This broccoli salad with bacon is dressed up with cranberries, sunflower kernels and a creamy homemade dressing. It is super easy to make and always a crowd pleaser. It’s the perfect recipe to bring to a BBQ!  

Broccoli Bacon Salad

broccoli florets (,

bacon (, cooked crisp, cooled and crumbled)

salted sunflower kernels

red onion (, finely chopped)

mayonnaise or plain Greek yogurt

lemon juice

Tablespoons honey

salt and black pepper (, to taste)

Combine the broccoli, bacon, sunflower kernels, dried cranberries and red onion in a large bowl. Set aside.

Whisk together the mayonnaise, lemon juice and honey in a small bowl. Season with salt and pepper, to taste. Pour evenly over the broccoli and stir until well coated.

Refrigerate the salad for at least 15 minutes to let the flavors marinate together. Toss well before serving.

Healthy Broccoli Salad Recipe

Slices Uncured Bacon

C. Broccoli Florets (about 2 heads of broccoli)

Purple Onion, chopped

- 1/2 C. Dried Cranberries

C. Unsalted Sunflower Seeds (raw or roasted)

- 1 C. Organic Shredded Cheddar Cheese

Mayonnaise

sugar

Tbsp Raw Apple Cider Vinegar

Cook bacon in a skillet or oven until browned.  Let cool.  Once cooled, crumble into small pieces.

Add broccoli florets, crumbled bacon, chopped onion, dried cranberries, sunflower seeds, and shredded cheese to a large salad bowl and toss ingredients until combined.

For the salad base:

Add all sauce ingredients to a small bowl and whisk until fully combined.

Pour sauce over broccoli salad and mix until fully combined.

For best results, cover salad and let marinate in the refrigerator for at least 3-4 hours or overnight.  The longer it marinates, the better!

Mix mayonnaise, sugar and vinegar in large bowl. Stir in broccoli and onion;
toss until coated. Cover and refrigerate 2 hours to blend flavors.
