How To Cook Perfect Brown Rice

natural brown rice (I used long grain)

water

Rinse the rice with cold water for 30 seconds.

Bring the water and salt to a boil over high heat in a large heavy pot with a tight fitting lid.

When the water is boiling add the rice, stir and partially cover (don't cover complete or it will spill over) and cook on medium-high heat for 30 minutes.

Shut the heat off. Drain the rice in strainer, then quickly return to the pot and cover tightly for 20 minutes so the steam finishes cooking the rice.

Uncover the rice and fluff with a fork.

Quick Mexican Brown Rice

brown rice (if frozen, heated)

olive oil

½ medium onion (finely diced)

plum tomatoes (small dice)

jalapeno (seeds and membrane removed, minced)

garlic

tomato paste

cumin

¼ teaspoon smoked paprika

cayenne pepper

salt

black pepper (to taste)

lime wedges (for serving)

chopped cilantro (optional)

Heat the cooked rice. Set aside.

Heat the oil in a large skillet&nbsp;over medium-high heat.&nbsp;&nbsp;When hot, add the onions, tomatoes and jalapeno and sauté until just tender,&nbsp;about 2-3 minutes.&nbsp;&nbsp;Add garlic and sauté&nbsp;for another minute.

Add the tomato paste, cumin, paprika, cayenne, salt and pepper.  Stir to evenly coat the vegetables.  Add the cooked rice, stir, and cook for 1 minute or until heated through. Serve with cilantro and lime wedges on the side.

Cabbage Soup with Rice

rice

celery ribs (, sliced)

bell peppers (, diced)

cabbage

chili powder

bay leaf

pouch ((1.5 ounces) Hunt's Recipe Ready Tomato Paste)

((14.5 ounces) Hunt's Diced Tomatoes, undrained)

vegetable broth

Prepare rice according to the directions on the package and set aside.

Heat 1 tablespoon olive oil over medium-high heat in a large soup pot or dutch oven.

Add onions and salt; cook for 1 minute.

Stir in garlic, carrots, celery, peppers, cabbage, and remaining olive oil.

Season with salt, pepper, oregano, and chili powder.

Add bay leaf and stir in tomato paste.

Cook for about 8 to 10 minutes, stirring occasionally, until vegetables are tender.

Stir in diced tomatoes; continue to cook for 2 more minutes.

Add vegetable broth and bring to a boil; reduce to medium heat and continue to cook for 10 minutes.

Remove from heat; take out the bay leaf and stir in previously prepared rice.*

Ladle soup into bowls and serve.

Rinse the rice

Using a strainer, rinse the rice under cold water, then drain it completely. (Here’s why.)

Boil the rice using the “Pasta Method”

In a saucepan over high heat, bring the water to a boil. Add the rice and stir. Continue to boil uncovered until tender, with the water bubbling rapidly, for 20 minutes. Start tasting at 18 to 20 minutes: if the rice is tender, remove the heat. If not, keep cooking 5 to 10 minutes more until the rice is tender. (All rice types and brands are slightly different, so you’ll have to adjust according to the specific rice. Ours is usually done in around 18 to 25 minutes.)

Steam the rice

Pour the rice into a strainer, then return it to the pot. Cover the pot and allow the rice to steam for 5 minutes. Uncover and fluff the rice with a fork. Stir in the salt.
