A FROM-SCRATCH, BOLD AND FLAVORFUL JAMAICAN BROWN STEW CHICKEN MADE WITH FRESH INGREDIENTS AND HOMEMADE BROWNING SAUCE

Jamaican Brown Stew Chicken

3½ lbs chicken pieces (bone-in (washed and dried) *see note*)

coconut palm sugar

water

seasoning salt (optional)

vegetable bouillon ((I used the Better Than Bouillon brand))

olive oil (for coating chicken)

salt

black pepper

garlic powder

dark brown sugar (packed)

smoked paprika

browning sauce

garlic (chopped, divided)

white onion (chopped, divided)

green bell pepper (chopped, divided)

red bell pepper (chopped, divided)

yellow bell pepper (chopped, divided)

scotch bonnet pepper (sliced

pimento (sliced in half (optional))

ginger (grated (can add more if desired))

thyme

butter

chicken stock

ketchup

rosemary (chopped)

salt garlic

TO MAKE BROWNING:

Add coconut palm sugar to a saucepan over medium heat.

Stir until the sugar begins to melt and has the texture of melted chocolate.

Continue to cook, stirring, until the mixture is dark brown. BE CAREFUL NOT TO SCORCH! The mixture will be very smokey. Reduce heat if needed.

Turn off heat and slowly add in very hot water, a little at a time, while stirring.

Remove from heat and pour into a glass measuring cup.

Stir in vegetable bouillon and salt.

Pour into a bottle once cooled. It's now ready to use. Set aside.

Coat chicken lightly in olive oil

In a bowl combine smoked salt, black pepper, garlic powder, brown sugar, and smoked paprika.

Sprinkle seasoning mixture over chicken and massage into the chicken.

Sprinkle 1 tablespoon of browning sauce over the chicken and massage it into the chicken.

Place chicken in a large ziplock bag.

Add in HALF of the fresh garlic, onion, green bell pepper, red bell pepper, yellow bell pepper, scotch bonnet pepper, pimento (if using) and all of the fresh ginger.

Toss so that everything is evenly distributed.

Add half of the fresh thyme sprigs (Leave the sprigs whole)

Refrigerate overnight.

Remove chicken from the bag (discarding vegetables) and let the chicken come to room temperature. Dry the chicken off a bit if needed before searing.

Heat a couple tablespoons of vegetable oil in a large, deep steel or cast iron skillet until skillet is very hot and starting to smoke.

Sear chicken on both sides just until the skin is crisp and slightly golden (only a few minutes per side) Do not cook the chicken all the way through.

Remove chicken and let drain on paper towels.

Clean the skillet and melt butter over medium heat.

Add the other half of the fresh onion, green bell pepper, red bell pepper, and yellow bell pepper.

Cook until tender and then add remaining garlic and cook until garlic is fragrant.

Stir in chicken stock and ketchup.

Stir 1-2 tablespoons of browning.

Add in the remaining fresh thyme leaves, fresh rosemary, the other half of scotch bonnet pepper, and another half of pimento (if using).

Simmer sauce for about 10-15 minutes, reduce heat if needed.

Add chicken to skillet.

Simmer for about 20 minutes covered and then uncover and simmer for an additional 15-20 minutes.

When chicken is done, taste the sauce and season with salt, garlic powder, and a pinch of ginger. You can add other spices if desired.

If desired, you may thicken the sauce with cornstarch or breadcrumbs or let it continue simmering until it is reduced.

lb chicken thighs (chopped)

garlic (minced)

green chiles

cumin

oregano

cayenne pepper

chicken broth

white beans

heavy whipping cream

Mexican blend cheese + more for topping

Fresh parsley or cilantro (garnish)

Add butter to large pot over medium heat.

When melted add onions and cook until slightly tender.

Add chicken thighs and cook until done.

Stir in garlic and cook until fragrant.

Mix together cumin, oregano, smoked paprika and cayenne pepper and the then stir into the chicken mixture.

Add in beans and chicken broth.

Bring to a light boil and then stir in heavy cream.

Sprinkle in cheese a little at a time.

Serve and garnish with more cheese and fresh parsley or cilantro.

You can make it look pretty by adding on some diced avocado, tomatoes and sour cream, but we like it simply topped with a little cilantro and cheese!

Creamy White Chicken Chili~ Our FAV!

Browning Sauce is a staple in Jamaican cuisine, made with just brown sugar and water. This 2-ingredient condiment is simple yet versatile, adding sweet and savoury depth to everything from dinner to dessert.

Homemade Browning Sauce

Brown Sugar

Water

Add brown sugar to a small non-stick saucepan and heat over medium-low heat. Continuously stir with a wooden spoon once the brown sugar begins to melt into a dark syrup-like consistency.

Continue stirring, until the sugar becomes very dark brown and frothy, then remove from stove.

Carefully, add the boiling water to the saucepan, and stir until combined. Set aside, and allow the mixture to cool. Then, pour into an airtight container and use immediately or store in refrigerator for future use.

Your instructions are not clear. Tried twice and both times ended up with clumps. My water was boiling, I waited until the sugar was frothy, I was on low heat the entire time and waited patiently for it to all dissolve. Your video will not play because it says there's been too many download errors.

I followed the recipe and it came out perfectly, just the way Taneisha described it. You have to maintain that low to medium flame and stir it and it gradually gets to that dark brown color.  You have to be patient and don’t try to rush it. Thanks Taneisha

SOUTHERN FIVE FLAVOR POUND CAKE RECIPE! MADE FROM SCRATCH AND FULL OF FLAVOR WITH A MOIST, FLUFFY CRUMB!

Five Flavor Pound Cake

unsalted butter (softened)

butter-flavored shortening

sugar

eggs (room temperature)

flour

baking powder

half n half

buttermilk

vanilla extract

butter extract

rum extract (Can add more if you really

lemon extract

coconut extract

rum extract

milk (may need more)

Grease and flour a bundt pan and set aside.

Preheat oven to 325 F.

In a large bowl, cream together butter, shortening and sugar.

Add in eggs, one at a time, being sure to mix thoroughly after each egg. Set aside.

In a medium-sized bowl, sift together flour, baking powder and salt.

Gradually mix dry ingredients into wet ingredients while alternating with the half n half and buttermilk. (Batter should be fluffy when done mixing)

Mix in extracts.

Spoon batter evenly into prepared pan.

Bake for 1 hour and 15-20 minutes.

Remove from oven and let cake cool until pan is warm to the touch.

Remove cake from pan and allow to finish cooling on cooling rack.

When cake is completely cooled, drizzle on the glaze if using.

To make the glaze, combine powdered sugar, extract and 1/2 teaspoon of milk.

My mom made this 5 flavor cake all the time and of course I make it as well.

This was my first time making pound cake and it did NOT disappoint! I made it for my mom and she absolutely loved it. I wasn’t the biggest fan of the glaze (I was thinking I’d stick with just one flavor next time) but she liked it and that’s all that matters :-). 
The cake had a great taste and was quite moist. I didn’t have half and half or buttermilk so I just used regular whole fat cow milk and added lemon juice to half of it (to make makeshift buttermilk). Aside from that, I pretty much followed the recipe as written.

I love this recipe! My cake turns out great every time.

I made this cake as a trail cake. My husband and I could not believe how moist and delicious this was!!! I made this cake 2 or three Sundays in a row!!! I love this recipe Monique you never let me down!!! I can't wait for your cookbook!!!

The texture of the cake was perfect but the combination of all the flavors was too much for me. I will definitely keep the recipe but next time just do vanilla as previously suggested. Thank you for the recipe.

This classic recipe is so easy to make and the crumb texture is AMAZING! It just melts in your mouth! Feel fret swap out for different extract flavors, but you just can go wrong with the flavors of coconut, rum, lemon, vanilla and butter!! 

You can even get all fancy and throw in some real rum, lemon zest, shredded coconut and vanilla bean if you want, but bring down the extract amount a bit so that's it's not over powering.
