Throw a healthy slant on bruschetta by topping your wholemeal toast with cottage cheese, basil and contrasting balsamic

Open cottage cheese & pepper sandwich

few basil leaves

sourdough bread bread

drizzle balsamic vinegar (optional)

Layer the cottage cheese, red pepper and basil with some seasoning in a bowl or plastic container. Chill until lunchtime.

Toast the bread and cool for 1 min, then give the cottage cheese mixture a quick mix and spoon on. Drizzle with balsamic vinegar, if you like, and eat straight away.

Fresh tomatoes and garden-grown basil come together to create the most delicious and EASY Bruschetta recipe. Use bagel chips or toasted bread to dip, or add this mixture to pasta with cheese!

Bruschetta Recipe

Roma tomatoes (diced)

basil leaves (chopped)

garlic (about 9 cloves, chopped (not pressed))

red wine vinegar

parmesan cheese

salt

black pepper

olive oil

Melba Toast (or bagel chips)

Mix tomatoes, basil, garlic and cheese until each bite has a sufficient amount of each. Add more if necessary. Toss in salt and pepper,red wine vinegar and stir. Add olive oil. Should be nice and shiny. Let sit in refrigerator to allow flavors to mingle. Enjoy!

To make bruschetta bread, hollow out a loaf of french bread. Spoon in the bruschetta and top with an extra 1/2 cup of shredded parmesan cheese. Bake in a 450 degree oven for about 10 minutes, until cheese is melted and bread is toasted. Cut and enjoy.

For pasta, prepare noodles according to package (I like angel hair pasta). Grill chicken with salt and pepper. Slice into thin strips. Heat bruschetta in microwave for about 2-3 minutes, until warmed. Serve over warm pasta with chicken strips and extra parmesan cheese. Enjoy!

skiver baguette eller annet lyst brød

ss olivenolje

båt revet hvitløk

stk. tomat

ss finhakket frisk basilikum

Skjær brød i tynne skiver. Stek brødskivene på begge sider i en varm stekepanne med olje til det blir sprøtt og gyllent. Legg skivene over på en tallerken med tørkepapir slik at fettet renner av. Skjær hvitløk i to og gni hvitløken på de sprøstekte skivene.

Del tomat i fire, ta ut kjernen og skjær tomatkjøttet i små terninger. Finhakk basilikum. Bland tomatterninger og fnhakket basilikun sammen i en bolle sammen med god olivenolje. Smak til med salt og grovkvernet pepper.

Anrett tomatsalaten på de sprø brødskivene rett før servering.
