Broccoli Salad

broccoli florets¹ (1 lb, this was about 2 1/2 heads of broccoli

sharp cheddar cheese (thicker, not finely shredded (115 grams))

cranberries ((85 grams))

bacon² ((60 grams))

salted sunflower seeds ((60 grams))

onion

mayo (I use olive oil mayo (175 grams))

sour cream³ ((70 grams))

Tablespoon white wine vinegar⁴

Tablespoons sugar ((40 grams))

salt

pepper

Combine broccoli florets, cheddar cheese, dried cranberries, bacon, sunflower seeds, and onion in a large bowl.

In a separate, small bowl, whisk together mayo, sour cream, vinegar, sugar, salt, and pepper until smooth and well-combined.

Pour dressing over broccoli combination and toss or stir well.

Broccoli salad may be served immediately, but for best flavor refrigerate for at least one hour before serving. Make sure to toss broccoli salad thoroughly again before serving.Keep refrigerated if not consuming right away.

raisins (I like jumbo raisins)

plain Greek yogurt

honey

apple cider vinegar

celery seed (not celery salt!)

In a large mixing bowl, combine broccoli, onion, bacon, and raisins.

In a small bowl or measuring cup, whisk together dressing ingredients: yogurt, honey, vinegar, pepper, salt, and celery seed. Taste and add salt and pepper to season as you like.

Pour dressing over broccoli and stir to combine until all broccoli is coated with dressing.

For best flavor, refrigerate for at least one hour and stir again before serving.

This Keto Broccoli Salad is a delicious, simple, and low carb dish that you can throw together in no time! Make your own keto-friendly dressing for a delicious and easy keto side dish.

Loaded Keto Broccoli Salad | Family Friendly Keto Salad

Bacon ((omit for vegetarian))

Broccoli Florets (raw,

Red Onion (diced)

Walnuts (chopped)

Shredded Cheddar Cheese

Sunflower Seeds

Sour Cream

Mayo

Apple Cider Vinegar

Splenda (or other sweetener)

Cook bacon until crisp and then crumble. Reserve aside 1 tablespoon of bacon fat and save the rest for another use.

In a small bowl, mix together sour cream, mayo, apple cider vinegar bacon fat, and Splenda.

In a large serving bowl, toss together the broccoli, cheese, onion, walnuts, bacon, and sunflower seeds.

Pour in the dressing and toss to mix. Allow the salad to rest for 10-15 minutes before serving.

Toss all the salad ingredients together in a bowl.

Pulse the dressing ingredients in a food processor until smooth. Pour over the salad ingredients and toss to combine.

Serve immediately! Add more orange juice to add more moisture as needed.

Clean Broccoli Salad

Slices Uncured Bacon

C. Broccoli Florets (about 2 heads of broccoli)

Purple Onion, chopped

- 1/2 C. Dried Cranberries

C. Unsalted Sunflower Seeds (raw or roasted)

- 1 C. Organic Shredded Cheddar Cheese

Mayonnaise

sugar

Tbsp Raw Apple Cider Vinegar

Cook bacon in a skillet or oven until browned.  Let cool.  Once cooled, crumble into small pieces.

Add broccoli florets, crumbled bacon, chopped onion, dried cranberries, sunflower seeds, and shredded cheese to a large salad bowl and toss ingredients until combined.

For the salad base:

Add all sauce ingredients to a small bowl and whisk until fully combined.

Pour sauce over broccoli salad and mix until fully combined.

For best results, cover salad and let marinate in the refrigerator for at least 3-4 hours or overnight.  The longer it marinates, the better!

Cook the bacon: Preheat oven to 400° F. Line a rimmed baking sheet with foil and fold the edges of the foil up a bit to contain the bacon grease. Lay bacon slices in a single layer on the foil. Bake in the oven for 12-20 minutes, until bacon is cooked how you like it. Transfer the cooked bacon to a paper-towel lined plate to absorb excess grease. Once cool, chop the bacon.

In a large bowl, combine the chopped broccoli, red onion, dried cranberries and sunflower seeds.
