There's nothing quite like homemade cherry pie. Serve with a big scoop of vanilla ice cream.

Cherry pie

150 grams/5 ounces good-quality black cherry jam

100 milliliters/3½fl oz water

tbsp arrowroot,

red cherries, stalks and stones removed

250 grams/9 ounces plain flour,

175 grams/6 ounces fridge-cold unsalted butter,

tbsp caster sugar,

free-range egg, beaten

As much as I love making a proper churned ice cream from scratch, I also enjoy an easy way out. This recipe is a simple no-churn variety, rippled with tangy rhubarb, then sandwiched between two crisp, custardy biscuits.

Rhubarb and custard ice cream sandwiches 

200 grams/7 ounces rhubarb, cut into 2cm/1in pieces

grams/1½oz caster sugar

lime, juice only

tsp liquid glucose

rhubarb essence (optional)

milk

300 milliliters/10fl oz double cream

tsp vanilla extract

grams/2½oz unsalted butter, softened

75 grams/2½oz caster sugar

egg,

almond extract

grams/3½oz plain flour, sifted (plus extra for dusting)

75 grams/2½oz custard powder

Purists would insist Eton mess should only contain strawberries, but other British summer berries like raspberries, red and rose currants and even cherries have a touch more sharpness which pairs perfectly with the sweet meringue and rich cream. These homemade meringues are a doddle, but you can also buy them which turns this dessert into a 10-minute-pudding.

The Manchester tart is an easy custard and fruit tart adorned with toasty coconut. Fresh raspberries elevate it to a dinner party pudding.

Fragrant strawberries plus tangy homemade lemonade, topped up with sparkling water, make this strawberry lemonade a super refreshing summer drink.

450 grams/1lb ripe strawberries, plus extra to serve

litre/1¾ pints sparkling water

lemons, sliced

mint leaves

Smoothies are not as sweet as milkshakes and are a little healthier too.  If you like yours sweeter, just add more icing sugar. To enjoy this smoothie all year round try it with frozen berries. 

Summer fruit smoothie

just-ripe medium banana,

150 milliliters/¼ pint natural plain yoghurt

150 milliliters/¼ pint milk

tbsp icing sugar (optional)

Try this chilled strawberry smoothie as a healthy alternative to milkshake. Add a little sugar if you like, but if your strawberries are naturally sweet you won't need it.

For this recipe you will need a blender.

Strawberry lassi

400 grams/14 ounces ripe strawberries, hulled

240 milliliters/8½fl oz good-quality plain yoghurt

sugar,

ice cubes, to serve

It's super easy to whip up Mary Berry's classic Scottish cranachan. Hold back some of the crunchy oats and raspberries for a pretty topping, but don't hold back on the whisky!

The Hairy Bikers' pavlova recipe uses ripe summer strawberries, but you can try making it with stewed fruits in winter. Pavlova is a great make-ahead dessert that's gluten-free, too.
