and stir well for two more minutes.

Add salt and fresh coriander and sprinkle the garam masala.

Mix well and turn the heat off after 30 seconds.

Serve with your peshwari naan or kashmiri naan. 

I don't cook with aubergine because I didn't know what to do with it, but I do now :)

Rubbed with garlic then brushed with lemon juice and olive oil. Grill until brown and perfect.

I stuff aubergine with minced lamb cooked with Ras-el-hanut in a tomato based sauce then top it with cheese and bake in the oven...it's yummy!

Simple, quick brinjal bhaji recipe made with aubergines, tomatoes, onions, and a handful of aromatic Indian spices. Create this classic Indian vegetable side dish at home in 30 minutes. Serve with plain naan, chapati or fluffy basmati rice.

Brinjal Bhaji (Aubergine Bhaji)

Aubergine (2 large aubergine about 200 gram each

Onion (Shallot or Brown onion, finely chopped)

Tomatoes (Large vine ripened tomatoes, cut small dices)

Garlic (Finely chopped/grated)

Dry chili (Dried red chilli, deseeded and cut small pieces)

3-4 Fresh chilli (Fresh green/red chillies

Coriander (Roughly chopped)

(Or salt

Water (Add more water if needed)

tsp Turmeric

Chilli powder

tsp Garam masala

Coriander powder

Cumin seeds

Bay leaves

Mustard seeds

Heat the large pan into medium heat, drizzle 1 tbsp of oil. Add aubergine dices, season with ½ tsp of salt, and saute for 2-3 minutes until brown. Then remove from heat and set it aside.

In the remaining pan, drizzle 2 tbsp of oil and heat the oil into medium heat. Add mustard seeds, cumin seeds, and bay leaves. Once they start to sizzle and pop, add chopped onions. Saute the onions until translucent, then add the chopped garlic and cook until the onions and garlic are slightly brown.

Then add the tomatoes and cook until the tomatoes are soft and colour changed. Add turmeric, chilli powder, garam masala, and coriander powder and quickly stir for few seconds.

Next, add the fried aubergine dices back in the pan, and pour the water in. Add ½ tsp of salt.

Bring it to simmer and reduce the heat to low. Close the lid and cook for 15-20 minutes or until the aubergine is tender and the curry sauce is thick. Stir occasionally and add more water if needed. Make a taste test and adjust salt to taste.

Once the aubergine is cooked, turn off the heat. Sprinkle freshly chopped coriander and chillies. Transfer to serving plate and serve with naan or rice.

large aubergines (or 10-12 baby aubergines)

garlic (peeled and crushed)

red chilli (de-seeded and sliced)

salt

tsp balsamic vinegar

Trim the ends from the aubergines and cut into lerge chunks 3-4cm.

Peel and slice the onion.  Trim and de-seed the pepper and cut into chunks.

Heat the oil in a large lidded frying pan or casserole dish.  Fry the aubergine, onion and pepper over a medium heat for 6-8 minutes, stirring frequently, until softened.

Add the garlic, chilli, garam masala, salt and sugar.  Stir well and cook for a further 2 minutes.

Add the tomato purée, water and balsamic vinegar.  Cover the pan with a lid and simmer for 10 minutes.  If the sauce is a little watery, remove the lid and simmer for a further 2-3 minutes until thick.

Taste and adjust seasoning as required.  Finely chop the coriander leaves and stir through the brinjal bhaji, then serve alongside curries and rice dishes.

Large Aubergines (600 grams) (diced)

tbsp Olive Oil (for Roasting Aubergines)

Salt and Pepper

Garlic Cloves (finely chopped)

tbsp Curry Powder (or garam masala)

tsp Cumin

½ tsp Turmeric

tbsp Tomato Puree

Chopped Tomatoes

tsp Soft Light Brown Sugar (optional)

Aubergine

Dice aubergine, place in a large bowl and drizzle with olive oil, stir through to coat.

Roast

Spread aubergine in a roasting tin and season with salt and pepper. Place in preheated oven (at 200 °C fan / 220 °C / 425°F / gas mark 7) for 15 minutes.

Onions

Meanwhile, heat oil in a pan over medium - low heat. Add onions, cook for 5 minutes until softened stirring often.

Separate the coriander leaves from the stalks, save the leaves for garnishing, and chop stems for cooking.

Once onions are soft and golden add coriander stalks, garlic and chilli stir fry for 2 minutes.

Spices

Stir in the spices, and fry for a few seconds.

Paste

Next add tomato puree and stir into a curry paste.

Tomatoes

Sweeten

Taste and add some sugar if you like a sweeter sauce.

Boil

Once cooked, add roasted aubergines to the sauce, stir and bring to a boil for a few seconds.

Simmer

Simmer for 10 minutes uncovered until the sauce has thickened.

Serve

Serve with coriander leaves sprinkled on top.

Preheat the air fryer for 4 minutes.

Toss diced aubergine with oil and turmeric, then place it on a baking tray.
