Broccoli Cranberry Salad is the perfect side for a weeknight dinner or picnic dish. Loaded with broccoli, apples, cranberries and nuts, this salad is crisp, colorful, and nothing short of delicious!

Broccoli Cranberry Salad

broccoli

green onions (sliced (or 1/4 cup red onion))

cranberries

green apple (diced)

lemon juice

pecans (chopped, optional)

mayonnaise

sour cream

cider vinegar

sugar

poppy seeds

salt & pepper

Combine all dressing ingredients in a small bowl and mix well.

Chop the apple and toss with 2 teaspoons fresh lemon juice. Place in a bowl with all remaining ingredients in a large bowl. Toss with dressing until well mixed.

Refrigerate at least one hour before serving

This healthy winter Broccoli Cranberry Salad is full of crunchy raw broccoli, dried cranberries and pecans with Maple Pumpkin Seed Dressing!

cranberries (65 grams)

¼ red onion (finely sliced)

pecans (roughly chopped)

pumpkin seeds

olive oil

apple cider vinegar

maple syrup

Salt and pepper

Chop the raw broccoli into bite-sized florets. Finely slice the onion.

Add the broccoli, dried cranberries, sliced onions and pecans to a bowl and mix well.

For the salad

Heat a dry frying pan over a medium heat, then add the pumpkin seeds and toast them for a few minutes, shaking often until they just start to darken slightly.

Reserve half of the pumpkin seeds for the salad, and pour the remainder into a food processor or blender.

Add the rest of the dressing ingredients, plus 2 tablespoons of water, and blitz until fairly smooth.

For the dressing

Add reserved pumpkin seeds to the salad, pour the dressing over the salad and toss well to coat.

chill

Refrigerate for at least 30 minutes for the flavors to merge. Serve chilled. Store in the refrigerator for up to 3 days.
